Steps:
- Thoroughly mix gelatin, 1/2 cup sugar, and salt in saucepan.
- Beat together egg yolks, fruit juices, and water; stir into gelatin mixture.
- Cook and stir over medium heat just till mixture comes to boiling.
- Remove from heat; stir in peels.
- Chill, stirring occasionally, till mixture mounds slightly when dropped from a spoon.
- Beat egg whites till soft peaks form.
- Gradually add 1/3 cup sugar, beating to stiff peaks; fold in gelatin mixture.
- Pile into cooled baked pastry shell.
- Chill till firm.
- Trim with whipped cream and thin orange slices cut in fourths.
SHAKER CITRUS PIE
This Shaker-style pie uses the whole fruit, rind and all. To get the best flavor, choose lemons and oranges with very thin skins.

Steps:
- Cut oranges and lemon into paper-thin slices, and remove seeds. Cut all but 4 slices of the lemon and 4 slices of the orange into eighths. Place the rings and slices into a plastic container; add sugar, mix gently, and refrigerate overnight.
- On a lightly floured surface, roll out dough to 1/8'-inch thick; drape over a 10-inch pie pan. Create decorative edge as desired. Refrigerate 30 minutes, or until chilled.
- Heat oven to 400°F Drain fruit, reserving syrup. Separate whole slices from cut pieces, and set aside.
- Combine whole eggs and citrus syrup in the bowl of an eletric mixer fitted with the paddle attachment; beat on medium high until pale yellow and fluffy, 5 minutes. Remove from mixer; stir in orange and lemon eighths. Pour into shell; top with reserved fruit slices.
- In a small bowl, mix egg yolk and cream. Using a pastry brush, gently brush dough edges with egg-yolk mixture. Place pie on baking sheet; bake 15 minutes, then reduce heat to 350F; continue to bake 35-40 minutes more, until pie is set. Let cool completely on a wire rack, 2-3 hours. Serve with compote.
- CRANBERRY COMPOTE: Combine all ingredients in a medium saucepan. Place over medium-high heat and cook 7-10 minutes, stirring occasionally, until berries start to pop but are still whole. Transfer to a bowl to cool; serve.

- Refrigerate pie crust until ready to use.
- In a bowl, combine the amaretto and water; sprinkle the gelatin over the liquid and set aside to soften.
- In a saucepan, combine the milk, egg yolks, brown sugar, maple syrup, pumpkin, spices, and salt.
- Place over medium to med-low heat and cook, whisking virtually nonstop, until the mixture thickens somewhat (the change will be subtle) about 8 minutes; do not let the mixture boil.
- Remove from the heat and immediately add the gelatin mixture, stirring well to blend.
- Place the bowl in a larger bowl of ice water and let the filling cool, stirring frequently, until cool to the touch (you may want to add more ice when the first cubes melt.
- Meanwhile, using a chilled bowl and chilled beaters, beat the whipping cream using an electric mixer until stiff but not grainy; cover and refrigerate; wash and dry the beaters.
- In a bowl, beat the egg whites using a mixer until they hold soft peaks; add the sugar and continue to beat until stiff and glossy but not dry.
- Add the whites and about 1/3 of the whipped cream to the chilling.
- Fold gently until evenly combined.
- Add the remaining whipped cream and fold again until evenly mixed.
- Fold in the chopped pecans; scrape the filling into the chilled pie crust, smoothing the top with a spoon.
- Cover with loosely tented foil and refrigerate at least 4 hours or overnight.
- To serve: garnish pie with pecan halves and serve with a dollop of whipped cream.
FROZEN CITRUS PIE
Nice frozen pie that is easy to put together and takes but minutes. No cooktime, so the 4 hours is freezer time.

- Place concentrate in large mixing bowl and beat about 30 seconds.
- Gradually,spoon in ice cream and blend.
- Fold in whipped topping, whipping until smooth.
- Spoon into pie crust.
- Freeze until firm, at least 4 hours.
- Store any leftover pie in freezer.
- I usually add lemon zest on top before serving.

- Heat oven to 350°F.
- In large bowl, blend butter, coconut and crumbs. Press over bottom and up sides of 9 inch pie plate.
- Bake crust at 350F for 14 minutes, or until lightly golden on edges. Transfer plate to wire rack; let cool.
- Filling: in blender, combine clementine sections and lemon juice. Pulse until smooth. Bring butter, sugar, rind, citrus mixture and gelatin to a simmer in a medium-sized saucepan.
- In bowl, slightly whisk eggs to break up. Whisk a little of hot clementine mixture into eggs; then whisk egg mixture back into saucepan. Cook 2 minutes, stirring constantly, until mixture is thickened and registers at least 160F on an instead-read thermometer. Strain into a large bowl. Place plastic wrap directly on surface of mixture; let cool at room temperature for 30 minutes. Refrigerate for 2 hours, until mixture begins to set.
- Add cream to citrus mixture. Beat with an electric mixer to very soft peaks, about 3 minutes. Spoon into crust. Chill until firm, about 1 to 2 hours. Top with clementine sections, if desired.
