SEAFOOD PAELLA

4 tablespoons olive oil
1/2 pound chicken breast, boneless, skinless
1/4 cup diced onions
2 tablespoons chopped garlic
1/4 cup diced red and green peppers
1/4 cup diced celery
1 cup parboiled rice
2 cups chicken stock
1/2 tablespoon saffron
6 blue crabs, cleaned and halved
1 pound shrimp, peeled and de-veined
12 clams
12 mussels
1/2 pound smoked sausage, sliced into 1/4-inch pieces
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Heat the olive oil in a large pan on stovetop. Add the chicken breast to the oil and saute to a golden brown. Leave chicken in pan and add the onions, garlic, peppers and celery. Saute mixture for two minutes. Add the rice, chicken stock and saffron into the mixture and bring it to a boil. Finally, add the blue crabs, shrimp, clam, mussels, sausage, salt and pepper. Cover paella and lower heat. Let simmer for 20 to 25 minutes.

I looove paella...here's a nice one without seafood (gasp, but you can certainly add some if you like. I like to serve with Recipe #218310. Shrimp and/or smoked sausage also works really well.

1 medium onion, diced
1/2 cup olive oil
2 stalks lemongrass, crushed
2 cups jasmine rice or 2 cups arborio rice
2 teaspoons kosher salt
4 cups chicken broth
2 tablespoons chopped fresh garlic
2 tablespoons chopped gingerroot
2 large red bell peppers, seeded and diced
1/4 cup chopped green onion
1/2 cup water chestnut, diced
1 small pineapple, diced
1 large star fruit, sliced
1 medium papaya, diced
1 medium mango, diced
2 tablespoons rum

Steps:

  • Place rice in sieve and rinse under cold water until water runs clear.
  • Drain well.
  • In a saucepan heat the 1/4 cup olive oil and saute onion until softened.
  • Add the lemongrass, rice and salt, stir well.
  • Add broth, stir, cover and cook for 12-16 minutes over medium heat until rice is tender and the liquid is absorbed.
  • Remove and discard the lemongrass.
  • Saute garlic and ginger in remaining olive oil in a separate pan for about 4 to 5 minutes, until softened.
  • Add red bell pepper, water chestnuts, and fruits and saute lightly for 2 minutes until heated through.
  • Add rum and cook 1 minute.
  • Toss with rice mixture and serve.

  • In a large paella pan over medium heat, add the olive oil and the chorizo. Sauté for 5 minutes or until the chorizo is brown. Remove and set aside.
  • Rub the chicken pieces with paprika, salt and pepper and add to the paella pan. Sauté for 4 minutes on each side or until brown. Remove from the paella pan and set aside with the chorizo.
  • Add the onions and garlic to the paella pan and sauté for about 7 minutes or until translucent. Add the rice and stir to coat.
  • Add the chicken stock, stir and cook for about 15 minutes. Add the chicken pieces, chorizo and saffron, cook for about 10 more minutes.
