- Cut each tomato into four thick slices; place on paper towels to drain. Meanwhile, in a small bowl, beat the cream cheese, parsley, basil, garlic and salt until blended. Spread cream cheese mixture over eight tomato slices; top with remaining tomato slices., Place flour and bread crumbs in separate shallow bowls. In another bowl, whisk egg and milk. Coat the top and bottom of each sandwich with flour, dip into egg mixture, then coat with crumbs., In a large skillet, heat butter and oil over medium heat. Fry tomato sandwiches in batches for 3-4 minutes on each side or until golden brown. Drain on paper towels.

CREAMED TOMATOES ON TOAST
Juicy canned tomatoes melted into fragrant cream mimic an instant cream of tomato soup. Served over toast, they make for a simple yet indulgent breakfast, or anytime snack. This dish is inspired by a recipe in "Roast Chicken and Other Stories." In the book, Simon Hopkinson writes that his version was inspired by Edouard de Pomiane's "Cooking in 10 Minutes." Hopkinson bakes fresh tomatoes in garlicky, minty cream for half an hour. The version below, with canned tomatoes, woody herbs and a hint of cinnamon, is there for you when fresh tomatoes aren't - and, like de Pomiane's approach, takes closer to 10 minutes.

- In a small saucepan, bring the cream, thyme and cinnamon stick to a simmer over medium-low heat.
- As cream comes to a simmer, drain the tomatoes (no need to rinse), discarding the juices. Add the whole tomatoes to the saucepan and bring to a simmer, breaking up the tomatoes with a wooden spoon. Cook until the tomatoes are soft and the cream is slightly thickened, about 5 minutes. Season with salt and pepper.
- To eat, place a slice of toast in a shallow bowl or rimmed plate, and spoon the tomatoes and plenty of cream over the toast. Season with more black pepper, if you like.

CREAM OF TOMATO
Best done with fresh ripe tomatoes, but also very good with canned tomatoes. If you use fresh herbs, you will need more than dried (in proportion, 3 times more). I ate this soup for the first time when I visited an aunt. She made this just for me. Over the years, I made my own version to match the taste I remembered. Here it is. Bon appetit.

- In a saucepan, heat the tomatoes and cut them in small pieces. (If you use the fresh ones, put the tomatoes into a boiling bath until the peel cracks. Peel them and proceed the same way)
- Heat the 2 cups of milk in another saucepan.
- Mix flour, salt, pepper, sugar and 1/4 cup milk in a small dish until smooth. Stir the flour mixture into the simmering milk until it thickens. DO NOT BOIL.
- Stir the baking soda into the hot tomatoes. When the fizzing slows down, add slowly to the hot milk. Simmer a few minutes, adding basil, oregano, and marjoram to taste.
- Note: If you want a creamy cream of tomato, you will have to put your tomatoes through a sieve or a food processor before you mix them with the milk.

- Combine tomatoes with juice, butter, sugar and salt in a medium saucepan; heat over medium heat. Stir in baking soda. Combine flour and milk; blend well and stir into hot tomato mixture. Cook, stirring constantly until mixture is thick and bubbly. Break toasted bread into small pieces and add to hot tomato mixture. Serve in sauce dish as a vegetable or over biscuits or toast.

- In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
- Whisk together sugar, flour, and salt and pepper, to taste. Combine with corn. Add the heavy cream and water. Mix.
- In a large skillet over medium heat, heat bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy, about 30 minutes.
- Add the butter right before serving.

- Step 1: Preheat oven to 350 F. Grease a 9-inch deep-dish pie plate.
- Step 2: In a bowl, combine 1 pound ground beef, 1/2 cup breadcrumbs, 4 ounces tomato sauce, 1/4 cup chopped onion, 1/4 cup chopped green pepper, 1 1/2 teaspoons salt, 1/8 teaspoon pepper, and 1/8 teaspoon oregano. Mix well with a fork.

CREAMED TOMATOES AKA TOMATO GRAVY
I've been eating creamed tomatoes over biscuits or cornbread my entire life. It's so yummy! For those who've never had it, it tastes similar to creamy tomato soup, but it's thicker. I grew up in rural West Virginia, and everyone always called it creamed tomatoes, but a few years ago, I found out that some people call it tomato gravy. Either way, it's the same thing. My hubby also likes to pour it over his fried or mashed potatoes! I hope you enjoy it. It's always been one of those down home comfort foods for me! Serve with homemade biscuits. - Pour tomatoes in a saucepan or skillet.
- Add butter.
- Simmer over medium heat about 15 minutes, or until tomatoes are tender. (If using juice, then just bring it up to a simmer, and continue.).
- After tomatoes are tender, mix your flour and milk in a bowl until smooth, and add to tomatoes, stirring well.
- Add salt, pepper, and sugar to taste.
- If it's too thick, add a little more milk. If it's too thin, either simmer on low until it's the desired thickness, or mix up a bit more flour and milk and add to your tomatoes.
- That's it! Serve over homemade biscuits, cornbread, potatoes, or whatever you like!

COUNTRY-STYLE TOMATOES WITH CREAM CHEESE
I first made this dish when I was in my early twenties and newly married, - and a very new cook!. My (1st) husband and I loved it, and I was so proud of my "fancy" dish! Despite the number of ingredients it is very easy to make, and, dressed up a bit with sprigs of parsley or chopped green onions makes a nice company dish. I wanted to include a photo, but I haven't made this in a while, so I substituted one from Bing. When prepared they don't look exactly like the photo, but close!

- Cut thin slice off opposite sides of each tomato (to expose the flesh), then cut each tomato into four thick slices. Place on paper towel to drain. Salt and pepper tomato slices.
- Beat together softened cream cheese, parsley, basil and garlic. Spread mixture evenly over 8 of the tomato slices; top with remaining tomato slices.
- Put flour and bread crumbs into separate shallow bowls; in another bowl beat together the eggs and milk. Coat top and bottom of each tomato stack with flour, dip in egg mixture, then in bread crumbs.
- Heat butter and oil over medium-high heat and fry the tomatoes 3 to 4 minutes on each side, or until golden brown. Drain on paper towels. Enjoy!
- *When adding the cream cheese don't overfill or spread completely to edges of tomatoes, to lessen the chance of leakage. *I often (carefully!) pat the flour and bread crumbs onto the sides also, then 'spoon' the hot oil onto the sides to brown. *These are filling! So one each is probably enough for a side dish, or two each for a main dish - which the hubster and I usually do!
COUNTRY CREAMED TOMATOES
Either fresh or canned, this dish was loved by my Mom's farm family. My dad also liked them. And I love them, too.

- 1. Prepare drop biscuits and place them in a warm oven while you make the creamed tomatoes - or put them on a plate and cover with a clean towel
- 2. Peel and cut up tomatoes over a bowl to reserve the juice. Add juice and tomatoes to a 2 quart saucepan and add 1/2 c. water. Cook slowly over medim heat
- 3. Add the cold milk to a small cup, sprinkle with the flour and shake together until fairly smooth. Strain to remove lumps. Stir slowly in a thin, steady stream, into the hot tomatoes until it thickens and doesn't taste floury. Add margarine and sugar and salt and/or pepper to taste.
- 4. Place biscuit on plate, split in half and ladle creamed tomatoes over them. Enjoy. Little ones may like it a bit sweeter - add more sugar to taste.
