A winning flavor combination - these Raspberry Coconut Cupcakes are coconut cupcakes, filled with raspberry jam and then topped with a smooth and creamy raspberry buttercream. Don't worry if raspberries aren't in season - you use jam, making these perfect year round!

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup butter, at room temperature
2 eggs
1/2 teaspoon coconut extract
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 cup buttermilk
4 oz shredded, sweetened coconut
6 tablespoons raspberry jam
1 cup butter, at room temperature
2 1/2 cups powdered sugar
1/4 teaspoon salt
1/4 cup raspberry jam
1/2 cup toasted shredded, sweetened coconut

Steps:

  • Preheat the oven to 350F. Line 18 regular muffin cups with paper liners.
  • In a medium bowl, mix the flour, baking powder and salt; set aside. In a large bowl, beat the sugar and the butter with an electric mixer on medium speed. Add the eggs, 1 at a time, beating well after each addition. Beat in the extracts. On low sped, alternately add the 1/3 of the flour mixture, 1/2 of the buttermilk, another 1/3 of the flour, the remaining buttermilk and then the remaining flour, beating just until blended. Stir in the coconut.
  • Divide batter evenly among muffin cups, filling each about 2/3 full.
  • Bake for 16 to 18 minutes, or until a toothpick inserted in the middle comes out clean. Cool for 5 minutes; remove to a cooling rack to cool completely.
  • Once cool, use a sharp knife to cut a cone out of the center of each cupcake, reserving the cut out piece. Fill the center with 1 teaspoon of jam. Replace the cut out piece of the cupcake. Repeat with the remaining cupcakes.
  • In the bowl of a stand mixer, beat the butter until light and fluffy, 2-3 minutes. With the mixer on low, add the powdered sugar, 1/2 cup at a time, mixing until incorporated. Beat in the salt, then turn the mixer to medium-high and beat until light and fluffy, another 2-3 minutes. Add the jam and beat until combined. The buttercream should be light, creamy and smooth.
  • Pipe the frosting onto the cupcakes. Top with the toasted coconut.

1-1/2 tsp. CALUMET Baking Powder
1/4 tsp. salt
3/4 cup vegetable oil
1 cup sugar
2 eggs
2 tsp. vanilla
1 cup milk
1/2 cup butter, softened
4 oz. PHILADELPHIA Cream Cheese, softened
4 cups powdered sugar
1 pkg. (3 oz.) JELL-O Raspberry Flavor Gelatin
1 Tbsp. half-and-half
1/3 cup BAKER'S ANGEL FLAKE Coconut

Steps:

  • For the Cupcakes:
  • Preheat the oven to 350°F and line two cupcake pans with 18 cupcake liners.
  • In a medium bowl, combine flour, baking powder, and salt.
  • In the bowl of your stand mixer (or a large bowl with a handheld mixer) beat oil and sugar until smooth, followed by the eggs, one at a time, beating each egg into the mixture well before adding the next one. Beat in the vanilla.
  • Alternately stir the flour mixture and the milk into the sugar mixture (Start with 1/3 of the flour mixture, stir, add 1/2 the milk, stir, repeat) until everything is mixed and a smooth batter has formed. Fill the prepared cupcake-lined cavities 3/4 way full with batter and bake at 350 degrees for 20-22 minutes. A toothpick inserted into the center of a cupcake should come out clean.
  • Let cool in pan for a few minutes before carefully removing to a wire rack to cool completely.
  • For the frosting and topping:
  • Beat bucrtter and cream cheese for a full three minutes until pale and fluffy, then slowly beat in powdered sugar, one cup at a time, until a thick frosting comes together.
  • Beat in gelatin mix, followed by the half and half.
  • Pipe or frost cupcakes with the raspberry cream cheese frosting. Sprinkle shredded coconut over tops of cupcakes, and serve!

175g self-raising flour
140g caster sugar
50g desiccated coconut
140g butter , softened
½ tsp vanilla extract
2 large eggs
4 tbsp milk
140g raspberry , fresh or frozen
280g icing sugar
85g butter , softened
4 tbsp raspberry coulis, from a bottle or fresh
a little desiccated or shredded coconut , to decorate

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 12-hole muffin tin with deep paper cases or a 15-hole bun tin with cake cases. Tip all the cake ingredients except the raspberries into a bowl and beat for 1-2 mins until light and fluffy. Gently fold in the raspberries.
  • Divide the mixture between the cases and bake for 18-20 mins (add a couple of extra mins for deep cases), until golden brown and firm to the touch. Leave to cool.
  • Beat together the icing sugar, butter and raspberry coulis to make a light, fluffy icing. Spoon or pipe onto the cakes and sprinkle with coconut.

3 cups (297g) sifted cake flour, sift before measuring
2 teaspoons baking powder
1/4 teaspoon salt
1 cup butter, room temperature
1 pound (450g) powdered sugar
4 egg yolks, well beaten *Beat until well combined, about 1 minute
1 cup coconut milk
1 teaspoon vanilla
1 teaspoon almond extract (or coconut)
1 cup shredded coconut
4 egg whites, well beaten
FILLING:
1 cup raspberry preserves
FROSTING:
1 cup milk
3 tablespoons all-purpose flour
1 cup butter, softened
1 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
1 1/2 cups powdered sugar
1 1/2 cups shredded coconut

Steps:

  • Pre-heat oven to 350 degrees. Spray 2 - 9″ round cake pans with baking spray. Combine the cake flour, baking powder and salt in a bowl. Sift these ingredients 3 times. In a mixing bowl, cream butter thoroughly; add sugar gradually. Continue creaming until light and fluffy. Add the egg yolks and beat well. Add flour mixture alternately with the milk, beating well after each addition. Stir in coconut and vanilla. Fold in egg whites gently until well combined. Pour batter into three 8" cake pans or two 9" cake pans. Bake for about 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool cake. If you used 9" cake pans, slice the layers in half to make a 4 layer cake. Raspberry Preserves (at least 1 cup) *choose a good quality Frosting Directions: In a saucepan, use a whisk to blend 1 cup milk into 3 tablespoons all-purpose flour. Cook and stir over medium heat until thickened and bubbly. Reduce heat, and cook and stir two minutes more. Remove from heat. Cover the surface with plastic wrap. Cool to room temperature without stirring. In a medium mixing bowl, beat butter, sugar, and extracts until light and fluffy. Add cooled milk mixture to butter mixture a quarter cup at a time, beating on low-speed after each addition until smooth. Add powdered sugar, 1/2 cup at a time, beating well afterward. Beat until mixture is light and fluffy. Add more powdered sugar if necessary to desired thickness. Slice each layer in half. Spread a thin layer of preserves* between the sliced layers. Alternate preserves and frosting between the layers then frost the top and sides of the cake. Sprinkle coconut on top and sides of the frosted cake. Slice and serve! *Note, on the layers that I placed the preserves, I also added a thin layer of coconut.

A fabulous dessert that requires no cooking and is easy to make. Young people love this dessert and especially when the weather is warm. I found this recipe in an old cookbook and then modified to the new products that we have today to make them tastier.

3/4 cup crushed graham wafers or 3/4 cup graham wafer crumbs
1/4 cup finely crushed pecans
3 tablespoons butter, melted
3/4 cup crushed fresh raspberries or 3/4 cup frozen raspberries, divided
4 ounces fat free cream cheese
10 1/2 fluid ounces fat-free sweetened condensed milk
1 cup non-dairy whipped topping

Steps:

  • In a medium size mixing bowl, combine graham wafer crumbs, crushed pecans and melted butter, mixing well.
  • Spoon mixture evenly into 12 large paper-lined baking cups and press with a rounded spoon to firm bottom.
  • Puree' raspberries and set aside. Reserve 1/4 cup of puree to serve with the frozen cupcakes as topping.
  • In a mixing bowl, beat cream cheese until fluffy.
  • Add condensed milk and 1/2 cup of raspberry puree' and mix until well blended.
  • Fold in whipped topping.
  • Spoon evenly into the 12 paper-lined cups.
  • Place the 12 cup tray into the freezer compartment for at least 5 hours or longer.
  • Remove from freezer and remove paper liner.
  • Invert cakes and place on serving plates.
  • Serve frozen with a spoonful of remaining raspberry puree'.
  • If desired, garnish with a few fresh whole raspberries.

Remove the bowl from the heat and using the stand mixer or a hand mixer, beat the mixture until it forms stiff, glossy peaks and has cooled to almost room temperature, about 5 minutes.
  • Reduce the speed to medium/low and add the butter, a piece or two at a time, beating until smooth. Beat in the jam. Don’t worry if the mixture is loose, it will firm up as you continue to beat it. If it curdles, and doesn’t smooth out over time, apply a little gentle heat to the underside of the bowl. (A hair dryer or a dish towel soaked with hot water works well.) Once the mixture is smooth, transfer it to a piping bag fitted with a large, open star tip. Top the cupcakes with tall swirls of frosting.
