CORNBREAD SALAD



Cornbread Salad image

A lady brought this to our home study group potluck and it was wonderful. She gave me the basics of what was in it and here if what I have come up with. Turned out really good. Cook time does not include the time it takes to cook bacon and the cornbread. I cooked the bacon in the microwave.

Number Of Ingredients 12

7 cups cornbread, torn into bite size pieces (I used Southern Country Cornbread)
6 slices cooked bacon, crumbled
1/3-1/2 cup red onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
2 small tomatoes, seeded and chopped
1/4 cup sweet pickle, chopped
1/4 cup dill pickle, chopped
1 cup mayonnaise
1/4 cup sweet pickle juice
1/4 teaspoon fresh ground pepper
1 dash ground red pepper

Steps:

  • In a small bowl, whisk together the mayonnaise, sweet pickle juice and peppers and set aside.
  • In a large bowl combine the remaining ingredients, tossing well.
  • Add the dressing mix to the cornbread mixture just before serving.
  • Enjoy.

I made them on Thanksgiving and my family haven't tried this before and they tasted it and they said they love it and it was so delicious and moist.

4 medium tomatoes
1 bell pepper
1 onion
1/2 c sweet pickle relish
9 slices bacon, cooked
1 c mayonnaise
1/4 c dill pickle juice
3 medium dill pickles
1 8 oz jiffy cornbread mix
1 egg
1/2 c milk
1/2 c cheddar cheese, shredded

Steps:

  • 1. Mix all corn bread ingredients. Bake at 400 F. in 8 inch square pan for 15 to 20 minutes. Let cool and crumble. Chop tomatoes, pepper, onion, and dill pickles. Mix with all other ingredients. Crumble corn bread (not too fine). Mix corn bread with all salad ingredients. Pour into bowl and let set for 1 hour. Toss slightly. Refrigerate. Cover.

  • Shuck corn and brush oil evenly on each ear, just enough so it doesn’t stick on the grille. Grill about 4 minutes and then roll to another surface until all sides have grill marks.
  • Meanwhile, drain pickles on paper towels. This is a VERY important step because the pickles will continue to give off juice, and the salad will be soggy if the pickles aren’t drained before chopping.
  • Prepare veggies: chop the red peppers and shallots into small dice and place in medium sized bowl. When the pickles are dry, dice them as well and add to the bowl. When corn has finished grilling, slice the kernels off the cob and add to the bowl.
