EASY FUN-SIZE CORN DOGS
Not only are these corn dogs easy and fun, but because we're doing them in the oven and not deep frying them, they are way, way less messy to make. Above and beyond all of that, I thought the timing was perfect for these, since pretty much every carnival and fair got canceled this year. Serve with mustard and ketchup.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Cut each hot dog into 6 pieces.
- Pour egg, 2 tablespoons vegetable oil, sugar, and milk into a mixing bowl; whisk until combined. Add white vinegar, cornmeal, flour, baking powder, baking soda, kosher salt, and cayenne. Whisk briskly until ingredients are combined and batter is relatively thin and overmixed. Set batter aside for 10 minutes before using.
- Meanwhile, brush two 12-cup mini muffin tins with 2 tablespoons vegetable oil. Fill the prepared muffin cups to about 1/8 inch from the top. Gently push a piece of hot dog into the center of each one.
- Bake in the preheated oven until nicely browned, about 18 minutes. Let cool for at least 5 minutes before removing from the pan.

CORN DOG CAKE
I got the idea from a Corn Dog muffin recipe. I did not have the correct ingredients. So I had to make due. My kids love it. They always have an extra piece. You can also substitute veggie hot dogs for the regular hot dogs. The brown sugar makes it a bit more sweet.

Steps:
- Preheat oven to 350 F and lightly grease baking pan.
- (11 X 7) Combine flour, brown sugar, corn meal, baking powder, and salt in a bowl.
- Mix together.
- Set aside.
- Combine milk, eggs, butter.
- Mix well.
- Add dry mixture to wet mixture, stir until just blended.
- Pour into baking pan.
- Cut hot dogs into bite size pieces.
- Sprinkle hot dogs into mixture.
- Bake at 350 F for 35 minutes or until golden brown.
CORNDOG CAKE

- Method Mix dry ingredients together in a bowl. Mix in eggs, milk, and melted butter. Transfer to zip-top bag for transporting if the batter was made at home. At camp, line Pie Iron with foil, leaving extra hanging out to fold over the top of the other side. Add a layer of cornbread on top of the foil. Slice hot dogs and press them into the cornbread. Top with BBQ sauce. Cover hot dog slices with more cornbread. Fold foil piece over top and close the Pie Iron. Hold Pie Iron over the embers of a campfire for about 3 minutes. Flip and roast on other side for 3 more minutes. Open Pie Iron and check for doneness. Repeat if necessary
CHEESY CORN DOG BAKE
It's midway fare without the stick: hot dogs nestled in moist cornbread with the added attraction of cheese. Everyone's a winner.

BAKED CORN DOGS

- Preheat oven to 375 degrees. Line a baking sheet with parchment paper; set aside. In a medium bowl, whisk together flour, cornmeal, baking powder, sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Make a well in center; add milk, eggs, and oil. Mix just until combined.
- Insert an ice-pop stick into one end of each sausage, leaving a 1 1/2-inch handle. Dust with flour; tap off excess. Using handle, rotate each sausage over bowl as you spoon batter to coat evenly. Place on sheet; bake 5 minutes. Remove from oven. Using a spatula, reapply batter that has slipped onto sheet. Return to oven; bake until golden, 20 minutes. Serve with ketchup and mustard, if desired.

- Mix Bisquick, cornmeal, sugar, egg and water.
- Add cheese, if desired.
- Pour 1/3 of batter into a greased loaf pan (9x5x3-inch).
- Place 3 hot dogs on top of batter.
- Repeat with 1/3 of batter and rest of hot dogs.
- Pour over rest of batter.
- Bake at 400° for 40 minutes.
- Remove from pan and cool 10 minutes before slicing.
