This is how my Brazilian mom prepares pork ribs. Boiling the ribs with the seasonings ensures that the meat will remain moist and juicy, and that the flavors will fully penetrate the meat. I hope you like these as much as I always have! Serve with lime wedges, rice and a fresh green salad.

10 pork spareribs
½ cup soy sauce
10 cloves garlic, crushed
1 tablespoon dried rosemary
1 tablespoon dried oregano
2 bay leaves
1 lime, juiced
10 sprigs fresh parsley
ground black pepper to taste
2 limes, cut into wedges

Steps:

  • Place the spareribs into a large pot, and fill with just enough water to cover. Add the soy sauce, garlic, rosemary, oregano, bay leaves, lime juice and 3/4 of the parsley. Bring to a boil, then simmer uncovered over medium heat until the water has completely evaporated, about 25 minutes.
  • When all of the water is gone, remove the bay leaves, and allow meat to brown, turning occasionally. Use a spatula to scrape up browned bits and softened garlic from the bottom of the pot, and toss them with the pork. The garlic will dissolve onto the meat. Remove the meat, and drain on paper towels. Season with black pepper and garnish with lime wedges and remaining parsley.

This is how my mother-in-law taught me how to cook a pork roast when I was a new bride - 1959! I have updated it a little. At that time, I didn't know how to boil an egg.

4 1/2-5 lbs pork roast
2 tablespoons olive oil
salt and pepper
6 garlic cloves, chopped
1 medium onion, chopped
1/2 cup water
1 teaspoon thyme
1 teaspoon sage
1 cup dry red wine
2 tablespoons flour, and enough water to make a paste to thicken the gravy

Steps:

  • Rub the roast all over with thyme, sage and salt and pepper.
  • Heat a heavy dutch oven over medium-high heat. Add oil to pan and brown the roast on all sides. Remove roast and saute the onion and garlic. Put the roast back in the pan and add water and reduce heat to medium or medium-low. Cover and simmer until done - about 2 hours. Turn the meat occasionally as water evaporates and then add a little more water.
  • To make gravy, remove roast and add the wine and 1/2 cup water to pan. Bring to boil and scrape up brown bits on the bottom of the pan. Bring to a boil until reduces a bit and then add the flour-water paste and whisk in slowly to avoid lumps till reaches the desired thickness. Taste for seasoning.
  • If desired, cook 6 small potatoes, 2 medium onions, quartered, 4 medium carrots, peeled and cut into 3 inch pieces and 1 pound button mushrooms in with roast. Add the last hour of cooking.

4 pork chops or 4 boneless pork steaks
1 (6 ounce) box Stove Top stuffing mix, prepared
1 (10 1/2 ounce) can cream of mushroom soup, undiluted (I like low-sodium)
1/4 cup milk
seasoning salt
pepper (you can use pork seasoning of choice instead salt & pepper, I use sage sometimes, don't use a lot of)

Steps:

  • Season chops with salt & pepper, brown in lightly oiled skillet.
  • Place in 9x13 pan sprayed with cooking spray.
  • Preheat oven to 350 deg.
  • Prepare Stove-Top according to package, spoon over chops.
  • Mix soup and milk in bowl, pour over top.
  • Cover with foil and bake 1hr, or a little more until pork has reached safe internal temperature. You can bake longer for increased tenderness if desired, chops will be moist. You can also uncover last 20 mins or so of baking for top of casserole to brown.

4 bone-in pork loin chops (1/2 inch thick and 4 ounces each)
8 small new potatoes, optional
1 small onion, chopped
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (4 ounces) sliced mushrooms, drained
1/4 cup water
1/2 teaspoon garlic salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon dried thyme
2 cups frozen peas and carrots

Steps:

  • In a large skillet, cook pork for 3-4 minutes on each side or until a thermometer reads 160°; drain. Add potatoes if desired and onion. , In a large bowl, combine the soup, mushrooms, water, garlic salt, Worcestershire sauce and thyme; pour into skillet. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Stir in peas and carrots; cover and simmer for 10 minutes or until heated through.

I don't know if you can get pickled pork outside Australia, but it's quite common here. My mum used to by a piece of it every year for Christmas, but we buy it about once a month as it's pretty cheap and great cold on sandwiches. It's very similar to corned beef which we also cook for lunch meat so I came up with this way of cooking it to give it a flavour of its own. We love it still warm with a German type potato salad and mustard on the first night.

3 tablespoons brown sugar
3 tablespoons white vinegar
1 onion, peeled and cut into chunks
2 garlic cloves, peeled and lightly crushed
1 teaspoon peppercorn, lightly crushed
2 slices orange peel (about 2 inches each)
1 star anise
1 1/2 kg pickled pork

Steps:

  • Mix the first 7 ingredients and a couple of cups of cold water together in a saucepan large enough to hold the piece of pork.
  • Add the pork and more water (enough to cover the pork); give it all a bit of a stir around to combine.
  • Bring to the boil, then cover and reduce to a simmer; cook for 2 hours (40 minutes per 500g of meat).
  • Allow to cool for about 2 hours in the stock.

  • Preheat your fan forced oven to 180 degrees celsius.
  • Cover the top of the pork with the olive oil and massage in well.

2 cups water
1 cup apple cider vinegar
1/4 cup kosher salt
6 cloves garlic, peeled and crushed
2 tablespoons sugar
2 tablespoons yellow mustard seed
2 tablespoons hot sauce
1 tablespoon celery seed
1 bay leaf
1/4 teaspoon whole black peppercorns
8 ounces ice
1 1/2 pounds fresh boneless pork butt, cut into 2-inch cubes

Steps:

  • Combine all of the ingredients except the ice and the pork in a 2-quart nonreactive saucepan, set over high heat and bring to a boil. Reduce the heat and maintain a simmer for 3 minutes. Remove from the heat, add the ice and stir. Place the pork into a 1-gallon zip top bag and add the cooled pickling liquid. Remove as much air as possible; seal the bag and place in the refrigerator for at least 3 days, turning the bag occasionally. Use within 2 weeks or remove from the pork from the brine and freeze.
