One of Grandma Dorothy's much sought after recipes. These oatmeal cookies are wonderfully chewy and are made with oil instead of butter or margarine so they appeal to the heath conscious. One is never enough!

Number Of Ingredients 10

1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar
1 cup brown sugar
1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.

1/2 cup butter
1/4 cup butter flavor shortening
1 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 teaspoon vanilla
1 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3 cups oatmeal (Regular, not instant or quick)
1/2 cup raisins
1/4 cup finely diced walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter, shortening and sugars. Add egg, water and vanilla and mix well.
  • Sift together flour, salt and baking soda. Add to creamed mixture and mix well.
  • Stir in oats and raisins.
  • Drop by teaspoonfuls onto greased cookie sheets.
  • Bake for about 11-12 minutes.

1/2 cup butter
1/2 cup lard
2 cups brown sugar
1 teaspoon vanilla
2 beaten eggs
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups rolled oats
1 1/2 cups coconut

Steps:

  • In one bowl cream butter, lard, and sugar.
  • Add beaten eggs and vanilla.
  • In another bowl add sifted flour and other dry ingredients.
  • Gradually add the dry ingredients to the creamed mixture.
  • Roll into small ball, and flatten with a fork on a ungreased baking sheet.
  • Bake at 375 F for 10- 15 minute.

2 eggs
3 cups brown sugar, packed
1 teaspoon vanilla
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup angel flake coconut
2 cups quick-cooking rolled oats (not instant)

Steps:

  • Grease cookie tins.
  • Preheat oven to 375°F (190°C).
  • Beat butter, eggs, sugar and vanilla together until they are light and fluffy.
  • Sift flour with baking powder, soda and salt and stir them into the first mixture. Blend well.
  • Stir in coconut and rolled oats.
  • Drop by heaping teaspoonfuls onto cookie sheets and bake for 10 minutes.
  • Cool on wire racks and store in tightly covered cookie tins.

Steps:

  • Preheat oven to 350°F.

This is a recipe I got from my friend Mabel many years ago. They are a delicious and easy cookie to make. You can freeze the logs and take them out when you want to bake them. Chill time is not reflected in the preparation time so plan ahead.

1 cup butter
1 cup brown sugar
1 cup white sugar
2 large eggs, beaten
1 teaspoon vanilla
1 teaspoon salt
3 cups oatmeal
1 1/2 cups flour
1 teaspoon baking soda

Steps:

  • Cream together butter and sugars.
  • Beat in eggs and vanilla.
  • Stir in salt, soda and flour, mixing well.
  • Stir in oatmeal.
  • Shape into 4 round logs.
  • Wrap well in wax paper and chill.
  • Slice 1/4-inch thick, place on baking sheets and bake at 350°F for 10 minutes.
  • You can add 1 cup of any of the following if you wish for a variation: coconut, nuts, raisins or chocolate chips.

  • Do not overbake.
  • Take cookies from the oven when still puffy and edges are just beginning to brown.
  • Let cookies cool a minute or two on cookie sheets.
