1/3 cup uncooked long grain rice
3 tablespoons uncooked wild rice
1/2 cup chopped peeled tart apple
1/4 cup white wine or apple juice
2 tablespoons slivered almonds
1/4 teaspoon salt
1/4 teaspoon poultry seasoning
Dash curry powder
1/4 cup peach preserves
1 tablespoon Dijon mustard
1 teaspoon prepared horseradish
1/4 teaspoon dried tarragon
1 Cornish game hen (20 to 24 ounces), split lengthwise

Steps:

  • Cook the long grain and wild rice according to package directions; drain. In a large bowl, combine the apple, white wine or apple juice, almonds, salt, poultry seasoning, curry powder and rice; set aside. , In a small saucepan, combine the preserves, mustard, horseradish and tarragon. Cook and stir over medium heat until preserves are melted. , Carefully loosen skin around hen breast, thighs and drumsticks. Set aside 1/4 cup glaze; spoon remaining glaze under skin., Place the rice mixture in two mounds in an 11x7-in. baking dish coated with cooking spray; arrange hen halves skin side up over rice. , Bake, uncovered, at 400° for 45-55 minutes or until meat juices run clear. Let stand for 10 minutes. Remove and discard skin before serving. Warm reserved glaze; brush over hen halves.

1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

1 small onion, finely chopped
2/3 c uncooked regular rice
1/4 c butter, melted
2 Tbsp lemon juice
1 can(s) cream of chicken soup, undiluted
2 tsp chives, dried
2 tsp parsley flakes
1 1/2 c water
2 tsp chicken soup base
4 (1-1 1/4 lb.) cornish hens
salt & pepper to taste
melted butter for basting

Steps:

  • 1. Saute onion and rice in 1/4 cup butter, 5 minutes or until onion is transparent and rice is golden. Add lemon juice, soup, chives, parsley, water and bouillon cube and bring to a boil. cover , reduce heat to medium low and cook for 25 minutes.
  • 2. Remove giblets from hens; reserve for another use. Rinse hens with cold water and pat dry; sprinkle cavities with salt and pepper.
  • 3. Stuff hens with rice mixture and close cavities. Secure with wooden picks and/or baking twine.
  • 4. Brush hens with melted butter. Cover and bake at 375 for 45 minutes. Uncover and bake 1 hour and 15 minutes, basting frequently with butter. Yield 4 servings.

4 sprigs thyme
1 large onion (cut in quarters)

1 teaspoon pepper (or to taste)
1 tablespoon Italian seasoning
2 teaspoon smoked paprika
1 teaspoon garlic powder

Steps:

  • Combine all the dry rub ingredients together in a small bowl.
  • Pat the hens dry with paper towels and generously season with the dry rub both inside and out.
  • Preheat your oven to 425°F.
  • In a roasting pan add the rosemary, thyme, garlic, onion, and half the lemon slices. Place the hens in the roasting pan over the herbs and onions and drizzle the olive oil over the hens.

1 bunch fresh thyme (about 1/2 ounce), plus more for garnish
2 lemons, halved, plus wedges for serving
1/4 cup loosely packed fresh flat-leaf parsley leaves
3 tablespoons unsalted butter
Coarse salt and freshly ground pepper

  • Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. 1 medium onion, cut into 1/4-inch dice
1/2 pound white mushrooms, stemmed and quartered
1/2 cup whole kasha
2 1/2 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
All-purpose flour, seasoned with salt and pepper, for dredging
2 two-pound Cornish game hens, split, with backbones reserved
1/4 cup white wine
1/2 pound orecchiette pasta, cooked al dente
1/3 cup loosely packed parsley leaves, finely chopped

Steps:

  • Preheat oven to 425 degrees. place a roasting pan in it. Melt 2 tablespoons butter in a skillet over medium heat. Add onions, cook 10 to 12 minutes; add mushrooms, cook until tender. Add kasha and 2 cups stock. Cook until kasha is tender, about 20 minutes. Set aside.
  • Melt 1 1/2 tablespoons butter in a cast-iron skillet over medium-high heat. Flour hens and cook, skin side down, with backbones, until golden brown, 6 to 8 minutes. Turn, and cook 3 to 5 more minutes. Transfer hens to roasting pan; roast for about 20 minutes.
  • Pour grease from skillet. Over high heat, add wine, and use a wooden spoon to scrape up brown bits. Lower heat, add remaining stock, and cook until reduced by a third, 5 minutes. Stir in remaining butter.
  • Stir cooked pasta and parsley into kasha. Season, and heat through. Serve hens over kasha pilaf, and spoon sauce over hens.

1 onion (, peeled and sliced)
1 sweet potato (, peeled and sliced into thin stripes)
1/2 cup chicken stock
1/2 cup white wine
salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degree Fahrenheit.
  • Rub the insides of Cornish hens with salt and pepper and 3 minced garlic cloves.
  • In a bowl, combine 2 tablespoons olive oil, paprika, chili powder, cumin, remaining minced garlic, 1/4 cup chicken stock and stir well to combine. Use 2/3 of this mixture to rub all over the outside of Cornish hens. Sprinkle the desired amount of salt over the outside of the hens. Sprinkle a very small amount of additional paprika over the hens (for color).
  • Toss carrots, onions, and sweet potatoes in the remaining 1/3 of the mixture to coat. Sprinkle with salt and pepper.
  • Transfer vegetables to the large roasting pan. Place hens breast sides up on top of vegetables. Add a little bit of chicken stock on the bottom of the pan to prevent vegetables from burning.
  • Roast Cornish hens at 425 Fahrenheit for 30-35 minutes. Reduce heat to 350 Fahrenheit. Combine 1/2 cup of chicken stop and 1/2 cup of white wine and pour the mixture over the hens and into the bottom of the roasting pan. Continue roasting at 350 degrees F for 15-20 more minutes, basting hens with pan juices, until hen juices run clear.
  • Transfer hens and vegetables to a platter. Make sure to pour juices from the hen cavities into a roasting pan. Cover hens with foil. Transfer the sauce from the roasting pan into a smaller saucepan and boil it down a little bit to thicken, if desired. You can also dissolve a little bit of cornstarch in water and add it to the boiling sauce to thicken it. After hens sit under the foil, pour juices from rested hens back into the sauce you just made. If desired, add more chicken stock to the thickened sauce.
  • Serve Cornish hens whole or cut in half.

2 Cornish game hens, giblets removed
3 tablespoons garlic and herb seasoning (such as McCormick®), divided
2 (8 ounce) packages cream cheese, divided
1 tablespoon butter, melted
salt to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line the inside of a roasting pan with aluminum foil.
  • Place hens, breast-side up, in the prepared roasting pan.
  • Mix 1 tablespoon garlic and herb seasoning with 1 package cream cheese in a bowl. Stuff cream cheese mixture in 1 hen. Repeat with 1 tablespoon garlic and herb seasoning and remaining 1 package cream cheese; stuff the second hen.
  • Brush hens with melted butter; sprinkle with remaining 1 tablespoon garlic and herb seasoning. Season with salt. Cover hens with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove aluminum foil and bake until no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).

1 medium onion, cut into 1/4-inch dice
1/2 pound white mushrooms, stemmed and quartered
1/2 cup whole kasha
2 1/2 cups Homemade Chicken Stock Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
All-purpose flour, seasoned with salt and pepper, for dredging
2 two-pound Cornish game hens, split, with backbones reserved
1/4 cup white wine
1/2 pound orechiette pasta, cooked al dente
1/3 cup loosely packed parsley leaves, finely chopped

Steps:

  • Preheat oven to 425 degrees. place a roasting pan in it. Melt 2 tablespoons butter in a skillet over medium heat. Add onions, cook 10 to 12 minutes; add mushrooms, cook until tender. Add kasha and 2 cups stock. Cook until kasha is tender, about 20 minutes. Set aside. Melt 1 1/2 tablespoons butter in a cast-iron skillet over medium-high heat. Flour hens and cook, skin side down, with backbones, until golden brown, 6 to 8 minutes. Turn, and cook 3 to 5 more minutes. Transfer hens to roasting pan; roast for about 20 minutes. Pour grease from skillet. Over high heat, add wine, and use a wooden spoon to scrape up brown bits. Lower heat, add remaining stock, and cook until reduced by a third, 5 minutes. Stir in remaining butter. Stir cooked pasta and parsley into kasha. Season, and heat through. Serve hens over kasha pilaf, and spoon sauce over hens.
