GRANDMA MONETTE'S CHERRY JAM TART

- Preheat the oven to 400 degrees F. Make the filling: Combine the cherry preserves and lemon juice in a bowl, stirring to break up any clumps.
- Make the crust: Butter a 10-inch tart pan with a removable bottom. Cream the butter and sugar in a bowl with a mixer on medium speed. Add the whole egg, then the vanilla. Whisk the all-purpose flour, almond flour, lemon zest, cinnamon and cloves in a bowl. With the mixer on medium speed, gradually add the dry ingredients to the butter mixture. Reduce the mixer speed to low and mix in up to 1 tablespoon water until the dough just comes together. Wrap two-thirds of the dough in plastic wrap, then wrap the remaining one-third in plastic wrap. Refrigerate both for 30 minutes.
- Put the larger piece of dough between 2 sheets of parchment paper and roll it out into an 11-inch round. Remove the top sheet of parchment paper and invert the dough into the prepared tart pan; peel off the other sheet of parchment paper and trim the excess dough. Spread the jam evenly on the crust. Roll out the remaining dough to about 1/4 inch thick and cut it into 1/2- to 1-inch-wide strips (10 to 14 strips). Arrange the strips in a lattice pattern on top of the filling. Beat the egg yolk with 1 tablespoon water and brush on the lattice and edge of the crust. Bake until the crust is golden and the filling is bubbly, about 30 minutes. Let cool completely.

- In 5- or 6-oz custard cup, place 2 of cupcake liners.
- In small bowl microwave the butter until melted.
- Stir graham cracker crumbs and sugar into melted butter.
- In each custard cup, place 1 rounded tablespoon crumb mixture, press down with bottom of small glass.
- Blend the condensed milk, eggs, lemon peel and lemon juice until thickened.
- Pour 2 tablespoons in each prepared custard cup.
- Arrange in a ring in microwave oven and microwave at 50% power for 2 to 5 minutes or until each bubbles in 1 or 2 spots, rotating after half the cooking time.
- The tarts should be removed as they appear done.
- Repeat the process for the remaining 6 tarts.
- Cool and serve topped with pie filling.

COTTAGE CHEESE POCKET TARTS - CZECH
This recipe is being entered for ZWT II & my source is fooddownunder.com. Funny the things you can find after so many yrs of loving & craving Czech kolaches. I was raised on them, but this kolache variation sounds wonderful to me & is so easy to make. This may well become my NEW favorite kolache! (Yield depends on size of tart made & has been "roughly estimated". Time does not include time to chill the dough.)

- Preheat oven to 425°F.
- Cream butter till fluffy. Add cottage cheese & blend VERY well.
- Work in flour & chill dough thoroughly.
- Roll on lightly floured surface into thin sheets & cut into squares.
- On ea square of dough, place 1 teaspoon of strawberry preserves. Fold over to make a triangle & press edges together w/tines of a fork.
- Place on baking sheet, bake for 15 min & serve warm.
- NOTE: Altho strawberry preserves are used in this recipe, more typically Czech fillings are suggested as well & include: prune, apricot or date-nut.

- HEAT oven to 350°F Mix flour and salt in a medium bowl. Cut shortening into flour mixture with pastry blender. Cut in cottage cheese and vanilla until a firm dough is formed.
- SPRINKLE counter with powdered sugar. Roll out dough to 1/8-inch thickness. Cut into 2-inch squares. Fill with 1/2 teaspoon preserves. Overlap opposite corners; seal tightly. Place 2 inches apart on ungreased baking sheets.

- Place crescent dough on a lightly floured surface; seal seams and preforations. Cut into 2" circles. Place in a greased mini tart pan.
- Beat cream cheese and confectioner sugar until smooth. Place about 1/2 teaspoons in each cup. Combine pie filling and almond extract; place about 2 teaspoons in each cup.
- Bake @ 375* for 12-14 minutes, or until edges are lightly brown. Remove to wire rack to cool. Refrigerate until ready to serve.

COTTAGE CHEESECAKE WITH SOUR CHERRY TOPPING
This cottage cheesecake has a deliciously smooth, creamy texture and is much lower in calories and higher in protein than traditional cream cheese cheesecake! - Mix the crust ingredients together. Press into a greased 8"x8" pan and bake at 350* for 8 minutes.
- Meanwhile blend the cheesecake ingredients together until completely smooth. (No need to activate the gelatin first. I use an immersion blender.)
- Pour the cheesecake mixture over the hot crust when it comes out of the oven and return the cheesecake to the oven at 350* for 40 minutes. The cheesecake will still be very jiggly but will get a little darker around the edges (not brown). Remove it from the oven and let it cool completely, then refrigerate to chill completely before cutting and serving. The cheesecake will set up in the refrigerator.
- To make the sour cherry topping, whisk the first four ingredients together in a small saucepan, adding the xanthan gum slowly while whisking so it doesn't clump. (See note below about what to do if you don't have tart cherries canned in water.) Add the cherries after whisking so they don't fall apart. Bring the sauce to a boil, stirring occasionally, then let cool and refrigerate to thicken.
- When both the cheesecake and cherry topping are cold, serve them together. I recommend keeping the cheesecake and topping separate until serving, not spreading the cherry topping onto the cheesecake and storing it in the refrigerator like that.
COTTAGE CHEESE PUFF PASTRY

- Beat cottage cheese and butter in a large bowl with an electric mixer until well combined with most cottage cheese curds intact, scraping down the sides of the bowl a few times.
- Stir flour into butter mixture gradually with a wooden spoon just until a soft dough forms that is no longer sticky; turn dough out onto a floured surface. Bring dough together with floured hands; knead 3 to 4 turns.
- Roll dough gently into a fairly thick square, fold in half, and pat to flatten again; fold dough in half again in the opposite direction. Repeat rolling and folding process 2 more times. Roll dough into an 8-inch square; divide into 4 equal portions. Wrap each portion in plastic wrap; refrigerate for 4 hours or up to overnight.
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Roll one portion of dough out on a lightly floured surface 1/4-inch thick. Cut dough into 4-inch squares with a sharp knife; cut each square diagonally to make 2 triangles.
- Roll each dough triangle from the long edge toward the triangle point to form crescent shapes; place on prepared baking sheet.
- Bake in the preheated oven until golden, about 20 minutes. Remove to cool on a wire rack.
- Whisk confectioners' sugar, lemon juice, and lemon zest together in a bowl until smooth; brush or drizzle lemon glaze over tops of cooled crescents.

- To make pastry:.
- Combine the flour, sugar and salt in a large bowl.
- Add the butter and mix together with a fork or fingers till the texture is crumbly.
- In a separate bowl, mix the egg yolks with the lemon juice.
- Stir the yolk mixture and water into crumbly flour.
- Use your hands to form the dough into a ball.
- Press the dough into the bottom only of two 9-inch pie pans or two 9-inch springform pans to about a 3/8 inch thickness.
- Refrigerate the crusts for about 15 minutes.
- For the topping:.
- In a medium bowl, combine all the ingredients except cherries and mix well.
- Fold in cherries.
- Spread mixture to about 1/2 inch thickness on top of chilled crust, leaving a 1/4 inch margin uncovered at edge.
- Bake at 425 for 15 minutes.
- Reduce heat to 350 and bake for about another 40-45 minutes.
- Cool and slice as desired for serving.
SCHMIDT'S CHERRY CHEESE TART FILLING
Steps:
- Using a small mixer, beat cream cheese until fluffy. Gradually beat in the sweetened condensed milk until smooth. Stir in lemon juice and vanilla extract until smooth. Refrigerate filling overnight. Using a 4-ounce ice cream scoop, fill each pre-baked tart shell with the chilled cream cheese filling. Place cherry pie filling on top, approximately 5 cherries per tart.
