1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1/3 cup boiling water
1/4 cup vegetable oil

Steps:

  • In medium bowl, stir muffin mix and water until soft dough forms (dough will be slightly sticky). With floured hands, shape mixture into 6 (3-inch) patties.
  • In 12-inch skillet, heat oil over medium heat. Fry patties, turning once, until deep golden brown. Drain on paper towels.

1 (9 x 13 inch) pan cornbread
1 (12 ounce) can refrigerated biscuit dough, baked
¾ cup chopped onion
1 cup chopped celery
1 cup chopped mushrooms
⅛ teaspoon celery salt
⅛ teaspoon poultry seasoning
ground black pepper to taste
2 cups turkey broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one baking sheet.
  • Saute vegetables in butter until soft.
  • Break up cornbread and the biscuits into a very large mixing bowl. Mix in the sauteed vegetables and seasonings to taste. Add lots of turkey broth until very moist and will hold it's shape when formed. Shape into patties and place on the prepared baking sheet. Bake at 350 degrees F (175 degrees C) until lightly browned.

A SOUTHERN bread for sure! Goes well with any boiled leafy greens, cabbage, lima beans, black-eyed peas, fried fish or pork chops. Just can't beat it!!! Just like Grandma use to make!

1 cup self-rising cornmeal mix
2/3 cup water
1 cup vegetable oil (for frying)

Steps:

  • Mix first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
  • In a skillet or frying pan bring oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then furn down to #5 on my stove. Drop by tablespoons full and pat out with back of spoon to make a pattie. Turn over when bottom is light brown.
  • Serve and enjoy this tasty bread!

1 cup yellow cornmeal (fresh, and preferably stone-ground)
1 cup unbleached all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups buttermilk
1 large egg
2 tablespoons sugar (optional)
1/4 cup corn oil (or plain vegetable oil)
2 tablespoons unsalted butter

Steps:

  • Put the skillet on your stovetop to preheat.
  • Combine the dry ingredients except for the baking soda in a bowl.
  • In another bowl, mix the buttermilk and the baking soda.
  • Set aside.
  • In a small bowl, beat the egg with the sugar until combined.
  • Add the oil and mix until combined.
  • Pour this mixture into the buttermilk/baking soda, and mix.
  • When the skillet is preheated, toss the butter into the skillet and let it melt.
  • Meanwhile, pour the wet ingredients into the dry, and mix in as few strokes as it takes to just make the dough come together.
  • Swirl around the skillet to get the butter covering the bottom well.
  • Spoon the batter immediately into the pan. Allow the patty to brown well on the first side and then flip and brown the other side. About 5 minutes total time.
  • Remove to paper towels to absorb excess fat. Repeat until all the batter is used.

2 c corn kernels, thawed
1 c hot water add more if needed up to 1/2 cup more
2 c yellow cornmeal add a little more if dough is too thin
1 Tbsp sour cream or crema
1 Tbsp granulated sugar
1/2 tsp salt
1/3 c shredded cheddar cheese
2 Tbsp butter flavored crisco shortening
1/4 c diced fine and cooked chicken,beef, bacon,,optional

Steps:

  • 1. Place the corn and hot water in a blender or food processor. Blend until smooth. Mix cornmeal, sour cream, salt and cheese in a large bowl.
  • 2. Pour blended corn mixture over cornmeal mixture in the bowl and stir until evenly moistened. Divide dough into 18 pieces (or smaller if making for appetizers). Roll each piece into a ball and flatten to about 1/4 inch thick and a 3 inch circle.
  • 3. Melt shortening in medium skillet of other device,over low heat. Cook about 3 to 5 minutes on each side or until golden brown, Great served hot or cold. Great with chili or top like nachos or maple syrup, or bean dip spread on top.Great just used as bread at your meal instead of bread, spread with a little butter and enjoy!
  • 4. Note: These can be made and used as burger buns. One for top one for bottom -make on grill withburgerr and salsa, and other burger garnishes and you have a great burger.

1/2 cup turkey fat (skimmed from drippings)
OR
1 stick butter
1 package (16 ounce size) cornbread stuffing mix
1 medium onion, coarsely chopped
1 rib celery, coarsely chopped
hot turkey gravy

Steps:

  • Preheat the oven to 325 degrees F. Bring broth and fat to a boil in a large saucepan over medium-high heat (or combine broth and fat in a microwave-safe bowl and heat at high power until boiling). Remove from heat (or remove from the microwave). Add stuffing mix, onion and celery. Toss lightly with a fork until all ingredients are moistened. Shape into palm-size patties, about 3 to 4 inches in diameter, indenting the center. Place on an ungreased cookie sheet. Bake for 30 minutes or until brown and crispy. Fill the indentations with hot turkey gravy.
