Provided by Mary Berry

Categories     Cakes and baking

Yield Serves 6-8

Number Of Ingredients 12

100g/3½oz unsalted butter, softened, plus extra for greasing
100g/3½oz caster sugar
2 large free-range eggs
100g/3½oz self-raising flour
1 level tsp baking powder
50g/1¾oz chopped walnuts
1 tbsp coffee essence
75g/2¾oz unsalted butter, softened
225g/8oz icing sugar, sifted
2 tsp milk
2 tsp coffee essence
8 walnut halves, to decorate

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Lightly butter two loose-bottomed 18cm/7in sandwich tins and line the bases with baking paper.
  • Put the butter, sugar, eggs, flour, baking powder, walnuts and coffee essence in a large mixing bowl and beat together (using an electric hand whisk if you have one) until well combined and smooth.
  • Divide the mixture evenly between the tins. Level the surface using a spatula or the back of a spoon.
  • Bake for 20-25 minutes, or until an inserted skewer comes out clean. Leave the cakes to cool in the tins for 5 minutes, then run a small palette knife or rounded butter knife around the edge of the tins and carefully turn the cakes out onto a wire rack. Peel off the paper and leave to cool completely.
  • For the filling and topping, beat the butter and gradually add the icing sugar. Add the milk and coffee essence and beat until smooth.
  • Choose the cake with the best top, then put the other cake top-down onto a serving plate and spread with half the coffee icing. Sandwich together with the other half. Ice the top of the cake and decorate with the walnut pieces to serve.

This is a really deep luxurious coffee cake - very impressive and delicious

Provided by bretnolan

Categories     Desserts

Time 1h30m

Yield 8

Number Of Ingredients 9

225 grams very soft butter plus more for the tins
225 grams ligh muscovado sugar or caster sugar
225 grams Self raising flour
1 tsp Baking powder
4 large eggs
4 tsp instant coffee, level dissolved in 1 tbsp boiling water
175 grams soft butter
350 grams icing sugar
4 tsp instant coffee dissolved in 1 tbsp boiling water

Steps:

  • Preheat the oven to 180C/160C fan/350F/315F fan/Gas 4. Butter and line the base of two deep 20cm (8in) sandwich cake tins. Measure all the cake ingredients, except the coffee, into a large mixing bowl and beat together until smooth. Stir in the dissolved coffee until thoroughly blended. Divide the mixture evenly between the two prepared tins and level the tops. Bake in the preheated oven for about 25-30 minutes until golden brown, shrinking away from the sides of the tin and the sponge springs back when lightly pressed. To make the icing, mix the butter and sugar together in a mixing bowl and beat together until smooth. Beat in the dissolved coffee and divide into four. When they are cold, slice each cake horizontally in half, giving four layers of cake. Sit one base on a cake stand and spread with a quarter of the mixture. Continue layering up with cake and icing so you finish with icing on top and swirl to give an attractive finish. The cake can be made and iced up to two days ahead, kept covered in the fridge. Iced or un-iced, it freezes well.

COFFEE CAKE

Coffee cake image

Whip up a classic coffee cake with ease. You can freeze the sponges if you want to save time later on. Ideal for a bake sale, birthday party or coffee morning

Provided by sianie

Categories     Afternoon tea, Dessert, Treat

Time 50m

Number Of Ingredients 10

170g butter or margarine, plus extra for the tins
170g caster sugar
3 large eggs
170g self-raising flour
1 tbsp cooled instant coffee, dissolved in 1 tbsp hot water (add more if you like it stronger)
225g icing sugar
100g butter or margarine
1½ tbsp instant coffee, dissolved in 1 tbsp hot water
strawberry jam (optional)
walnuts or cherries, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan. Line and butter two 18cm sandwich tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
  • Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp of flour each time. (Make sure you don't use all the flour.) When the eggs have been fully combined into the mix, add the rest of the flour and fold it in gently.
  • Add the dissolved coffee to the mixture, still folding. Divide into the sandwich tins and cook for 25-30 min until risen and firm and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Can be frozen at this stage.
  • Meanwhile, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk, then cover and set aside until ready to ice the cake.
  • Spread half the icing on the bottom of one sponge and spread the strawberry jam on the bottom of the other, if using. Sandwich together, then spread the remaining icing on top. Decorate with walnuts or cherries, if you like.

Steps:

  • Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
  • Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
  • Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
  • Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
  • Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
  • Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
  • Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.
