COLD FIGHTING CHICKEN NOODLE SOUP
The most soothing, comforting, cozy soup for the flu season! Quick/easy to make, you'll be feeling better in no time!

Steps:
- Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in garlic, ginger, lemongrass, thyme and rosemary until fragrant, about 1-2 minutes. Whisk in chicken stock, bay leaves and 1 cup water; bring to a boil. Add chicken; reduce heat and simmer. Cook, covered, until the chicken is cooked through, about 10-12 minutes. Remove chicken and shred, using two forks; set aside. Stir in pasta and cook until tender, about 8-10 minutes. Stir in chicken and lemon juice; season with salt and pepper, to taste. Serve immediately, garnished with chives, if desired.

Steps:
- Season chicken liberally with onion powder, garlic powder, chili powder, basil, and oregano. Place in Instant Pot with 1/2 cup broth or water.
- Set pressure cooker to "Manual," High Pressure, 20 minutes.
- Once the pressure cooking time has finished, carefully turn the valve from "sealing" to "venting" to quickly release the pressure. Beware of the steam!
- Place the chicken onto a plate or cutting board and let it cool. Shred with 2 forks once cool. Set aside for later. (Steps 1-4 can be done well ahead of time).
- Set pressure cooker to "Saute," normal heat.
- Add olive oil to your pressure cooker insert, add carrots, celery, and onion. Saute for 10-12 minutes.
- Add garlic and saute for another 1-2 minutes.
- Add bay leaves and broth, secure pressure cooker lid, and set to "Manual," high pressure, for 3 mins, do a quick pressure release. Stir.
- Add noodles, secure pressure cooker lid, and set to "Manual," high pressure, for 4 mins (or half the recommended time for your pasta).
- Again do a quick pressure release.
- Stir in shredded chicken and lemon juice, season with salt and pepper as needed.
- Serve with fresh bread or rolls.

COLD-BLASTING CHICKEN NOODLE SOUP
This is the favorite soup at our house whenever anyone has a cold. We invented it over time, adding more spices as we went! The combination of the garlic, onion, ginger, chili pepper and cilantro really seems to give the immune system a boost. (But if you don't like one of these ingredients -- or don't have it on hand -- just leave it out; the soup will still taste good!) I prefer using leftover roast chicken for this recipe, but you can also use uncooked chicken -- just let it simmer in the broth until it cooks. And note: if you don't have lemon pepper, just use plain black pepper.

Steps:
- Heat the chicken broth with the bay leaf until broth boils.
- Add pasta; return broth to boil.
- Add chicken and lemon pepper; return broth to boil.
- Let mixture cook until pasta is done, about 10 minutes (if you're using uncooked chicken, test the chicken for doneness-- but it should be cooked by the time the pasta is done).
- Add ginger, garlic and onion; cook a few more minutes until onion pieces start to turn translucent.
- Stir in cilantro and chili; cook one more minute, then serve.

- Heat the olive oil in a large dutch oven or stockpot over medium-high heat. Add onions and saute for 3 minutes or until they soften. Add the carrots and celery and continue to cook and stir for another 3-4 minutes. Add the garlic and let cook for 30 seconds before seasoning with the bay leaves, turmeric, adobo seasoning, Mrs. Dash's, and dried thyme. Pour in the chicken broth and let the soup reach a simmer.
- When the soup is simmering, lower the heat to medium and add in the egg noodles. Cook the noodles for 2 minutes less than the package directions. You want them to be al-dente. Stir in the chicken and let it heat all the way through. You can add a little more broth or water at this time if you prefer your soup soupier.
- Turn the heat off, discard the bay leaves. Stir in the lemon zest, lemon juice, and parsley. Taste the soup and adjust salt and pepper to taste. Serve warm.
