Tomatoes, onions and Italian seasonings gives these pork chops a wonderful flavor all in one pot. It's and easy, low-carb, weeknight dinner ready in 30 minutes with few ingredients!

2 lbs bone-in pork chops (4)
3 tbsp extra virgin olive oil
1 1/2 cup onion (1 small onion)
4 cloves garlic
28 oz canned diced tomatoes with juice
1 tsp Italian seasoning
salt and pepper to taste

Steps:

  • In a large 3 inch deep skillet on high heat, add oil. Meanwhile, sprinkle both sides of pork chop with salt and pepper to taste.
  • Add pork chops to the skillet and brown on each side for 2-3 minutes.
  • Meanwhile, slice the onion thinly.
  • Remove pork chops and place on a plate. Add onions and garlic to the skillet and cook for two minutes.
  • Place pork chops back in skillet with onions and garlic. Pour tomatoes on top of the pork chops. Sprinkle with Italian seasoning and cover for 5 minutes. Remove lid and allow to cook for an additional 10 min uncovered.

2 tablespoons olive oil
2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
Salt and freshly ground black pepper
1 small onion, thinly sliced
1 (15-ounce) can diced tomatoes, in juice
1 teaspoon herbes de Provence
1/4 teaspoon dried red pepper flakes, or more to taste
1 tablespoon chopped fresh Italian parsley leaves

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
  • Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
  • Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

4 to 5 spicy Italian pork sausages (about 1 pound total)
1 cup dry white wine
2 tablespoons canola oil
4 bone-in pork chops (about 2 1/2 pounds total)
Kosher salt
2 medium yellow onions, halved and thinly sliced
4 large cloves garlic, thinly sliced
One 28-ounce can plus one 15-ounce can whole, peeled tomatoes
1 pint cherry tomatoes, stemmed
1/2 cup finely grated Parmesan
1 tablespoon red wine vinegar
1/2 cup fresh basil leaves
1 pound bucatini pasta

Steps:

  • Cook the sausages: Heat a large cast-iron or stainless steel skillet over high heat. When the skillet is hot, use a pair of metal tongs to arrange the sausages in a single layer. (There is no need for oil as the sausages will soon start to render their grease.) Turn the heat to medium and brown the sausages on all sides, taking care that they are cooked through, 8 to 10 minutes total. Remove the sausages to a medium bowl. Pour off the grease and add the wine, simmering over medium heat to reduce to about 1/4 cup liquid, 2 to 3 minutes. Pour the reduced wine over the sausages and wipe the skillet clean.
  • Cook the pork chops: Add the canola oil to the same skillet. Sprinkle the pork chops on all sides with salt. When the oil begins to smoke lightly, add the pork chops in a single layer and brown on all sides over medium heat, 5 to 8 minutes total. Remove the pork chops to the bowl with the sausages. Leave the grease in the skillet.
  • Make the sauce: Stir the onions and garlic into the same skillet and cook over medium-low heat until translucent, 8 to 10 minutes. Sprinkle with salt. Stir in the canned and cherry tomatoes with 1/2 cup water and simmer gently until the sauce is somewhat thick and tasty, 20 to 25 minutes. Stir the sausages and pork (and any meat juices) back into the sauce and bring to a simmer over medium heat. Simmer 2 to 3 minutes. Turn off the heat, then stir in the cheese, red wine vinegar and basil leaves. Taste for seasoning.
  • Cook the pasta: Bring 6 quarts of water to a rolling boil in a large pot. Add a generous handful of salt and bring the water back to a boil. Taste the water. It should be salty like seawater. Add the pasta and stir with a large slotted spoon to ensure the pasta does not stick as it cooks. Cook until still quite firm, 8 to 10 minutes. Drain.
  • Finish the dish: Spoon the meat over the pasta in individual bowls or serve in a large bowl, family style. You can also just leave the pot of meat and sauce and the pasta separate and let people serve themselves.

3 large eggs, beaten
1 tablespoon chopped fresh parsley leaves
1 tablespoon grated Parmigiano
Pinch salt
Pinch pepper
1 cup all-purpose flour
1 cup plain bread crumbs
One 10-ounce bone-in veal chop, pounded to 1/4-inch thick
1/2 cup olive oil
3 Roma tomatoes, cored and cut into 6 slices
1/2 medium onion, julienned
6 fresh basil leaves, torn
1/2 lemon, juiced
1/4 cup extra-virgin olive oil
Salt and freshly ground pepper

Steps:

  • Combine eggs, parsley, Parmigiano, salt and pepper in a shallow bowl. Place the flour and breadcrumbs in 2 more shallow bowls. Dredge the veal chop in the flour mixture, shaking off excess. Then dip into egg mixture and cover with bread crumbs.
  • Heat 1/2 cup olive oil in a saute pan over medium heat. When the oil is hot, fry the veal until golden brown, about 3 minutes on each side. Remove from pan onto paper towel to absorb any excess oil.
  • In a stainless steel or ceramic bowl toss tomatoes, onion, basil, lemon juice, oil, salt, and pepper. Plate veal and top with tomato salad.

2 1/2 lbs potatoes, peeled and diced
sea salt & freshly ground black pepper, to taste
4 thick pork chops, on the bone
24 fresh sage leaves
1 bulb of garlic
4 slices prosciutto
4 tablespoons butter, finely diced
4 dried apricots
extra virgin olive oil
flour
6 thick strips pancetta (1/2 inch thick, if possible, or an 8-oz. package of pancetta lardons)

Steps:

  • Preheat the oven to 425°F Put your potatoes into a pot of salted water and bring to a boil. Give them 3 or 4 minutes - you only want to parboil them - then drain them and allow them to steam dry.
  • Lay your pork chops on a board and insert a small paring knife horizontally into the side of each chop to make a hidden pocket. Make sure the tip of your knife stays in the middle of the chop, as you don't want to cut through the meat to either side. Be careful -watch your fingers!
  • Set aside 8 of the largest sage leaves. Add 8 more leaves to your food processor with a peeled clove of garlic, the prosciutto, butter, apricots, and a pinch of salt and pepper and give it a whiz. This is now a beautifully flavored butter that can be divided between the pork chops and pushed into the pockets.
  • Dress the 8 large sage leaves that you set aside with a little oil and press one side of them into some flour. Press a leaf, flour side down, onto each side of the chops (so you have 2 leaves on each chop). Leave the chops on a plate, covered with plastic wrap, to come to room temperature while you get your potatoes ready.
  • If you're using thick strips of pancetta, slice them into matchsticks, as thick as a pencil. Put them into a large roasting pan, with your potatoes, the remaining sage leaves, and the rest of your whole unpeeled garlic cloves. Drizzle with a little extra virgin olive oil and put the pan into the preheated oven.
  • After 10 minutes, put a frying pan on the burner and get it very hot. Add a touch of olive oil and put in your seasoned pork chops. Fry for 10 minutes, until golden and crisp on both sides, then remove the pan of potatoes from the oven - they should be nice and light golden by now - and place the chops on top. Put the pan back into the oven for 10-15 minutes, depending on how thick the chops are, then remove the pan from the oven and serve.

4 boneless pork chops
2 tablespoons garlic, minced
2 cups chopped tomatoes with juice (canned)
1 teaspoon dried oregano
1 pinch crushed red pepper flakes (optional)
salt and pepper
4 slices mozzarella cheese

Steps:

  • Rinse the pork chops and pat them dry.
  • Heat the oil in skillet over medium heat.
  • Place in skillet and cook turning them once, till they are nicely browned ( approximately 10 minutes) Transfer to plate and sprinkle with Salt and Pepper.
  • Add Garlic to skillet and cook for about 45 seconds (don't Burn). Add the tomatoes, oregano crushed red pepper flakes ~optional~ and pinch of salt. Simmer till thickened approximately 15 minutes.
  • Return the Pork Chops to the pan and cook through for approx 10 minutes (Juice should run clear if pierced with fork).
  • Place the motzarella slices on top of each pork chop, cover the pan and remove it from the heat. Let stand for about a minute till cheese melts. Can garnish each pork chop with tomatoes from skillet.

4 pork chops, 1 1/2 inch thick, bone in
kosher salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
1 large garlic clove, crushed
1 teaspoon fennel seed
1 medium onion, chopped
1 teaspoon crushed red pepper flakes
1 teaspoon dried oregano or 2 sprigs fresh oregano, leaves chopped
1/4 cup tomato paste
1 cup red wine
2 cups chicken stock

Steps:

  • Season chops with salt and pepper.
  • Heat extra virgin olive oil in large skillet over medium-high heat.
  • Add the crushed garlic and stir it around to flavor the oil.
  • Add in the chops and caramelize on both sides, 2 - 3 minutes per side.
  • Remove the chops to a plate and reserve.
  • Stir in the fennel seeds, onions, red pepper flakes, and oregano.
  • Reduce the heat and cook for 7 - 8 minutes.
  • Add the tomato paste, and cook for 1 minute.
  • Add the wine and cook for another minute.
  • Stir in the stock and combine well.
  • Slide the chops back into the pan, cover and simmer to finish cooking the chops, about 5 - 6 minutes.
