Provided by Ingrid Hoffmann

Categories     main-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 14

1 cup long-grain white rice
2 cups low-sodium chicken broth
1/4 cup freshly squeezed orange juice
1 lime, juiced
2 tablespoons olive oil
1/4 cup finely chopped fresh cilantro, plus more for garnish
2 garlic cloves, minced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
4 (5 to 7-ounce) tilapia fillets, rinsed and patted dry
2 cups jarred or homemade tomato salsa
1 (15-ounce) can black beans, drained and rinsed
2 cups diced fresh pineapple
2 limes, thinly sliced

Steps:

  • Combine the rice and chicken broth in a pot over medium heat and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and has absorbed all of the liquid, about 20 minutes.
  • Preheat the oven to 400 degrees F.
  • In a mixing bowl, whisk together the orange juice, lime juice, oil, 2 tablespoons of the cilantro, the garlic, and sugar; season with salt and pepper. Add the tilapia fillets to the marinade, turning to coat. Marinate in the refrigerator for 20 minutes, turning occasionally.
  • Stir together the cooked rice, salsa, beans, pineapple, and remaining 2 tablespoons of the cilantro in a 2 or 3-quart baking dish. Remove the tilapia from the marinade, reserve the marinade, and lay the fish fillets over the rice mixture, overlapping if necessary. Pour the reserved marinade over the fish. Shingle the lime slices over the fish. Bake until the fish flakes easily, is opaque, and cooked through, 25 to 30 minutes. Garnish with chopped cilantro before serving.

COSTA RICAN TILAPIA

Costa Rican Tilapia image

This recipe is from Costa Rica (Central America). It's baked tilapia with a side of rice. The tilapia is great, but the rice is awesome. Plain white rice is flavored with Costa Rican staples such as black beans, cilantro and a sprinkling of spices. But the best part is that it gets a citrus boost from fresh oranges sliced...

Categories     Fish

Time 45m

Number Of Ingredients 19

3 Tbsp fresh lime juice
3 Tbsp olive oil, divided
4 Tbsp finely chopped cilantro, divided
4 tsp minced garlic, divided
1 1/2 tsp kosher salt, divided
1/4 tsp sugar
6 tilapia fillets, about 5 ounces each
3/4 cup long-grain rice
1 cup chopped onion
2 medium oranges, peeled and sliced into bite-size pieces
28-oz can(s) diced tomatoes, undrained
15-oz can(s) black beans or pinto beans, drained and rinsed
1 tsp dried oregano leaves
1/2 tsp black pepper
1 pinch chili powder, or to taste
OPTIONAL GARNISHES
lime slices (or lime wedges)
orange slices (or orange wedges)
chopped cilantro

Steps:

  • 1. For the marinade: Combine lime juice, 1 Tbsp olive oil, 2 Tbsp cilantro, 1 tsp garlic, 1/2 tsp salt, and sugar in a small bowl. Add the fillets and marinate for 15 minutes, turning once.
  • 2. While tilapia is marinating, cook rice according to package directions.
  • 3. Preheat oven to 400°F.
  • 4. For the bean mixture, heat 2 Tbsp olive oil in a large skillet with high sides over medium heat. Add onion and remaining 3 tsp garlic, and sauté until soft and translucent, about 5 minutes, stirring frequently. Add remaining 2 Tbsp cilantro, oranges, tomatoes, beans, oregano, 1 tsp salt, black pepper and chili powder. Cook, uncovered, until hot, about 7 or 8 minutes, stirring frequently.
  • 5. Transfer cooked rice to a 9x13-inch (or 3-quart) baking dish. Add the bean mixture, and stir gently to mix the beans and rice together. Place fillets, overlapping slightly, on top of the beans and rice layer, and spoon the marinade over the fillets. Bake about 16 to 20 minutes or until the tilapia easily flakes when pierced with a fork.

COSTA RICAN CASADO

Costa Rican Casado image

Yield Serves 4

Number Of Ingredients 12

1 cup uncooked jasmine rice
2 cups broth (or water)
1 (15oz) can black beans
3 chicken breasts
2 large plantains (very ripe)
1/3 cup cilantro, chopped
3 cups mixed greens
salt and pepper to taste
3-4 tbsp coconut oil
2 tbsp extra virgin olive oil
2 tbsp paprika
toppings: pico de gallo, sour cream, avocado

Steps:

  • In a medium size pot, combine the rice and broth (or water), season with a pinch of salt and pepper. Cover, bring to a boil. Once boiling, turn the heat down to low and simmer for 20 minutes, until all of the liquid is absorbed. Remove from heat when done and stir in the chopped cilantro.
  • While the rice cooks, prepare the chicken. Preheat a large cast iron skillet over medium-high heat, and add the olive oil. Chop up the chicken breasts into bite size pieces, then season with the paprika, salt, and pepper.
  • Add the chicken to the pan in an even layer (you may have to work in batches in order to not crowd the pan), and let it cook for 8-10 minutes, stirring occasionally. Once the chicken is golden brown and cooked through, remove from the heat and set aside.
  • Rinse and drain the black beans, then add them to a saucepan with a few tbsp of water. Season with salt and pepper, turn the heat to low and let them slowly heat through as you cook the plantains.
  • Lastly, prepare the plantains. Peel and slice the plantains on a bias, then preheat the skillet over medium heat. Add the coconut oil, then add the plantains. Let them cook on one side for about 3 minutes, season with a pinch of salt, then flip and cook for another 2-3 minutes. You want the plantains to turn golden brown. Work in batches so that you don't crowd the pan, then set aside.
  • To assemble: lay down a handful of greens on a plate, then spoon the rice, beans, and chicken over the top. Add a few pieces of plantain to the plate, then top with your desired toppings (pico de gallo, sour cream, avocado, more cilantro)

  • Gallo Pinto. When it comes to eating in the land of Pura Vida, nothing is more quintessentially Costa Rican than Gallo Pinto—the national dish of the country.
  • Casado. A Casado, another classic food in Costa Rica, is all about the harmonious marriage of rice and beans, staple ingredients for many Latin American dishes.
  • Patacones. When you’ve got a hankering for something deep-fried, nothing hits the spot quite like patacones. Smashed green plantains are twice-fried and salted, and then typically served with black beans, local sour cream, and pico de gallo.
  • Chifrijo. A relative newcomer to the country’s culinary scene, Cordero’s I bar claims to have invented Chifrijo in the 1990s. Since then, the tasty boca has quickly become one of the most beloved foods in Costa Rica, and you can now find this popular appetizer in just about any local Costa Rican bar.
  • Olla de Carne. When you’ve indulged in one too many boozy libations (and are forced to deal with the consequences the next day), make a beeline for a soda serving Olla de Carne.
  • Tamal. Popular in Mexico and across Central America, the Costa Rican tamal is a corn flour dough filled with meat, rice, and vegetables. The filling is then wrapped in a plantain leaf and boiled for around two hours.
  • Rondon. Traveling to Costa Rica’s Caribbean coast? Lucky you. Costa Ricans tend to go light on the spices, except for the Caribbean, where flavorful dishes showcase regional ingredients and Afro-Caribbean culture.
  • Ceviche. Another food in Costa Rica that is also popular throughout Latin America, ceviche remains a mainstay in the country—specifically alongside the coast where fresh ceviche is prepared straight from the morning’s catch.
  • Sopa Negra. Many travellers to Costa Rica are surprised to discover that the mountains and cloud forest can be quite chilly. On a cool, rainy day, there’s nothing better than a bowl of Sopa Negra, or black bean soup.
  • Tres Leches. When it comes to authentic Costa Rican desserts, it’s hard to beat the decadent sponge cake that is Tres Leches. As the name suggests, this cake is soaked in three types of milk: heavy cream evaporated milk and condensed milk.
