CONNIE'S KANSAS CITY CASSEROLE
My family has been making this casserole for decades. I'm not sure where the recipe orginated, maybe mom made it up. It is so good, a one pot meal. Throw it together and shove it in the stove:) Photos to be posted later.

Steps:
- 1. Cut beef into serving size pieces.
- 2. Trim off any excess fat.
- 3. Sprinkle beef with salt and pepper.
- 4. Place ribs into casserole.
- 5. Brown meat in the oven, uncovered for 1 hour at 400 degrees.
- 6. Remove casserole from oven and drain off fat.
- 7. Add onions, parsley, celery, potatoes, horseradish, and tomatoes to casserole dish.
- 8. Stir casserole ingredients.
- 9. Bake an additional 1 hour at 375 degrees.
- 10. Great with a salad....Enjoy!
CONNIE'S SIRLOIN CASSEROLE
Love the gravy that this recipe created. To me, the Kentucky Kernel flour always makes everything so good. After the initial preparation, this is one of those recipes that takes no attention. Your guests will be very impressed!

Steps:
- 1. Combine flour, garlic powder and Lawry's seasoning in a zip lock bag and shake it to combine.
- 2. Add sirloin chunks and shake to cover them.
- 3. Add olive oil to your hot cast iron skillet.
- 4. Brown sirloin chunks in olive oil. Be sure all sides of sirloin are brown.
- 5. Take sirloin chunks out of the cast iron skillet and place in a large casserole that has a cover (or cover later with aluminum foil).
- 6. Add 2 cups of water to the hot pan and mix up the drippings.
- 7. Add potatoes, carrots, wine, onion mix, and drippings into the casserole dish and cover.
- 8. Roast at 280 degrees for 3 hours; then 1 hour at 350 degrees. You can play around with the degrees and time. This is just how I did it the first time I made it and it was amazing.

CONNIE'S PANTRY CASSEROLE
Ever had a pound of hamburger with no clue what you were going to do with it? That's how this recipe was born over thirty years ago. I'm pretty sure there are a lot of variations of this recipe out there. I add this one to the group. Easy, fun and creative, this dish is really good and comforting. Enjoy!

Steps:
- 1. Sauté onions.
- 2. Add ground meat to onions and brown.
- 3. Add garlic salt into meat mixture.
- 4. Drain cans of 2 veggies. I used corn and mushrooms but carrots, green beans, peas, etc. would work also.
- 5. Add veggies and can of diced tomatoes to meat mixture.
- 6. Add Worcestershire sauce and salt and pepper mixture to taste.
- 7. Remove mixture from skillet with a slotted spoon and place in a casserole dish.
- 8. Top mixture with mashed potatoes (home made or packaged works well).
- 9. Top with butter.
- 10. Bade in over at 350 degrees until mashed potatoes are brown; about 35 minutes.,
- 11. Enjoy!
CONNIE'S BEEF 'N BISCUIT CASSEROLE

Steps:
- Brown ground beef, onion, chilies in large frying pan. Drain.
- Stir in tomato sauce, chili powder and garlic salt. Simmer while preparing dough.
- Separate biscuit dough into 10 biscuits; pull each apart into two layers. Press 10 of the biscuit layers over bottom on ungreased 8 or 9 inch square baking dish. Combine 1/2 cup cheese (reserve remaining cheese for topping), sour cream, and egg. Mix well.
- Remove meat mixture from heat; stir in sour cream mixture. Spoon over dough. Arrange remaining biscuit layers on top. Sprinkle with cheese.
- Bake at 375 degrees for 25 to 30 minutes or until biscuits are deep golden brown.

COMFORTING BEEF CASSEROLE

- Heat 4 tablespoons of oil in a large saucepan or deep casserole, and fry the onions and carrots until they begin to soften, about 5 minutes.
- Remove the softened and oil-glossed vegetables to a bowl, and add the remaining oil to the pan. Put the flour into a large freezer bag along with salt and pepper, sage, and allspice; add the beef pieces to the bag, tossing in the flour, before searing the meat in the pan. Do this in batches, browning the meat a little and removing all of the beef to a large dish as you go.
- When all the meat is browned and out of the pan, whisk or stir in the orange juice and stout and let it come to the boil. Add the water and then return the meat and vegetables to the pan. Stir in the orange zest and bay leaves, bring to the boil and then turn the stew down to a soft simmer. Cover and cook for 2 1/2 hours. This is best reheated 1 or 2 days after, but if you are serving the stew on the same day, then add another half hour to the cooking time just to make sure the meat is soft, mellow and tender.
CONNIE'S ITALIAN CASSEROLE
This is a recipe that I put together out of necessity when I needed to serve a large family get together and it has become a family favorite. There are a lot of Italian Casserole recipes out there, but this is my version.

Steps:
- Pre-heat oven to 275 degrees.
- Brown beef, onion, bell pepper in olive oil, drain.
- Stir in spaghetti sauce and sugar, heat till bubbly.
- Combine Mozzarella cheese and sour cream, separately from sauce mixture.
- Pour sauce mixture into two ungreased 8x12 baking dishes.
- Spoon cheese-sour cream mixture over sauce mixture.
- Separate crescent roll dough into rectangles and lay out over cheese-sour cream mixture making sure to cover it completely.
- Brush melted butter over dough and sprinkle with Parmesan cheese.
- Bake at 375 degrees 25-30 minutes or until golden brown.
- This recipe makes enough for at least 24 people. If you don't need this much you may cut the recipe in half or freeze the leftovers. It is perfect to take to covered dish get togethers.

CONNIE'S TAMALE CASSEROLE
I've made this recipe for my family and our friends and they really liked it. Its very simple to make and warms them up on a cold day. The left overs are just as good if not better than the day you make it. Instead of using the canned tamales, I started using the fresh or frozen ones. That really makes the difference. The canned ones are a bit oily to use but you can use them. you will need to drain them and pat them dry first. We like the pork tamales but you can use either beef, or chicken. The pork just taste better to us.

- Place tamales (WITHOUT PAPERS) in a greased or sprayed 9 x 13" pan.
- In separate bowl combine the soup, Ro-Tel tomatoes and the green chilies,.
- stir until well blended.
- Pour over the tamales. Top with cheese, and the olives. Bake covered for 30 minute Then take cover off and let bake another 15 to 20 minute or until the cheese bubbles and gets a little brown on top.

GRANDMA'S GROUND BEEF CASSEROLE
As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix sour cream, cream cheese, and onion in a bowl.
- Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.
