COLD SALMON PASTA SALAD
A quick, easy and delicious way to serve leftover salmon. I could never find a recipe that used leftover salmon that I enjoyed until I tried this. It made a wonderful lunch the next day.

Steps:
- Cook pasta al dente and let cool.
- In a mixing bowl mix the salmon, black olives, onion and tomatoes together.
- Add the cooled pasta to the bowl and mix with the above ingredents.
- Take about 2 tablespoons of mayo and mix into the mixture. It should be coated, not creamy.
- Add salt, pepper, dill and tarragon to taste.
- Put mixture in the refridgerator for at least one hour to cool. Be sure to cover it.
- When you take it out of the fridge it may need a little mayo. That's o.k., just add to the mixture and serve.

- Cook the pasta following pack instructions. Meanwhile, heat the rapeseed oil in a frying pan, add the pepper, cover and leave for about 5 mins until it softens and starts to char a little. Stir, then push the pepper to one side and add the salmon. Cover and fry for 8-10 mins until just cooked.
- Meanwhile, mix the lemon zest and juice in a large bowl with the garlic, shallot, capers and olives.
- Add the cooked pepper and salmon to the bowl. Drain the pasta and add it too, with black pepper and the olive oil. Toss everything together, flaking the salmon as you do so. If eating now, toss through the rocket; if packing a lunch, leave to cool, then put in a container with the rocket on top and mix through just before eating.

- Place salmon, carrots, celery, shallots, fennel, leek, peppercorns, and wine in a fish poacher or large roasting pan and add enough water to cover. Place over medium heat and bring to a simmer; cook until salmon is firm to the touch and some of the fat begins to come to the surface of the fish, about 10 minutes.
- Remove pan from heat and let fish cool in liquid. Transfer to refrigerator until chilled, about 1 hour.
- Remove fish from pan and transfer to a serving platter. Serve with cucumber salad, honey mustard mayonnaise, and rye bread.

- Heat the broiler. Put fennel seeds in a small, self-sealing plastic bag, and crush with a rolling pin. Add parsley, brown sugar, 3/4 teaspoon salt, and 1 teaspoon pepper to the bag, and shake to mix.
- Press the mixture onto the skinless side of the salmon. Broil salmon, skin side down, until it is no longer red in the center, about 8 minutes.
- Flake the fish with a fork. Meanwhile, in a large pot of boiling salted water, cook pasta according to package instructions until al dente, about 13 minutes. Reserve about 1/2 cup cooking water, and drain pasta. Return it to the warm pot, add spinach, and toss.
- In a bowl, mix together sour cream, lemon juice to taste, 1/2 teaspoon salt, and 2 tablespoons pasta water.
- Put pasta on plates, top with salmon, and drizzle with the sour-cream mixture. Or simply toss pasta and spinach in the pot with the salmon and the sour-cream mixture, adding pasta water as needed, and serve.
SMOKED SALMON PASTA SALAD
Fusilli pasta is fancied up with delicious pieces of smoked salmon and cucumber, which can be made in no time! I like to spice mine up with a dash of cayenne pepper.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
- Bring a separate large pot of water to a boil. Add the broccoli and carrots, and cook in the boiling water until tender, 2 to 3 minutes; drain.
- Combine the olive oil, soy sauce, red wine vinegar, garlic, lemon juice, salt, and pepper in a sealable container; seal. Shake vigorously to make the dressing.
