POVITICA 2 AUSTRIAN HOLIDAY BREAD



Povitica 2 Austrian Holiday Bread image

This is a traditional sweet Christmas bread made both in Austria and Poland. This is the Austrian version. I have posted the Polish version seperately as well ;-)

Yield 1 Very large spiral loaf

Number Of Ingredients 15

1 cup milk, scalded
1 1/2 cups sugar
1/4 lb butter, melted
1 1/2 cups water
2 packages yeast
1/2 cup water (warm)
3 eggs
9 cups flour, approximate
2 lbs ground walnuts
2 cups milk, scalded
1/4 cup butter
2 1/2 cups sugar
4 teaspoons cinnamon
4 teaspoons vanilla
3 beaten eggs

Steps:

  • Dissolve yeast in 1/2 cup warm water, then mix remaining ingredients as you would for bread with about 9 cups flour (Do not add the flour all at once; 9 cups is approximate, as with all bread many things including temperature and humidity effect how much flour you need. Use enough to make a smooth pliable nonsticky dough); knead well.
  • Let rise 2 hours.
  • Mix filling ingredients together while milk is still warm.
  • Spread or roll dough on table top, making sure you have no holes.
  • Spread filling on top.
  • Roll up, then coil as a snake.
  • Let rise 2 hours in large greased roaster.
  • Bake 2 hours at 350°F.

PANDEBONO (COLOMBIAN CHEESE BREAD)

Pandebono is delicious and simple. It's served for breakfast or a snack. Masarepa can be found in Latin stores and is also known as masa al instante and harina precocida. Common brands are Goya, Harina PAN, Areparina, and Harina Juana.

Number Of Ingredients 6

1 cup yellow cornmeal, precooked (This is called Masarepa, which is not recognized here, see description for more detail)
1/2 cup tapioca flour (cassava, yuca)
2 cups farmer's cheese, grated (or queso fresco)
2 eggs
2 teaspoons sugar
salt

Steps:

  • Preheat oven to 400 degrees.
  • Mix the two flours and the sugar in a bowl.
  • Stir in the grated cheese and the eggs. Mix well with a wooden spoon. Taste for salt, and add salt as needed. (Some farmer's cheeses are saltier than others).
  • Knead dough until smooth. If the dough seems too dry, add a few teaspoons of water.
  • Roll dough into balls that are slightly larger than golf balls. Or shape dough into small bagels. The rolls do not have to be perfectly smooth - they will puff up in the last several minutes of baking.
  • Place rolls on a greased cookie sheet and bake, about 20 minutes or until golden in color and puffed.
  • Serve warm.

2 (1/4 ounce) packages dry yeast
3/4 cup water, plus more
2 tablespoons sugar
3 1/2-4 1/2 cups flour, plus more
1/4 teaspoon salt
3 eggs
1/4 cup sesame seeds

Steps:

  • Combine yeast with water and pinch of sugar and set aside.
  • Combine flour, remaining sugar, salt and 2 eggs in large mixing bowl.
  • Add yeast mixture and mix well.
  • Dough will be moist and sticky.
  • Knead until dough is smooth, about 10 minutes, adding flour or water as needed.
  • Dough should still be moist.
  • Return to bowl, sprinkle dough with flour, cover with towel and let rise until doubled, about 1 hour.
  • Divide dough in half, place each half on lightly floured board and lightly knead into round loaves.
  • Place on greased baking sheet, leaving space between loaves, as they will rise and expand when baking.
  • Beat remaining egg.
  • Brush loaves with beaten egg and sprinkle with sesame seeds.
  • Bake at 350 degrees until golden brown and completely baked inside, 20 to 30 minutes.

As you've read my other recipes for me is important as the main dish as the dessert to finish a dinner. This recipe is ideal to accompany any of your lunches. I recommend you do not prepare for dinner and to consume at night can be a bit heavy.

6 bananas
1/4 lb sugar
1/2 lb cream cheese, grated
4 tablespoons butter
1/4 cup cream
1 egg
breadcrumbs

Steps:

  • Peel the bananas well and remove the fibers, cut bananas in half along without being completely cutted. Place them on a surface or a mold that could lead to the oven (pre-oiled).
  • Put inside every banana a tablespoon of sugar, plenty of grated cheese and a little melted butter.
  • Prepare a mixture with the cream, the remaining sugar and egg mixture. Cover with this mixture all the bananas and put a little bread crumbs on them. Take to the oven until golden brown.
  • Serve hot.

1 lb butter, softened
2 cups sugar
1 tablespoon vanilla
2 cups flour
1 cup cornmeal
1/4 teaspoon salt
2 tablespoons cornstarch
2 teaspoons baking powder
12 eggs
1 tablespoon lemon juice or 1/4 cup rum
1 cup raisins

Steps:

  • In a large mixing bowl, mix butter, sugar and vanilla until smooth and creamy.
  • In another bowl combine flour, corn meal, salt, cornstarch and baking powder.
  • Add dry ingredients and eggs to butter mixture, alternating 1/2 cup flour then 2 eggs, etc., mixing well with each addition until smooth and creamy.
  • Mix in lemon juice (or rum) and raisins.
  • Grease 2 (9 x 13-inch) pans or 1 (9 x 13-inch) and 2 (8 x 8-inch) square pans.
  • Pour batter into pans about 2/3 full. Bake at 325° for 60 minutes, until toothpick inserted in center comes out clean.
