COTTAGE PIE (BRITISH BEEF AND MASHED POTATO RECIPE)
A traditional cottage pie recipe that is as simple and delicious as they come!

Steps:
- Sauté the diced onion over medium high heat, stirring occasionally, until translucent.
- When the onion is just starting to brown, add the ground beef and break up into smaller pieces. Stir often, and continue to cook until the liquid starts to dry (if not using Bisto, add a tablespoon of flour at this time).
- Add enough water, just to cover the ingredients, and simmer. At this point, add about 1/4 tsp. salt, one OXO cube (or 1 tsp Beef Better than Bouillon), 1 Tbsp Bisto granules, 1 tsp Worcestershire Sauce and some ground black pepper to taste.
- Preheat oven to 375ºF (190ºC).
- Continue to simmer the meat over medium heat for about 5-10 minutes, then taste. Add more salt if needed, then remove from heat.
- Ladle the beef and gravy into oven safe ramekins or bowls to make individual cottage pies, or just one large dish. Spoon (or pipe) mashed potatoes onto each dish to cover completely. Add shredded Cheddar cheese on top, if desired.
- Place dishes/ramekins onto a rimmed baking sheet and bake until bubbly and the potato is a little browned, approximately 25-30 minutes. You can finish off the pies under the broiler if you like them to have more crispy, and brown tops.

COTTAGE PIE
Steps:
- Lightly grease a 2-quart baking dish. Heat oven to 350 F.
- In a large skillet over medium heat, sauté the onion in the olive oil until softened and lightly browned.
- Add the beef and butter and saute for about 1 minute longer.
- Stir in the flour until blended.
- Add beef broth, Worcestershire sauce, peas, and carrots.
- Add salt and pepper to taste.
- Spoon the beef mixture into the prepared baking dish.
- If using leftover mashed potatoes, warm them in a saucepan with a little butter or milk until softened.
- Stir sour cream and cheese into the potatoes.
- Spoon potatoes evenly over the beef layer and sprinkle lightly with paprika.
- Bake for 25 to 35 minutes, until hot and bubbly.
- If desired, turn on the broiler to brown the top for just a minute or two, but watch carefully to prevent burning.

PROPER ENGLISH COTTAGE PIE
Proper English Cottage Pie is a delicious, very traditional mince pie (beef) topped with mashed potato. Serve with garden peas.

- Preheat oven to 400 degrees F (200 degrees C).
- To Make Meat Filling: Place a large skillet over medium heat. Crumble in ground beef and saute 1 minute. Add onion and carrot, then continue to saute until meat is no longer pink and onion begins to brown, about 5 minutes. Mix in flour, cinnamon, mixed herbs, and parsley.
- In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add salt and pepper to taste. Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a 9 inch pie plate.
- To Make Potato Topping: Place diced potatoes in a medium saucepan. Cover with water and place over high heat. Allow to come to a boil. Boil for 15 minutes, or until potatoes are tender. Drain.
- Mash potatoes until smooth, then add butter or margarine, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.
- Bake in preheated oven for 25 minutes, until top is browned and cheese is bubbly.

COTTAGE PIE
Layered ground beef with gravy, carmelized onions and mashed potatoes make up this old standby. Not low calorie but great comfort food and my husband's all time favorite. PLUS a quick way to peel potatoes.

- 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch deep-dish pie plate.
- 2. Score potato skins around their equators. Place potatoes into a pot; cover with salted water, and bring to a boil over high heat. Reduce heat to medium-low, cover; simmer until tender, about 20 minutes. Just before the potatoes are done, fill a large bowl with cold water and add ice cubes. Drain potatoes. Slip into the ice water for a bit and then remove from water. Slip skins off potatoes. Mash with 4 tablespoons of the butter and the garlic. Season to taste with salt and pepper; set aside.
- 3. Meanwhile, heat the olive oil in a skillet over medium heat. Add ground beef, herbes de Provence and Worchestershire sauce. Cook and stir until beef is lightly brown and crumbly, about 10 minutes. Mix the Bisto powder with about 3/4 c cold water in a jar and whisk until smooth. Add to meat and simmer until gravy thickens, adding more cold water as necessary until it's the right consistency. Spread the beef evenly in the prepared pie plate. Cover evenly with the onions; spread the mashed potatoes over the onions. Dot the casserole with the remaining butter.
- 4. Bake, uncovered, in the preheated oven until heated through and bubbly, about 20 minutes.
- Notes:.
- *Bisto is found in the international aisle of many supermarkets. It's in the British foods area and is wonderful for any gravy, even turkey!

- Preheat the oven to 200°C/180°C fan. Peel and finely chop the onion and garlic. Peel and grate the carrot. Peel and chop the potatoes.
- Add the potatoes to a pan of [i]salted[/i] boiling [i]water[/i] with a generous pinch of salt. Cook the potatoes over a medium heat for 15-20 min or until soft.
- Meanwhile, heat a pan over a medium-high heat with a drizzle of oil. Fry the beef mince and onion with a pinch of salt for 5-7 min. Add the garlic and tomato paste. Add the grated carrots, [b]measured[/b] water, stock cube, Worcestershire, sugar and pepper. Reduce the heat to low. Cover with a lid and stew for 15-20 min.
- Once ready, drain the potatoes and return them to the pan with the salted butter. Mash. Slowly add enough milk (about 50/75/100 ml) to reach your desired mash consistency. Add the eggs, a generous pinch of salt and half of the grated cheddar. Mix well.
