4 cod fillets (4 ounces each )
1 pound fresh thin asparagus, trimmed
1 pint cherry tomatoes, halved
2 tablespoons lemon juice
1-1/2 teaspoons grated lemon zest
1/4 cup grated Romano cheese

Steps:

  • Preheat oven to 375°. Place cod and asparagus in a 15x10x1-in. baking pan brushed with oil. Add tomatoes, cut sides down. Brush fish with lemon juice; sprinkle with lemon zest. Sprinkle fish and vegetables with Romano cheese. Bake until fish just begins to flake easily with a fork, about 12 minutes., Remove pan from oven; preheat broiler. Broil cod mixture 3-4 in. from heat until vegetables are lightly browned, 2-3 minutes.

30-Minute Cod with Lemony Braised Fennel image

You'll almost want to eat by candlelight: This quick cod dish takes only 30 minutes to make, it's nothing if not elegant. Save time by juicing the lemon and slicing the olives while the cod and fennel cook.

2 large bulbs fennel
1/4 cup plus 2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Four 6-ounce cod fillets, each 1 to 1 1/2 inches thick
1 lemon
1/2 cup panko breadcrumbs
1/2 cup pitted kalamata olives

Steps:

  • Trim the tops and bottoms from the fennel bulbs, reserving a handful of the fronds for garnish. Quarter the bulbs. Set each quarter on its side and slice off most of the core. Cut the quarters into wedges about 1-inch thick (don't worry if some pieces fall off the wedge-use those too).
  • Put 1/4 cup oil in a large skillet with a tight-fitting lid. Place over medium-high heat until almost smoking. Add the fennel and cook without stirring until fennel is brown on the bottom, about 5 minutes. Stir and let the fennel continue to cook until some more pieces brown, 1 to 2 minutes.
  • Add 1/2 cup water to the skillet, scraping up any browned bits from the bottom. Sprinkle with 1/2 teaspoon of salt and several grinds of pepper. Lower the heat to medium, cover the skillet, and cook 5 minutes.
  • Sprinkle the cod with salt and pepper and place on top of the fennel. Cover the pan again and simmer, adding more liquid occasionally if the pan is dry, until the fennel is very tender and the cod is cooked through, 5 to 7 minutes.
  • Meanwhile, chop the reserved fennel fronds (you should have about 1 1/2 to 2 tablespoons) and remove the zest from the lemon. Heat the remaining 2 tablespoons of oil in a medium skillet over medium-high heat. Add the breadcrumbs and cook, stirring frequently, until the breadcrumbs brown, 2 to 3 minutes. Remove from the heat, season with salt and pepper, and allow to cool. Mix the fennel fronds and lemon zest into the breadcrumbs until combined.
  • Juice the lemon. Roughly chop the olives.
  • When the cod and fennel are done, stir in the lemon juice and the olives. Remove from the heat and let stand for about 1 minute to warm the olives. Transfer the fennel and cod to serving bowls and top the fish with the toasted breadcrumbs. Pour any remaining pan juices over the fennel.

2 teaspoons cornstarch
2 tablespoons rice vinegar, unseasoned (to taste)
3/4 cup chicken broth, low salt
1/4 tablespoon soy sauce
1 tablespoon ketchup
1 1/2 lbs cod fish fillets, thick (often called "cod loins", cut into 4 uniform pieces)
1/2 teaspoon salt, kosher, to taste
1/2 teaspoon black pepper, to taste
1/2 cup cornstarch
2 eggs, beaten
3 tablespoons canola oil (or peanut oil)
10 dried thail chilies or 10 other small whole chilies
4 scallions, thinly sliced, white and green parts separated
1 1/2 tablespoons ginger, minced

Steps:

  • In a small bowl, mix the 2 tsp corn starch with the 2 Tbsp rice vinegar.
  • Add the chicken broth, soy sauce, and ketchup.
  • Season the fish with 1/2 tsp salt and 1/2 tsp pepper.
  • Spread the 1/2 cup of corn starch on a wide plate.
  • Put the eggs in a bowl wide enough to dip the largest pice of cod.
  • Dredge the fish in the corn starch.
  • Heat 2 Tbsp of oil in a 12 inch non-stick pan over medium high heat until shimmering.
  • Move each piece of cod from the corn starch to the egg to coat, then put into the pan.
  • Cook on the first side for 3 minutes, then turning the fish, until brown on all sides and a little firm to the touch (total cooking time will be about 5 minutes) -- it should NOT be cooked all the way through.
  • Transfer the fish to a large plate.
  • Add the remaining 1 Tbsp of oil to the pan, let it warm up, then add the chiles, the white parts of the scallion, and the ginger. Stir fry for 2 ;minutes, until the scallions become translucent, with some brown spots.
  • Stir the corn starch and vinegar mixture, then pour it into the pan and stir. The sauce should come to a boil and thicken.
  • Reduce the heat to medium low, return the fish to the pan, and flip it to coat all the pieces uniformly with sauce. Cover the pan, with the lid slightly ajar, and cook for 3-5 minutes, until the fish is cooked fully and starting to flake.
  • Taste the sauce and re-season with salt and pepper if necessary.
  • Put the fish on a serving plate (or individual plates) and garnish with the scallion greens.

1/3 cup lemon juice
2 teaspoons dried dill
1 teaspoon black pepper
3 garlic cloves, coarsely chopped
10 stalks asparagus, cut into 1-inch pieces
5 shallots, sliced 1/2-inch thick
1 1/2 cups water
2 teaspoons olive oil

Steps:

  • Parboil (approx 3 minutes) asparagus in 1 cup water.
  • Discard water, set asparagus aside.
  • Sear shallots in olive oil set aside.
  • Sear fillets in same pan of olive oil 2 minutes each side.
  • Add juice, dill, pepper, asparagus, and garlic.
  • Allow to reduce slightly.
  • Add remaining water.
  • Cover and cook over medium heat 8 minutes.
  • Turn fillets allow to cook another 4 minutes.
  • May I suggest serving with brown rice.

1 cup mirin
1 cup sugar
1 cup miso
1/2 cup chopped ginger

Steps:

  • Combine marinade ingredients. Reserve 2 tbsp and marinate cod in the rest (covered, refrigerated) for 24 hours. Spear each piece of fish on a wooden skewer. Place on foil-lined pan and broil until sauce caramelizes, 3 or 4 minutes. Toss asparagus with oil, salt and pepper. Heat a sauté pan (no oil) over high heat, about 7 minutes. Sauté asparagus on all sides; arrange on a plate. Top with cod, drizzle with reserved marinade and garnish with chives. (To evaporate alcohol, increase sake and mirin to 1 1/4 cups each. Simmer until reduced by half and syrupy.)

Four 7-ounce cod steaks, skin and bones removed
1 teaspoon dried oregano leaves
Salt and freshly ground black pepper
1/8 teaspoon cayenne pepper
4 ripe plum tomatoes, cut into 1/2-inch-thick slices
1 1/2 teaspoons olive oil
1/2 teaspoon minced garlic
Flat-leaf parsley, for garnish (optional)

Steps:

  • Sprinkle both sides of cod steaks with oregano, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper. Sprinkle the tomato slices with 1 1/2 teaspoons salt and 1/4 teaspoon black pepper.
  • Heat olive oil in a large saute pan over high heat. When hot, add cod and tomato slices. Cook until cod steaks are golden on bottoms, about 4 1/2 minutes. Using a metal spatula, turn cod steaks and tomatoes. Add 1 cup water and the garlic; bring liquid to a simmer.
  • Simmer until cod begins to feel firm when you press it with your finger and it starts to flake, about 4 minutes. Divide cod, tomatoes, and broth among four soup plates. Garnish with parsley, and serve.

2 tablespoons vegetable oil

1 cup low sodium chicken broth or 1 cup low sodium vegetable broth

Steps:

  • Cut off the woody white ends of the asparagus spears. If desired, remove the tough fibrous outer layer from the lower half of each spear using a vegetable peeler.
  • In a straight-sided saute pan, heat oil until smoking. Add asparagus in a single layer. Season with salt and pepper and cook undisturbed until lightly browned, 1-2 minutes. Shake pan to turn spears and cook another 1-2 minutes. Add stock and butter to pan and immediately cover.

1 teaspoon whole grain mustard
4 (5 ounce) portions pacific cod fish fillets
1/2 cup panko breadcrumbs (see Note)
1 grated orange, juice and zest of
1 tablespoon butter
2 teaspoons peeled and chopped fresh ginger
1 garlic clove, sliced
2 lbs asparagus, trimmed
salt
1/2 cup water

Steps:

  • Preheat broiler.
  • Whisk together egg white and mustard well, until white is no longer stringy. Lightly brush each fillet on one side with the egg mixture. Mix panko and orange zest and sprinkle over top of each fillet. Gently pat down to ensure that the breading adheres to the fish.
  • Set the fillets on a baking sheet and broil until golden brown. Turn off broiler and move cod to lowest rack in oven to continue to cook slowly. (When done, fish should be opaque.).
  • For asparagus, heat butter, ginger and garlic over medium heat in a large sauté pan. When butter begins to froth and garlic begins to soften, add asparagus so that all spears point the same direction. Season with salt and pour in the orange juice and water. Bring to a boil and cook until liquid has reduced to a glaze.
  • Serve cod with asparagus and spoon any remaining glaze on top.
