- In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
- Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

- Mix first 3 ingredients together, and then spread on tortillas.
- Sprinkle remaining ingredients on the top.
- Roll the tortillas, and then wrap tightly in plastic wrap.

I take a platter of these to parties and potlucks and always come home with an empty plate! They are always a great hit.

Steps:
- Place softened cream cheese into mixing bowl. Stir with a wooden spoon to a thick creamy consistancy. If necessary, microwave 10 seconds at a time until it becomes "stir-able."
- Once softened, add chopped ingredients: green onion, jalepenos, olives and pimientos. Stir until well-blended. (*Adjust jalepenos to taste.)
- Divide mixture in half, and spread each half onto one tortilla. Roll tightly and wrap with Saran Wrap. Place in refrigerator overnight.
- Before serving, remove chilled rolled tortillas from refrigerator, unwrap and slice into 3/4" slices. Arrange on platter and serve. Oh-so pretty! And scrumptious to boot!
