Steps:
- Using a stand mixer with paddle attachment, blend chicken breasts until thoroughly shredded, or shred by hand. (Note: Shredded chicken rather than diced chicken pieces will help recreate the original Willow Tree chicken salad texture.)
- Remove bowl from the stand mixer and add in all other ingredients. Stir by hand to mix well.
- Serve over lettuce leaves or in sandwiches.
COSTCO CHICKEN SALAD COPYCAT

- 1. Remove chicken from the bones - remove the skin as well (not great in this salad) 2. You will use about 1/2 of the chicken from a Costco rotisserie chicken. You want to chop it up finely - I used a food chopper, and it worked great. 3. Chop celery and sweet onion very finely - again, I used a food chopper. 4. In a separate bowl, mix together mayonnaise, sour cream, salt, sugar, lemon juice, parsley, and vinegar. 5. Combine chicken, celery, and onion in a large bowl. 6. Fold in the dressing and combine together. 7. Refrigerate a few hours for best results!

- Boil chicken until completely cooked. Remove from water and cool meat.
- You can save the chicken broth, seal and refrigerate no more than a week.
- After chicken is cool, cut into tiny pieces. Place in a mixing bowl with all other ingredients and mix well.
- Butter one side of sandwich bread and grill. Place salad in between grilled bread slices and serve.

- Make dressing: Combine dressing ingredients in a bowl. Refrigerate until ready to use. (Dressing can be made a few days in advance).
- Heat oil: Preheat oil in a pot over medium heat. You want the oil at about 350 degrees F, (or test the oil by putting a small piece of torn bread into the pot and if the bread sizzles, it's ready.)

- Marinate the chicken: In a bowl or sealable plastic bag, combine the chicken, chili powder, cumin, oregano, salt, pepper, garlic, vinegar, and 2 tablespoons olive oil. Marinate for at least 30 minutes or as long as overnight.
- Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sauté the chicken pieces for 8-10 minutes until golden brown and cooked through. Remove the chicken from the pan.
- Prepare the fajita veggies: To the same pan, add in the olive oil, peppers, onion, oregano, and salt. Sauté for 5-6 minutes until softened and caramelized.

I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.
