EXTRA CAFFEINATED BROWNIES

Extra Caffeinated Brownies image

These brownies are both cake-like and fudgy with that extra kick that coffee lovers will drool over. Extras that would go great with these morsels include chunked chocolate mixed in or toffee crumbles on top.

Time 1h45m

Yield 16

Number Of Ingredients 9

8 cups strong black coffee
1 ½ cups white sugar
½ cup butter, melted
2 eggs
1 teaspoon vanilla extract
½ cup unsweetened cocoa powder
¾ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Bring coffee to a simmer in a saucepan over medium-low heat and reduce to 2/3 cup of a thick coffee concentrate, stirring constantly to avoid burning, about 30 minutes. Set aside and let cool to room temperature.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking pan.
  • Stir sugar and melted butter together in a bowl until smooth; beat in eggs, followed by vanilla extract. Stir the coffee concentrate and cocoa powder into the wet ingredients until no lumps remain. Whisk flour, salt, and baking powder together until thoroughly combined in a separate bowl; stir flour mixture into wet ingredients to make a smooth batter. Spread batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the brownies comes out with moist crumbs, 30 to 35 minutes. Let cool and cut into bars.

  • Cream the butter and the sugar. Add the espresso powder and mix until combined. Add eggs and mix until combined. Add the flour and cocoa powder and stir to combine. Add a pinch of sea salt and/or a handful of chocolate chips if you’re feeling ambitious.
  • Transfer to a 9×13 baking pan lined with parchment paper. Bake for 30 minutes or until set in the middle (I usually like to underbake mine so 30 minutes is just about right for that – if you want more chewy brownies, go for 35-40). Eat and be happy!
