Cola Cake With Broiled Peanut Butter Frosting Food

COCA-COLA CAKE WITH BROILED PEANUT FROSTING

Steps:

• Preheat oven to 350 degrees and spray a 9x13-inch baking pan with baking spray.
• In a large bowl, whisk together flour and sugar.
• In a medium bowl, whisk together melted butter, cocoa powder, and Coke. Pour into bowl with flour and stir until mixed well.
• Add buttermilk, eggs, baking soda, and vanilla and mix well.
• Stir in mini marshmallows and pour into prepared pan. Bake for 35 to 40 minutes. Let cake cool for 10 minutes before frosting.
• To make frosting, beat butter, brown sugar, and peanut butter with an electric mixer until blended.
• Beat in the milk and then stir in the peanuts. Spread frosting on cake.
• Place cake under the broiler for a minute or two, or until the frosting just starts to get browned.

• Remove the cake from the oven and frost while still barely warm.

• Place the frosted cake under the broiler about 4 inches from the heat source.
• Broil just a few seconds, or until topping starts to bubble.
• WATCH COMSTANTLY, being careful not to scorch the frosting.

• To make the frosting in a bowl cream butter, sugar and peanut butter

• fold in the peanuts.
• spread over the cake place under broiler for a few seconds or until icing starts to bubble.

Pour over flour and sugar mixture, and stir until well blended. Add buttermilk, beaten eggs, soda, and vanilla. Mix well. Stir in marshmallows. Pour into prepared pan. Bake 40 minutes. Remove cake from oven and frost while still warm. Frosting: Cream butter, sugar, and peanut butter. Add milk and stir well. Add nuts. Spread over warm cake. Place frosted cake under broiler about 4-inches from heat source. Broil just a few seconds, or until topping starts to bubble. DO NOT scorch! Let cool at least 30 minutes before serving.
