1 (9 inch) pie shell
¼ cup butter
2 tart apples - peeled, cored and sliced
½ cup white sugar
½ teaspoon ground cinnamon
¼ cup butter, softened
1 ⅓ cups white sugar
4 eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
¾ cup buttermilk
¼ cup white sugar
¼ cup packed brown sugar
½ cup all-purpose flour
¼ teaspoon ground cinnamon
3 tablespoons butter

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • To Make Apple Filling: Melt 1/4 cup butter or margarine in skillet over medium heat. Add apple, 1/2 cup white sugar, and 1/2 teaspoon cinnamon. Cook 3 to 5 minutes, until tender. Set aside.
  • To Make Buttermilk Custard: In a large mixing bowl combine 1/4 cup softened butter or margarine with 1 1/3 cups white sugar. Beat until creamy. Add eggs one at a time, beating until yellow disappears. Mix in vanilla, then 2 tablespoons flour. Combine thoroughly, then pour in buttermilk, beating until smooth.
  • Fit pastry into pie pan and prick with a fork. Spoon apple mixture into crust, then pour buttermilk custard over it.
  • Place in preheated oven and bake for 30 minutes.
  • To Make Streusel Topping: While pie is baking, combine 1/4 cup white sugar, brown sugar, 1/2 cup flour, and 1/4 teaspoon cinnamon in a small bowl. Cut in 3 tablespoons butter or margarine until mixture is crumbly.
  • Remove pie from oven after 30 minutes and sprinkle streusel topping over custard. Return to oven and bake for an additional 40 to 50 minutes, until a knife inserted in center comes out clean. Let stand 1 hour before serving.

1 1/2 cups sour cream
1 (14 ounce) can sweetened condensed milk
1/4 cup frozen apple juice concentrate, thawed
1 egg
1 1/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1 (21 ounce) can apple pie filling

Steps:

  • Preheat oven to 375.
  • Bake pastry shell 15 minutes.
  • Meanwhile, in small mixer bowl, beat sour cream, sweetened condensed milk, juice concentrate, egg, vanilla and cinnamon until smooth.
  • Pour into prepared pastry shell; bake 30 minutes or until set.
  • Cool.
  • Top with apple filling.
  • Garnish as desired.
  • Serve warm or chilled.
  • Refrigerate leftovers.

I stumbled across this recipe several years ago when I was doing my favorite thing; searching for recipes! And, it has proved worthy! Borrowed photo....

1/2 (15-ounce) package refrigerated pie (pillsbury)
cooking spray
STREUSEL:
1/3 c all purpose flour
1/3 c brown sugar, firmly packed
1/2 tsp cinnamon

FILLING:
5 c sliced peeled granny smith apples (about 2 pounds)

1/2 teaspoon salt
1/2 cup cold butter
3 cups sliced peeled tart apples, (about 4 medium)
1/3 cup sugar
1 teaspoon ground cinnamon
CUSTARD:
1 cup evaporated milk
1 egg
1/2 cup sugar

Steps:

  • In a small bowl, combine flour and salt; cut in butter until crumbly. Press onto the bottom and up the sides of a 9-in. pie plate. Arrange apples over the crust. Combine sugar and cinnamon; sprinkle over apples. Bake at 375° for 20 minutes. , For custard, whisk milk, egg and sugar in another small bowl until smooth; pour over apples. Steps:

  • Fit pie crust into a 9-inch pie plate according to package directions. Fold edges under and crimp.
  • Melt 1/4 cup butter in a large skillet over medium heat. Add apple slices, 1/2 cup sugar, and 1/2 tsp cinnamon. Cook, stirring occasionally, 3 to 5 minutes or until apple slices are tender; set aside.
  • Beat 1/4 cup butter and 1 1/3 cups sugar at medium speed with an electric mixer until creamy. Add eggs 1 at a time, beating just until yellow disappears. Add 2 tbsp flour and vanilla, beating until blended. Add buttermilk, beating until smooth.
