2 ears fresh corn or 1 cup frozen corn, thawed
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can garbanzo beans, drained and rinsed
1 red bell pepper, cored, seeded, and cut into 1/2-inch pieces
1 mango, peeled, seeded, and cut into 1/2-inch pieces
2 limes, zested and juiced
2 tablespoons balsamic vinegar
1/2 cup chopped fresh basil leaves
1 teaspoon ground cumin
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Preheat a gas or charcoal grill. Peel back the corn husks. Remove the silks and replace the husks. Soak the corn in cold water for 30 minutes. Drain and place on the grill for 10 to 15 minutes. Cool completely and remove the husks. Using a sharp knife, remove the corn kernels. In a medium bowl, mix together the grilled corn, black beans, garbanzo beans, bell pepper, and mango.
  • For the vinaigrette: In a small bowl, combine the lime zest, lime juice, balsamic vinegar, basil, and cumin. Slowly add the oil, whisking constantly until the mixture thickens. Season with salt and pepper, to taste.
  • Pour the vinaigrette over the salad and toss well. Refrigerate for 1 hour, and toss again, before serving.

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Steps:

This summery salad makes a fine celebratory lunch or cold supper and makes great use of seasonal vegetables. Everything is dressed with a bright basil vinaigrette. A dab of aioli on the side is a welcome option, too. The hardest part here is steaming the lobsters, but don't worry. It's easy - and economical - to do it yourself. Still, if the idea doesn't appeal, many fishmongers sell steamed lobsters for an additional fee. Or you can buy prepared lobster meat, though that's a bit more expensive. If you decide to do that, you'll need at least one-third pound per person.

4 (1 1/2- to 2-pound) live lobsters
Kosher salt and black pepper
3 bay leaves, 1 teaspoon black peppercorns and 1 teaspoon allspice berries (optional)
1 or 2 small garlic cloves, roughly chopped
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil
1 loosely packed cup parsley leaves
1 cup green basil leaves, loosely packed, plus 1 small bunch green or purple basil, for garnish
1/2 pound cherry tomatoes, halved
1 pound small green beans (haricots verts), briefly cooked and cooled
1 1/2 pounds heirloom tomatoes, cut into thick slices
4 hard-boiled eggs, peeled, halved and lightly salted
1 pound new potatoes, cooked and cooled
Arugula or salad leaves, for garnish
Aioli, optional (see Note)

Steps:

  • In a large pot or in batches, so as not to crowd them, steam or boil the lobsters in seawater or heavily salted water. Add the bay leaf, peppercorns and allspice berries, if you wish. Depending on their size, cook the lobsters for 13 to 15 minutes. (Ask your fishmonger for recommended cooking time.) Let lobsters cool to room temperature on rimmed baking sheets.
  • Using lobster crackers, kitchen shears or a mallet, crack shells and remove meat. Place the claw meat and knuckle meat in a container. Slice tail meat 1/2-inch thick and add to the container. Cover and refrigerate until ready to use.
  • Make the vinaigrette: Add garlic, mustard, vinegar, olive oil, parsley and basil leaves to a blender jar or food processor. Whiz until slightly thickened. Season to taste with salt and pepper.
  • Put cherry tomatoes in a small bowl, season with salt and pepper and add 3 tablespoons vinaigrette. Toss to combine. To another small bowl, add green beans and 3 tablespoons vinaigrette. Toss to combine.
  • Arrange lobster meat in the center of a platter or divide among individual plates. Surround with tomato slices, and season lightly with salt and pepper. Spoon cherry tomatoes over the tomato slices. Scatter green beans artfully. Tuck eggs and potatoes here and there (or serve potatoes separately). Finish with arugula or salad leaves.
  • Drizzle remaining vinaigrette over everything. Garnish with the prettiest basil leaves. Serve aioli on the side, if using.

4 quarts water (see note)
1 tablespoon peppercorns
Salt to taste if desired
1/2 teaspoon dried thyme
2 bay leaves
1/4 teaspoon dried hot red pepper flakes
4 1 1/2-pound live lobsters
10 or 12 leaves fresh basil, rinsed and patted dry
1/2 cup olive oil
1/4 cup finely chopped shallots
2 tablespoons balsamic vinegar
Three-salad chiffonade (see recipe)

Steps:

  • Put the water, peppercorns, salt, thyme, bay leaves and pepper flakes in a kettle large enough to hold the lobsters. Cover and bring to a boil.
  • Add the lobsters quickly, one at a time, and cover. When the water returns to a boil, cook the lobsters for 10 minutes and drain thoroughly. When the lobsters are cool enough to handle, break off the tails and remove the meat from each in one piece. Crack the large claws and remove the meat from each in one piece. Remove the meat from the remaining claw shells. Put all the meat in a bowl.
  • Stack the basil leaves and cut them into fine shreds. There should be about 1/2 cup. Add to the bowl.
  • Put the olive oil, shallots, vinegar and salt in a small mixing bowl and toss to blend well.
  • To serve, cut each piece of tail meat on the bias into 1/2-inch-thick medallions. Reassemble the slices from one lobster tail on a plate. Arrange two of the large pieces of claw meat at the top of the tail meat to resemble a lobster shape. Spoon about a quarter of the sauce over the tail and claw meat. Scatter a quarter of the small pieces of lobster meat around. Garnish each side of the tail meat with a quarter of the recipe for three-salad chiffonade. Repeat with the remaining lobster meat and three-salad chiffonade.

Two 1 1/2-pound live lobsters
1 lemon, halved
For the Mayonnaise:
1 large egg yolk
1/4 clove garlic, finely minced
Salt
Juice of half a lemon
1/2 cup canola oil
1/2 cup good smooth "buttery" olive oil
2 tablespoons finely chopped fresh chervil or tarragon leaves (optional)

Steps:

  • Add water to a large pot to a depth of 2-3 inches. Be sure that the pot is big enough to accommodate a large colander. Bring the water to a boil over high heat.
  • Put the lobsters in the colander and place the colander inside the pot. Cover the pot and steam the lobsters for 15 minutes. Remove the colander with the lobsters and allow them to cool. Refrigerate the lobsters until fully chilled, about 2 hours.
  • For the mayonnaise: Whisk together the egg yolk, garlic, a pinch of salt, and half of the lemon juice in a medium bowl. Combine the oils in a measuring cup with a spout. Add the oil to the yolk about 1 teaspoon at a time, whisking constantly. The mixture will thicken and emulsify. After you have added about 1/4 cup of the oil, you can begin to slowly drizzle in the remaining oil as you continue to whisk until you have a thick, glossy mayonnaise. Season with salt and thin with a little lemon juice if you like. Transfer the mayonnaise into a serving bowl. Cover and refrigerate until ready to use. If using herbs, stir them into the mayonnaise just before serving.
  • Put the lobsters on a cutting board, belly side down. Using a large kitchen knife, cut each lobster in half lengthwise. Crack the claws and knuckles with a nutcracker or by thwacking the back of the knife against the shells.
  • Arrange each lobster on a plate, cut side up, and add a lemon half to each plate. Pass the mayonnaise at the table.

Steps:

  • Make the vinaigrette: In a small mixing bowl, whisk together the vinegar, garlic, tarragon, mustard, salt and pepper. Continue to whisk while slowly drizzling in the olive oil in a steady stream until the vinaigrette is emulsified.
  • Prepare the steamer basket: In a pot large enough to hold the lobster tails in a single layer, add 1 to 2 inches of water so that a steamer basket isn't submerged. Add about 1 tablespoon of salt to the water. Place the steamer basket into the pot. If you don't have a steamer basket, loosely scrunch some foil into balls and place them in the pot so they sit above the water level, giving the lobster tails a perch to rest on. Cover the pot and bring the water to a boil over high heat.
  • Prepare the grill: Preheat the grill for high direct heat. You want it at 500°F.
