EASY COFFEE PUDDING



Easy Coffee Pudding image

2 tablespoons cornstarch
2 tablespoons sugar
1 teaspoon ground cinnamon
Pinch salt
2 cups whole milk
1 tablespoon instant espresso powder
1 teaspoon vanilla extract

Steps:

  • Whisk the cornstarch, sugar, cinnamon and salt in a 2-quart heavy saucepan. Gradually whisk in the milk. Boil the mixture over medium-high heat, whisking constantly, about 2 minutes. The mixture will be thick when done. Remove the saucepan from the heat. Whisk in the espresso and vanilla until smooth.
  • Transfer the mixture to a bowl and cover with plastic wrap. Chill the bowl in the fridge until cold, at least 2 hours. Serve the pudding chilled.

24 chocolate sandwich cookies
4 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
4 large egg yolks
6 1/2 ounces bittersweet chocolate, broken into pieces
2 tablespoons salted butter
2 teaspoons vanilla extract
1 cup whipped cream, for topping

Steps:

  • For the crumb base: Throw the cookies and melted butter into a food processor and pulverize. Spoon some into the bottom of the serving glasses and set aside.
  • For the pudding: Combine the sugar, cornstarch and salt in a medium saucepan. Stir or whisk together. Pour in the milk and egg yolks and whisk together. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes (maybe less, maybe more; just watch it!). The second it starts to bubble and thicken (note: it should be thick like pudding!), remove it from the heat. Add the chocolate, butter and vanilla and stir until everything is beautifully combined.
  • Pour the pudding into the glasses on top of the crumb base. Serve warm or chill in the fridge for 2 hours. Top with whipped cream!

3/4 cup boiling water
2 teaspoons instant coffee granules
3/4 cup 2% evaporated milk
1 cup all-purpose flour
1/2 cup granulated sugar
1/3 cup cocoa powder
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons melted butter
1/4 cup granulated sugar
2 tablespoons cocoa powder

Steps:

  • Combine water& coffee until dissolved.
  • Stir in milk& set aside.
  • Combine flour, sugar, cocoa, baking powder& salt in a bowl; stir in butter& half the coffee mixture until smooth.
  • Spoon into lightly greased 8-cup (2 litre) ovenproof dish, smoothing top.
  • Combine sauce ingredients in a small bowl; sprinkle over batter.
  • Pour remaining coffee mixture over top but do not stir.
  • Bake in preheated 350F oven for 30 minutes or until sauce bubbles& cake is firm to the touch.
  • Serve hot- with ice cream, frozen yoghurt or whipping cream (optional).

  • Mix cocoa powder, brown sugar, and instant coffee powder together in a bowl; stir until no lumps remain. Fold chia seeds into the mixture. Pour milk into the bowl and stir to incorporate; let the mixture sit a few minutes before stirring again. Repeat resting and stirring a few times over the course of 20 minutes.

To give an idea of how old this recipe is, it was translated from her German script found in an old ledger when she'd collected favorite recipes from her friends. It's a bona fide and delicious "antique". The only modern touch that I've added to it is the option of using decaffeinated coffee.

Slather leftover hot cross buns with chocolate spread and drench in homemade chocolate custard to transform them into a twist on bread and butter pudding

300ml double cream
300ml whole milk
200g dark chocolate, roughly chopped
1 tbsp cocoa powder
4 tbsp caster sugar
1 tsp vanilla extract
6 hot cross buns
6 tsp chocolate spread
6 eggs
vanilla ice cream, to serve (optional)

Steps:

  • Put the cream, milk, 100g of the dark chocolate, the cocoa powder, sugar, vanilla and a pinch of salt in a saucepan over a low-medium heat and whisk until the mixture is smooth and fully combined. Pour into a large bowl to cool slightly.
  • Meanwhile, split the hot cross buns and spoon 1 tsp chocolate spread over the base of each, then sandwich with the bun tops. Arrange the buns in a 5cm-deep, 30 x 20cm baking dish in a single layer, then sprinkle over the rest of the chopped dark chocolate.
  • When the chocolate cream mixture has cooled to room temperature, whisk in the eggs. Slowly pour this custard over the hot cross buns, then cover and chill for 1 hr until some of the custard has been absorbed by the buns.
  • Heat the oven to 180C/160C fan/gas 4. Bake for 40-45 mins until the top is golden and the custard is gently set. Leave to stand for 5 mins, then serve with ice cream, if you like.

1/4 cup cornstarch
3 tablespoons unsweetened cocoa powder
1 tablespoon instant coffee
1 dash salt
2 cups non-fat soymilk
2 ounces bittersweet chocolate, chopped
1 teaspoon vanilla

Steps:

  • In a saucepan, mix brown sugar, cornstarch, cocoa powder, coffee and salt. Add slowly soy milk and bring to boil at medium heat.
  • Reduce heat and let simmer for 1 minute or until thicken. Remove saucepan from the heat. Add chocolate and stir until melted. Add vanilla and stir.
  • Spread pudding in 4 individual serving dishes. Cover the surface with plastic wrap and put in the fridge for at least 4 hours.
