CRAWFISH CORNBREAD
A yummy Cajun twist on Mexican cornbread. Everyone can't quit talking about this recipe. It's sure to become a favorite.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Stir together cornmeal, baking soda, and salt in a large bowl. In another bowl, beat together the eggs, onion, green pepper, pimentos, vegetable oil, Cheddar cheese, cream-style corn, jalapeno pepper, crawfish tails, seasoned salt, cayenne pepper, and garlic powder until the mixture is well combined. Pour the crawfish mixture into the cornmeal mixture, and stir together. Pour the mixture into the prepared baking dish.
- Bake in the preheated oven until the cornbread is lightly golden brown, and a toothpick inserted into the center comes out clean, about 55 minutes. Allow to rest for about 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir melted butter, seasoned salt, dill weed, and garlic powder together in a small bowl. Pour into a large baking dish. Add cod fillets and turn to coat both sides.
- Bake in the preheated oven until cod flakes easily with a fork, 20 to 30 minutes.

Steps:
- In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
- In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
- Fry cod fillets in hot oil until golden brown.

- in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
- on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
- in 10" skittle heat oil until hot.
- place 3 or 4 fish fillets in hot oil.
- cook over med heat until golden brown.
- turn and continue cooking until golden brown and fish flakes with a fork.
- repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
- Serve with potatoes or rice.

EASY CHILI CORNBREAD BAKE
Chili and cornbread go so well together, why not bake them in the same pan! I've been making this for years and my kids love it. I use ground turkey, but ground beef could be substituted if preferred. You can make this in individual 12- to 16-ounce casseroles if you prefer. Serve with tortilla chips and top with sour cream if desired.

- Cook turkey, celery, and onion in a skillet over medium heat until turkey is no longer pink, 5 to 7 minutes. Add chili powder, black pepper, cumin, and red pepper. Cook and stir for 2 minutes. Stir in tomato sauce, chili beans, and cannellini beans. Cook until heated through, about 5 minutes. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Combine cornbread mixes, milk, and egg in a bowl and mix well. Spoon batter into the prepared baking pan. Spoon turkey mixture over batter.

- Thaw fish. Cut into 4 X 1 inch strips.
- Preheat oven to 450°F.
- In a large mixing bowl, stir together the cornmeal, soda, and salt.
- Add onion and chili peppers.
- Beat together buttermilk and eggs.

- For the chow chow: Combine the vinegar and sugar into large saucepot and heat over medium heat. Reduce by half, and then add the mustard seeds, turmeric, celery seeds and crushed red pepper. Add the tomatoes, peppers, onions and cabbage. Reduce the heat to low and simmer for 15 minutes. Fold in the blanched butterbeans and yellow mustard. Season with salt. Remove from heat and let cool. For the cornbread puree: Preheat the oven to 425 degrees F. Stir together the cornmeal, bacon fat, baking powder, baking soda, egg and pinch of salt in a 6-inch ovenproof skillet and bake until cooked through, about 10 minutes. Once the cornbread is cooked, crumble into a large saucepot and add the buttermilk until a porridge consistency is reached. Simmer over low heat and season with hot sauce, salt and pepper. Transfer to a blender and puree until smooth. For the fillet: Add the canola oil to a hot skillet over medium heat. Place the fish skin-side down for 3 minutes. Turn the fish and cook until the skin is crispy and golden brown, about 2 minutes. To serve, place the sheepshead fillet over the cornbread puree and top with the butterbean chow chow. - Place Chilean sea bass fillet, cut into 6 pieces, into greased 9 x13 glass dish.
- From the two tangerines, zest and juice 1; peel and segment the other one.
- Top the fillets with the tangerine segments, chopped scallions, and garlic.
- Pour 1/3 cup tangerine juice and 1 tsp zest over fish.
- Dot with 2 tbsp unsalted butter, cubed.

CRUNCHY BAKED CATFISH WITH CORNBREAD STUFFING
I found this on www.raleys.com but rewrote the directions as they were a bit confusing. Cod and tilapia might work well too. My DH was very happy and floating in seafood heaven ;) ! If you don't like spicy dishes, try Italian Seasoning instead of Cajun and omit the fresh thyme.

- Preheat oven to 400°F.
- COATING: Stir together 1 cup stuffing mix and 2 teaspoons Cajun seasoning in a small bowl, crushing any larger pieces with your fingers (this might be less messy if done in a zip-loc baggie).
- FISH: Rinse fish and pat dry; brush with 1 tablespoon melted butter and roll in coating.
- Place in a shallow dish and sprinkle with any remaining coating.
- Bake until fish flakes easily with a fork, approximately 20 minutes.
- TOPPING: While fish is baking, stir together remaining stuffing mix, Cajun seasoning, 2 tablespoons butter and water in a small bowl; cover and microwave on HIGH for 2 minutes.
