1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon brown sugar

  • Whisk espresso powder, onion powder, paprika, brown sugar, black pepper, salt, and chili powder together in a bowl.

My dad-a big steak lover-got this recipe form a friend, and now we never eat steak without using this marinade. It makes the meat so juicy and adds a great flavor.

2 tablespoons sesame seeds
6 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
1 cup strong brewed coffee
1 cup soy sauce
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 pounds beef top sirloin steak (1 inch thick)

Steps:

  • In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture. , Pour half into a shallow dish; add steak and turn to coat. Cover and refrigerate for 8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Warm reserved marinade; serve with steak.

Since coming to America I have been introduced to some pretty wicked flavors. But none speak more truthful to the US of A like BBQ. Personally, I don't usually do a lot to a steak, salt and pepper is all that is needed, but sometimes I get inspired but things such as a dry rub and when it comes to the bitterness of coffee you will see exactly what I mean.

1 tablespoon coffee, ground
1 tablespoon paprika
1 teaspoon cayenne pepper
good pinch salt
6 tablespoons olive oil
1 bone-in rib eye steak, 1 1/2-inches thick
1 garlic clove
2 tablespoons butter
2 fresh thyme sprigs
1 pinch pepper
2 cups Brussels sprouts, halved
3 sweet potatoes, peeled and cut into chips or wedges

Steps:

  • Preheat oven to 390 degrees F.
  • Spread out Brussel sprouts onto a baking tray, do the same for the sweet potatoes. Drizzle each with 2 Tbsp of olive oil and season with salt and pepper. Roast for 15-25 minutes or until golden (you can turn or shake ever 7 minutes to get even color).
  • 20 minutes prior to cooking bring your steak out of the fridge and cover all over with the coffee rub. Season both sides with salt and allow to come to room temperature.
  • Add 2 Tbsp oil to a searing hot pan (preferably cast iron) and add your steak, it will be a seriously winning sizzle. Cook steak on each side for 45 seconds, add in your butter, garlic and thyme then turn every 15 seconds for a further 3-4 minutes basting the butter over the steak.
  • If pan is oven proof pop in the oven, or transfer to a roasting tray, and cook for 5 minutes (Each steak is different, but for medium rare you want it to be soft but spring back once touched in the center).
  • Remove from the oven and allow to rest for 6-8 minutes before slicing.
  • Serve with your favorite sides (mine are Sweet Potato Fries and Roasted Balsamic.
  • Brussels Sprouts).

1/4 cup ancho chili powder
1/4 cup finely ground espresso
2 tablespoons Spanish paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon ground coriander
1 tablespoon dried oregano
2 teaspoons ground ginger
2 teaspoons chili de arbol powder
2 bone-in or boneless rib-eye steaks, 2-inches thick, approximately 1 1/2 pounds each
Canola or olive oil
Salt and coarsely ground black pepper

Steps:

  • Combine all spices in a bowl.
  • Preheat oven to 425 degrees F.
  • Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 tablespoons of the coffee rub onto 1 side of each steak. Cook the steak, rub side down until golden brown, about 3 to 4 minutes. Flip the steak over, cook for 2 minutes and then transfer to a baking sheet and cook in the oven to medium-rare doneness, about 8 to 10 minutes. Remove and let rest 5 minutes before slicing.

Just like the Coffee Cured Filet from Stoney River. Sounded weird when I first heard of it, but after tasting it, it tastes nothing like coffee and is an unbelievably flavorful steak. A staple in our household since perfecting the recipe!

4 beef tenderloin, filet
2 1/2 cups strong espresso or 2 1/2 cups darkest roast non-flavored coffee
1/4 cup olive oil
1/4 cup molasses (Regular Strength)
1 tablespoon brown sugar
1 1/2 tablespoons kosher salt (or Sea Salt)
1 teaspoon cumin
1/2 cup ice

Steps:

  • Place all the liquid and dry ingredients into a large bowl or zip-lock bag and mix until dissolved.
  • (HINT: Measure the olive oil first and then the molasses, it will slide right out of the measuring cup if you do the oil first).
  • Add ice to cool the mixture.
  • Add the filets and marinate at least 6 hours for best results. I like to mix them up and flip the meat every couple of hours, but not required.
  • When ready to cook the steaks, heat an iron skillet or griddle as hot as you can get it and sear the outside of the steaks for a minute or two until dark and crisp on the outside, then place on the grill to cook to your wellness liking the rest of the time.
  • (HINT: I recommend searing the steaks outside on a grill side burner if possible. It makes a mess of your cooktop inside otherwise.).

¼ cup finely ground espresso beans
3 tablespoons brown sugar
2 teaspoons ground cinnamon
1 pinch ground cayenne pepper
salt and ground black pepper to taste
2 (6 ounce) beef tenderloin steaks
1 tablespoon canola oil

Steps:

  • Sift ground espresso beans, brown sugar, cinnamon, cayenne pepper, salt, and black pepper together in a bowl. Generously coat all sides of each steak with espresso mixture. Place steaks on a plate and refrigerate for flavors to blend, about 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a large oven-proof skillet over medium-high heat; add canola oil. Place steaks in the hot oil and cook until bottom of each steak is browned, 1 1/2 to 2 minutes. Flip steaks and place skillet in the preheated oven.
  • Cook the steaks in the preheated oven to your desired degree of doneness, 4 to 5 minutes for medium-rare. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Cover skillet with a tented piece of aluminum foil and let steaks rest for at least 5 minutes.

  • Season steaks with salt, then coat with 5 tsp. spice rub per steak (save any extra rub for your next steak). Place on a wire rack set inside a rimmed baking sheet and chill uncovered 3–6 hours.
  • Let steaks sit 1 hour to come to room temperature, which will help them cook quickly and more evenly.
  • Preheat oven to 400°. Heat oil in a large skillet over medium-high. Cook steaks 2 minutes or so on each side to create a nice crust. Transfer skillet to oven; cook steaks until an instant-read thermometer inserted into the thickest part registers 120° for medium-rare, about 5 minutes. Transfer steaks to a cutting board; let rest 10 minutes. Slice ½" thick.
