6 ripe vine tomatoes , deseeded and chopped
1 small cucumber , diced
1 red onion , very finely chopped
6 tbsp fresh coriander , chopped

Steps:

  • Mix together the tomatoes, cucumber, red onion, and chopped coriander, but don't season until just before serving

A new twist on classic peppered steak - so simple to prepare. This recipe serves 2, but is easily doubled

1 tbsp coriander seed
1 tsp black peppercorn
a pinch of dried red chilli flakes
2 x 175-200g/6-8oz sirloin steaks
140g cherry tomato
a small chopped red onion
3 tbsp olive oil
1 tbsp lemon juice
50g bag of rocket

Steps:

  • Crush the coriander seeds with the black peppercorns. Add the dried red chilli flakes, then use to coat both sides of the steaks. Set aside. Preheat a griddle pan on a high heat.
  • Cut the cherry tomatoes in half then toss with the red onion, olive oil and lemon juice and season with salt, pepper and a pinch of sugar. Toss in the rocket.
  • Griddle the steaks for 2-3 minutes each side, allow to rest, and serve with the salad.

2 tablespoons olive oil
2 boneless beef top loin steaks, 10 oz each
1 tablespoon coriander seed, crushed
1/2 red onion, finely chopped
1 teaspoon cracked black pepper
2 cups fresh corn kernels
3/4 teaspoon salt
1 tablespoon fresh cilantro, chopped
1 red pepper, cut into 1/4 inch pieces
1 tablespoon fresh lime juice
1/2 teaspoon ground cumin

Steps:

  • Heat 10-inch skillet or grill pan over med-high heat until very hot. Brush pan with 1 tbsp oil. On waxed paper, mix coriander, pepper, and 1/2 tsp salt -- use to coat both sides of steaks.
  • Place steaks in grill pan; cook about 8 min, turning once for medium-rare or desired doneness.
  • Meanwhile, in 2-quart saucepan, heat remaining oil over medium-high heat. Add red pepper and onion, cook, stirring occassionally until very soft, about 5 minutes. Stir in corn; heat through. Stir in cilantro, lime juice, cumin, and remaining salt. Makes about 2 1/2 cups.
  • Transfer steaks to cutting board. Thinly slice steak and serve with corn salad.

1 1/2 tablespoons soy sauce
2 teaspoons brown sugar
2 teaspoons ginger, minced
1 clove garlic, minced
1 teaspoon olive oil
1/4 cup cilantro leaf

Steps:

  • press coriander into both sides of flank steak.
  • stir together remaining ingreds and pour over flank steak, marinate 10 minutes or longer.
  • heat broiler, broil steak 5 mins per side for med rare,let it rest for 5 minutes, slice and serve.
