The secret to this rib roast from the Taste of Home Test Kitchen is in the coffee rub. Allowing the rub to penetrate overnight heightens the flavor.

1 tablespoon finely ground coffee
2 teaspoons chili powder
1 teaspoon onion powder
1 teaspoon coarsely ground pepper
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 beef ribeye roast (4 to 5 pounds)
2 tablespoons olive oil
2 cups soaked wood chips, optional

Steps:

  • In a small bowl, combine the first 9 ingredients. Tie the roast at 1-1/2- to 2-in. intervals with kitchen string. Rub seasonings over roast; cover and refrigerate for 8 hours or overnight. , Remove roast from refrigerator 1 hour before grilling; brush with oil. , Prepare grill for indirect heat, using a drip pan, adding half the wood chips if desired. Place roast over drip pan and grill, covered, over medium-low indirect heat for 2 to 2-1/2 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), adding remaining wood chips after 1 hour. Let stand for 10-15 minutes before slicing.

And oh my gosh, it's so crazy easy to prepare. Which clearly means it's perfect for holiday cooking and entertaining.

1 prime rib roast* (3 to 4 rib)
2 tablespoons coffee grounds
4 tablespoons brown sugar
2 teaspoons smoked paprika
3/4 teaspoon chili powder
3/4 teaspoon ginger
1/4 vanilla bean (seeds scraped)
1 tablespoon black pepper
1 1/2 teaspoons to 2 coarse salt
2-3 cups chopped root vegetables (I used potatoes (brussels + carrots))
1 onion (quartered)
2 heads garlic (tips sliced off)
6 tablespoons unsalted butter (softened)
4 ounces gorgonzola cheese (crumbled)
1 teaspoon worchestire sauce
salt and pepper (to taste)
4-6 cloves roasted garlic (from the 2 heads above)

Steps:

  • In a bowl, combine the coffee grounds, brown sugar, smoked paprika, chili powder, ginger, vanilla bean seeds, salt and black pepper. Rub spice mixture all over the beef, coating evenly. Add the chopped root vegetables, onion and garlic to a roasting pan. Place beef on top of the vegetables and allow it to come to room temperature. Ether leave on the counter for 30 minutes, or refrigerate covered, overnight or up to 1 day. About 3 hours before you plan to cook the beef, remove it from the refrigerator.
  • Meanwhile, preheat the oven to 450 degrees F.
  • Cook beef for 30 minutes, then reduce the temperature to 350 degrees and continue roasting until an instant-read thermometer inserted into meat (away from bone) registers 115 to 120 degrees (for rare) or 125 degrees for medium rare, about 1 hour to 1 hour 15 minutes longer. Let rest 20 minutes.
  • While the meat is resting, grab the roasted garlic and mash finely with a fork. Combine the mashed garlic, butter, gorgonzola cheese, worchestire sauce, salt and pepper in a bowl. Taste and adjust salt and pepper as needed.
  • Slice meat away from ribs, cutting along the bones. Then, slice meat crosswise to desired thickness. Serve with the gorgonzola butter.

1/4 cup finely ground dark coffee
1 Tbsp. pink Himalayan salt
1 Tbsp. ground pepper
1 tsp. mustard powder
1 tsp. chili powder
1/2 tsp. cumin
1 Tbsp. sugar
1 cup sour cream
1/4 cup prepared horseradish
1 Tbsp. dijon mustard
1 tsp. white wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. Worcestershire sauce

Steps:

  • Preheat oven to 450 degrees F.
  • Combine coffee rub ingredients into a small bowl and mix together.
  • Rub the spice mixture heavily, all over the entire prime rib.
  • Place prime rib into a small roasting pan onto a roasting rack. You don't want the prime rib sitting directly on the bottom of the pan.
  • Place prime rib into the oven and cook at 450 degrees for 30 minutes.
  • Combine the horseradish ingredients in a small bowl, stirring to combine, and place in the refrigerator until time to serve.
  • Reduce heat down to 325 degrees F. after 30 minutes, then cook for the remaining time as per the package directions (usually about 15 min. per pound)
  • Using a meat thermometer, check the internal temperature to ensure it's cooked to the level you prefer. Typically medium rare = 130-135 degrees, medium = 135-140 degrees, medium well 140-150 degrees and well done 155+ degrees.
  • Once the temperature has reached the desired level, remove prime rib from oven and let rest for 20-30 minutes. NOTE: the internal temperature will typically rise about 5 degrees as it rests, so keep that in mind when checking the temperature.
  • Slice and serve with homemade horseradish sauce.

4 cups brewed French roast coffee
1/2 cup kosher salt
One 3-bone standing rib roast, about 6 pounds
1/4 cup plain breadcrumbs
1/4 cup ground French roast coffee or espresso
1/4 cup dark brown sugar
2 tablespoons chopped fresh Italian parsley
1 1/2 teaspoons ground sage
1 1/2 teaspoons hot Hungarian paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons kosher salt
1/2 teaspoon ground white pepper
Freshly ground black pepper
12 ounces coffee beer
Sunny's 1-2-3 Horseradish Sauce, recipe follows
1 cup sour cream
3 heaping tablespoons prepared horseradish
2 shakes Worcestershire sauce

Steps:

  • For the brine: In a large bowl, add the coffee, salt and 4 cups warm water and stir to dissolve the salt. Add the rib roast. (If the liquid does not cover the meat completely, either make sure to flip the roast halfway through brining, or transfer the brine to a large turkey bag, add the rib roast and then seal tightly so the roast is completely surrounded by the brine.) Brine, refrigerated, at least 8 hours and up to 12.
  • For the rub: In a small bowl, mix together the breadcrumbs, ground coffee, brown sugar, parsley, sage, paprika, garlic powder, salt, white pepper and a nice grind or two of black pepper.
  • Remove the roast from the brine and pat it as dry as possible with a paper towel (discard the brining liquid). Using your hands, coat the roast on all sides with the rub, gently massaging it into the flesh. Let rest on the counter to come to room temperature, about 2 hours.
  • For grilling and serving: Place a drip pan under the grates on a grill and pour in the beer. Heat the grill to medium high (300 to 400 degrees F).
  • Place the roast bone-side down directly on the grill over the drip pan on indirect heat. Close the grill and cook until medium rare (120 degrees F), about 1 hour and 40 minutes. Remove from the grill and cover with aluminum foil to rest for a real 20 minutes.
  • Slice between the ribs and serve, or cut the meat off the ribs in a chunk and slice from there. Serve with Sunny's 1-2-3 Horseradish Sauce.
  • In a small bowl, mix the sour cream, horseradish and Worcestershire. Refrigerate until ready to serve.

4 cups warm water
1/2 cup kosher salt
4 cups brewed French roast coffee
1 standing rib roast, 3-bones, about 6 pounds
1/4 cup dark brown sugar
1 1/2 teaspoons ground sage
1 1/2 teaspoons Hungarian paprika
2 tablespoons chopped fresh parsley
1 1/2 teaspoons garlic powder
1/2 teaspoon ground white pepper
1/4 cup plain bread crumbs
1/4 cup freshly ground French roast coffee, or espresso
1 1/2 teaspoons kosher salt
Freshly ground black pepper

Steps:

  • For the brine: In a large bowl, add the water, salt, and coffee. Stir to dissolve the salt and add the rib roast. If the liquid does not cover all of the meat, flip the roast halfway through the marinating time. Or, consider pouring the marinade into a large plastic bag, adding the rib roast, and then sealing tightly so that the roast is completely surrounded by the brine. Refrigerate for 8 hours or overnight.
  • Preheat the oven to 325 degrees F.
  • For the rub: In a small bowl, mix together the brown sugar, sage, paprika, parsley, garlic powder, white pepper, bread crumbs, coffee grounds, salt, and a nice grind or two of freshly ground black pepper.
  • Remove the roast from the refrigerator and discard the brining liquid. Pat the roast dry with a paper towel. Using your hands, coat the roast on all sides with the rub, gently massaging it into the flesh. Let it rest on the counter to come to room temperature, about 1 hour.
  • Place in a roasting pan and put it in the oven. Cook until medium-rare, 125 degrees F, about 1 hour and 40 minutes. Remove from the oven and cover lightly with aluminum foil while the meat rests, 15 minutes. Slice between the ribs and serve.

2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.
