2 containers Minute® Ready to Serve White Rice
1 cup (6oz.) cooked, diced chicken breast
2 cups low-sodium chicken broth
1 cup frozen mixed vegetables

Steps:

  • Heat rice according to package directions. In medium microwave-safe bowl, combine chicken, broth and vegetables. Microwave on high for 5 minutes. Stir in rice.

2 tbsp. olive oil
2 carrots, sliced
2 celery stalks, sliced
1 small onion, chopped
5 garlic cloves, chopped
Kosher salt
Freshly ground black pepper
1/4 c. dry white wine
8 c. chicken stock
2 1/2 lb. bone-in, ­skinless chicken breast and thighs
2 1/2 c. uncooked wide egg noodles
3 tbsp. chopped fresh flat-leaf parsley
2 tbsp. chopped fresh dill
2 tbsp. fresh lemon juice

Steps:

  • Heat oil in a large pot or Dutch oven over medium heat. Add carrots, celery, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened and golden brown, 8 to 10 minutes. Add wine and cook until syrupy, 1 minute. Add chicken stock and chicken pieces. Season with salt and pepper. Bring to boil over high heat. Reduce heat to low, cover, and simmer until chicken is cooked through, 40 to 45 minutes.
  • Remove chicken; shred thighs with two forks and chop breasts into large bite-size pieces. Return meat to pot; discard bones.
  • Add noodles to soup and cook, stirring often, until tender, 6 to 7 minutes. Remove from heat and stir in parsley, dill, and lemon juice. Season with salt and pepper.

2 small onions, chopped
2 stalks celery, diced
2 carrots, sliced
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon basil
1/4 teaspoon thyme
1/4 teaspoon sage
2 tablespoons dry parsley flakes
1 (10 ounce) package frozen peas
3 lbs broiler-fryer chickens
2 1/2 cups water
1/3 cup raw converted rice

Steps:

  • Place all ingredients in crock pot except rice in order listed.
  • Cover and cook on low 8-10 hours (high 4-6 hours).
  • One hour before serving, remove chicken and cool slightly.
  • Remove meat from bones and return to crock pot.
  • Add rice.
  • Cover and cook the additional hour on high.

1 large onion, coarsely chopped
1/2 cup chopped red bell pepper
4 garlic cloves, chopped
6 skinless boneless chicken thighs (about 1 1/4 pounds), cut into 1-inch pieces
1 tablespoon curry powder
1 teaspoon grated peeled fresh ginger
1/4 teaspoon dried crushed red pepper
4 cups (or more) canned chicken broth
2 cups canned diced peeled tomatoes with juices
1 large Granny Smith apple, peeled, coarsely chopped
1/4 cup orzo (rice-shaped pasta; also called riso)
2 tablespoons dried currants
Chopped fresh cilantro
Plain yogurt

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add onion, bell pepper and garlic; sauté until vegetables soften, about 5 minutes. Add chicken, curry powder, ginger and crushed red pepper; stir 2 minutes. Add 4 cups broth, tomatoes and apple and bring to boil. Reduce heat and simmer 20 minutes. (Can be made 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Stir orzo and currants into soup and simmer until orzo is just cooked through, about 5 minutes. Season with salt and pepper. Ladle soup into bowls. Garnish with cilantro and dollop of yogurt.
