BLACK BEAN AND SWEET CORN TACOS



Black Bean and Sweet Corn Tacos image

2 tablespoons extra-virgin olive oil
1 medium red onion, chopped
2 garlic cloves, finely chopped
1/2 teaspoon ground cumin
One 15-ounce can black beans
4 corn taco shells
1 baby gem lettuce, roughly chopped
1 cup baby spinach, roughly chopped
1 cup arugula, roughly chopped
1 Hass avocado, diced
8 cherry tomatoes, quartered
2 tablespoons mayonnaise
1 lime, juiced
Pinch flaky sea salt
8 slices jarred pickled jalapeno
1/2 cup sweet corn, thawed to room temperature
Handful cilantro leaves, to garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the oil in a medium saute pan over medium heat and saute the red onion and garlic until softened, around 5 minutes. Add the cumin and cook for another minute. Drain the beans into a colander and rinse under cold water. Add to the pan and stir to combine with the other ingredients. Using a potato masher roughly mash the beans to bind them with the onions and garlic, but not too much, so you still retain some of the bean texture.
  • Place the taco shells on a foil-lined baking sheet and put them in the oven for 2 to 3 minutes to warm.
  • Meanwhile make the salad. Put all of the chopped and diced salad ingredients into a bowl. In a small bowl, mix together the mayo, lime juice and salt, using a fork. Pour over the salad and toss gently making sure everything is lightly coated in the dressing.
  • When the taco shells are warm, remove them from the oven.
  • Divide the bean mix evenly among the 4 tacos, top each one with a couple of slices of pickled jalapeno, a quarter of the sweet corn and a quarter of the salad and garnish with cilantro leaves. Devour.

3 cups frozen sliced carrots (or 2 -3 fresh carrots, sliced)
2 (1 ounce) packets taco seasoning

4 cups water
2 cups frozen corn
1 (15 ounce) can hominy
1 (15 ounce) can black beans
Tony Chachere's salt-free cajun spice

Steps:

  • Heat oil over medium-high heat in a large soup pot and saute onion for a couple of minutes.
  • Add beef and brown.
  • Add tomatoes, tomato sauce, water, seasoning and carrots. Reduce heat to medium-low and simmer for 45 minutes.
  • Add corn, hominy, and beans and simmer for 15 minutes.

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the next 11 ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Serve half of the chili with corn chips if desired. Freeze remaining chili in a freezer container for up to 3 months. , To use frozen chili: Thaw in the refrigerator. Transfer to a large saucepan; heat through, adding water if desired.

MY VERSION OF TACO SOUP (WITH HOMINY AND LIMA BEANS)



My Version of Taco Soup (With Hominy and Lima Beans) image

I like this cause you just toss everything together in a pot or a slow cooker and that's it. You can switch out any beans, and switch out corn for hominy. However, this is the way we like it at our house. I use as many low sodium or no salt products I can find, just to control the sodium content. This soup is spicy made like this recipe. To tone down the heat, use the mild or Mexican Rotel and mild chili beans. I make my own taco seasoning too (recipe is posted), so I swap that out for the envelope to taste. The leftovers freeze very well!

Steps:

  • Cook the ground chicken, diced onion, and pepper together until the chicken is done. I cook this all in the soup pot for a one pot meal -- less clean up!
  • Add the remaining ingredients into the soup pot. NOTE: I use frozen baby lima beans, and measure them in an empty bean can. I use one can of frozen beans for the recipe, but feel free to sub out another bean. I also add 2 of the tomato sauce cans full of water to the pot at this time.
  • Bring to a boil and stir this all together, and reduce the heat to simmer.
  • Cover the pot and simmer on medium heat for about 60 minutes.
  • ALSO: you can put everything into a crockpot on low for about 6-8 hours or on high for about 3-4.
  • Topping Ideas: tortilla chips, shredded cheese, diced avocado, pico de gallo, sour cream, or all of the above :).

1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (8 ounce) can tomato sauce
2 cups water

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef and onion to the bottom of a slow cooker; stir in diced tomatoes, corn, pinto beans, black beans, diced tomatoes with chiles, tomato sauce, water, taco seasoning, and ranch dressing mix.
