DUMP-AND-BAKE CORN CASSEROLE
This Thanksgiving side dish couldn't be easier. Part cornbread, part corn pudding, it's moist and decadent. Perfect for when you're hosting, but also travels well for when you're bringing a dish as a guest.

Steps:
- Preheat the oven to 325 degrees F. Spray a 9-inch square baking dish with nonstick spray.
- Stir together the whole-kernel corn, cream-style corn, corn muffin mix, sour cream and butter in a large bowl. Stir in the ham and scallions until just combined. Pour into the prepared baking dish and bake until golden brown, about 1 hour 15 minutes.
- Sprinkle evenly with the Cheddar and continue to bake until the cheese is melted, about 5 minutes. Sprinkle with scallions before serving.

- Bake at 350 for 35 minutes or until a knife inserted in middle comes out clean.

- Preheat oven to 350°F Spray a 13x9 baking pan (or 2 9" pie plates) with non-stick spray.
- Beat together cream cheese, butter, cream-style corn, kernel corn (including the canning liquid) and corn muffin mix until thoroughly blended.
- Pour into prepared pan(s). Bake in preheated oven 45 minutes, or until golden brown. It will still be soft and moist in the middle, so you won't really be able to cut it into individual pieces; it'll be more scoopable.

CREAMED CORN CASSEROLE
Creamed corn is one of my favorite comfort food dishes. Here, I've used my recipe for that dish in a different way that's perfect for gatherings with family and friends: a casserole! Boxed corn muffin mix, Cheddar cheese and sour cream are added to my creamed corn and bake up into an irresistible side dish that everyone will love.

Steps:
- Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
- Cut the corn kernels from the cobs (about 8 cups) and scrape the cobs to remove all the liquid. Melt the butter in a large skillet over medium heat. Add the corn, milk, salt and pepper. Simmer until the corn is softened and the mixture begins to thicken, about 5 minutes. Remove from the heat.
- Stir together the cornbread mix, sour cream, eggs and half of the cheese in a bowl. Stir in the creamed corn. Pour the mixture into the prepared dish. Sprinkle with the remaining cheese. Bake until the casserole is browned and set, 35 to 40 minutes. Sprinkle with the green onions before serving, if desired.
CORN CASSEROLE
Steps:
- Preheat the oven to 350 degrees F.
- Carefully remove the corn from the cob with a knife and put in a food processor. Transfer to a large bowl. Coarsely puree with salt, pepper, and nutmeg. In a saute pan, add the oil and the onions and saute until translucent. Add the onions to the corn mixture. Add the beaten eggs, milk and half of the grated Cheddar and combine. Use 2 teaspoons of oil to coat a 13 by 9-inch baking dish. Transfer the corn mixture to the dish and top with the rest of the grated Cheddar. Place the dish in the oven and bake for 30 to 40 minutes or until the top of the casserole is golden brown.

- Pre-heat oven to 400 degrees.
- Brown the ground beef.
- mix corn bread mix, eggs, and milk while the ground beef is cooking.
- drain ground beef.
- return to heat ground beef, taco seasoning, corn, black beans, and Rotel.
- Once, beef mixture is heated through, pour into baking dish.
- Sprinkle on a layer of shredded cheese.
- pour corn bread mixture on top and spread around evenly.
- Bake for 20 minutes.

- Mix the wet ingredients and the dry ingredients in separate bowls, and then combine them. Add salt and fresh cracked pepper to taste.
- Pour into a greased 8-9 inch square pan or 10 inch cast iron skillet, or 1-1/2 quart casserole baking dish. Top with small dabs of butter (about 2 or 3 tablespoons).
- Bake at 350ºF. for 50-55 minutes, or until golden brown and get set in the middle, (To test, give it a shake, it shouldn't jiggle too much in the middle when it's ready).
- UPDATE NOTE: I made the correction in Step 2 for the baking size pan for 12 servings, and added optional ingredients according with a review posted below.

Steps:
- Preheat oven to 400.
- Melt butter in skillet. Sautee onion until translucent.
- In mixing bowl, combine eggs, corn, flour and muffin mix. Mix well. Add sauteed onion mix.
- Pour batter into well-greased 8x11 baking dish. Tap to make sure batter is level, then spread sour cream on top. Sprinkle cheese on top.
- Bake for 25 minutes in pre-heated oven. Reduce temperature to 350 and bake an additional 25 min or until casserole feels firm in center.
- Variation: Add slices of sausage or crisp bacon to the batter or add kernels from a fresh ear of corn.
- Advance preparation: Can be prepared 2 days ahead. Cover and refrigerate. Bring to room temperature before reheating. Casserole also freezes well.
