Comforting Chicken & Rice Soup image

I do this one to use up leftover chicken. It's quick, easy, and makes a good hearty meal. We have along with chicken pot pie, which uses similar ingredients and is nearly as quick and easy.

1/4 lb diced cooked chicken meat
1 cup diced carrot
1 cup sliced celery
1 chicken bouillon cube
1/2 cup long grain rice
2 tablespoons cornstarch or 2 tablespoons flour
salt (to taste)
water (to desired consistency)
ground black pepper (to taste)

Steps:

  • Heat about 5 or 6 cups of water to a boil and add the carrot, celery, bouillon cube, and salt. Boil for about 5-10 minutes.
  • Add the chicken meat and rice. Also, if you have leftover chicken skin and fat from remaining meat, this adds a bit of flavor.
  • Periodically check rice for cooked texture. Once it is done or nearly done, slowly stir in the corn starch (or flour) to obtain a slightly thicker texture.
  • Add water or rice to desired quantity and texture. Adjust flavor with salt and pepper to desired. You can also add another bouillon cube for more flavor.

This soup is to die for! My friend Jan makes it for potlucks and I can never get enough. It is the best, yummiest, soup around. Good for those cold winter days and those times when you need comfort food. I don't even want to think about the calories....

1/2 cup uncooked wild rice (6-8 oz box)
1 -1 1/2 lb ground beef
14 1/2 ounces chicken broth
1 can cream of mushroom soup
2 cups half-and-half or 2 cups milk
1 1/2 cups shredded cheddar cheese
1/3 cup shredded carrot
1 package Hidden Valley® Original Ranch® Dressing (not the dip)
1 chopped onion (optional)

Steps:

  • Cook rice according to directions and brown the ground beef.
  • Put all ingredients into crockpot.
  • cook on high for 2-3 hours.
  • Enjoy.

My mom and grammie used to make this for me as a little girl. For me, there is no better comfort food. It really is more flavorful if you use bone-in pieces.

2 cups medium grain rice, uncooked
2 (10 ounce) cans cream of mushroom soup
40 ounces water (use the soup can to measure the water)
2 (1 1/4 ounce) packets dry onion soup mix
6 chicken pieces
black pepper

Steps:

  • Preheat oven to 350.
  • Grease 9 x 13 baking dish.
  • Place rice in dish. Combine soup, water and soup mix and pour over rice. Stir to loosely combine.
  • Place chicken on top and gently press down into liquid (does not need to be totally covered). Season with black pepper.
  • Cover and bake at 350° for about 1 hour, or until rice is tender and liquid absorbed.
  • Note: This is more flavorful if made with bone-in chicken. It can also be made with pork chops.
  • ***Decrease the water by 1 can if using long grain rice***.
