CORNY CORNBREAD

Corny Cornbread image

This Southern staple is the perfect complement for chili, collard greens and more. Paula's simple recipe uses cream-style corn, sharp cheddar, sour cream and cayenne for a cheesy, flavorful cornbread.

Provided by Paula Deen

Time 5m

Yield 5

Number Of Ingredients 8

2 eggs
1 cup see Cook's Note* cream-style corn
3/4 cup self rising flour
1 cup self rising cornmeal
1/2 cup plus 1/4 cup for greasing pan vegetable oil
1 cup sour cream
1 cup grated optional sharp cheddar cheese
1/2 teaspoon optional cayenne pepper

Steps:

  • Preheat oven to 375 °F. Generously season a cast iron skillet with up to 1/4 cup vegetable oil. Preheat the pan either in the oven or on the stove over medium-high heat.
  • Mix all ingredients together in a large bowl, stirring with a wooden spoon or rubber spatula until combined. Pour batter into the preheated cast iron skillet. Place skillet in the oven and bake until golden brown, approximately 30 minutes. If making individual size cornbreads in smaller pans, they will require a shorter cooking time.
  • * Cook's Note: Frozen creamed corn is sold in the frozen vegetables section of most grocery stores. It is much better than using canned corn.

CORNBREAD

Cornbread image

I love tasting different cornbread recipes, and I have to admit, I think this is the best that I've ever tasted. Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. Try it...and let me know what you think. Thanks to Betty Crockers Big Red Cookbook for this great recipe.

BEEF AND CORNBREAD SQUARES

Beef and Cornbread Squares image

I love cornbread, and this just fits the bill. Almost a cold weather recipe, but when you makes this, it becomes an any time recipe! I make this all the time for when my usual Monday Night Football Armchair Quarterbacks come over! We seldom get to go to their houses because they want what I cook! They always say, "but you cook so good". I'm sure a lot of you know what I mean! I hope you like it, and let me know how it goes for your own MNFB crowd! Enjoy! This doubles and triples great. Here's a tip: I used to buy the cans of tomatoes and green chilis, such as Rotel), but since they are pricey, I buy the tomatoes and green chilis separately. You will get more for the money and you will have enough to double or triple the recipe. If I have leftover chilis and tomatoes, I freeze them for something else. Top this with my salsa #218314!

Serve w/ your next Southern meal or turkey dinner, or just as a breakfast food. And yes, the recipe calls for FOUR teaspoons of baking powder (not an error)

PERFECT CORNBREAD... EVERY TIME!

Perfect Cornbread... Every Time! image

Promise me you will try this one!!! I guarantee a moist, slightly sweet, NOT crumbly corn bread, with NO bitter after taste. I have tried so many corn bread recipes my family is sick of trying them. I have created this recipe from my trials. I like my corn bread to have a nice corn flavor, to be moist and not crumble, and I like it a little sweet. I also DON'T like the bitter after taste so many corn breads have. Give it a shot, you won't regret it!
