1 1/2 tablespoons virgin coconut oil
1 3/4 pounds sweet potatoes, peeled and cut into 1/2-inch chunks
2 teaspoons light brown sugar, packed
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 teaspoon grated nutmeg

Steps:

  • Heat oven to 350 degrees. Melt the coconut oil in a small saucepan over low heat.
  • In a large bowl, toss together potatoes, coconut oil, sugar, salt, pepper and nutmeg.
  • Spread the potatoes in an even layer on a large baking sheet. Roast, tossing occasionally, until soft and caramelized, about 1 hour.

1/2 cup sweetened shredded coconut
1/3 cup sugar
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup reduced-fat butter, melted
4 pounds sweet potatoes (about 6 medium), peeled and cut into 1-in. pieces
1/2 teaspoon coconut extract
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the first 6 ingredients; stir in melted butter. Place sweet potatoes in a 5-qt. slow cooker coated with cooking spray. Sprinkle with pecan mixture., Cook, covered, on low 4 to 4-1/2 hours or until potatoes are tender. Stir in extracts.

We love these roasted sweet potatoes made with coconut oil, maple syrup and cinnamon! This recipe is a simple one. Everything happens on one baking sheet. We love keeping a jar of coconut oil in our pantry because we love the delicate coconut character it adds. Look for unrefined coconut oil (often labeled as "virgin" or "extra-virgin"). These are typically made from the first pressing of fresh, raw coconut without any added chemicals and have a mild coconut flavor and scent. This recipe is gluten-free as well as vegan and tastes absolutely delicious.

1 1/2 tablespoons virgin or extra-virgin coconut oil
4 medium sweet potatoes, peeled and cut into 1/2-inch cubes (1 1/2 to 2 pounds)
1 tablespoon pure maple syrup
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh ground black pepper
1/4 cup pecan halves

Steps:

  • Heat oven to 350 degrees Fahrenheit. Add coconut oil to a large rimmed baking sheet and place into the oven until the coconut oil melts, about a minute.
  • Mound the potatoes on top of the melted coconut oil, and then add the maple syrup, salt, cinnamon and black pepper. Toss until the sweet potatoes are well coated with the oil, maple syrup and spices.
  • Spread the potatoes in an even layer. Roast, tossing occasionally, until soft and caramelized, 45 minutes to 1 hour. Add the pecans and roast another 5 minutes until the nuts are warmed and lightly toasted.

While living with my elderly grandparents, I tried my best to prepare things my grandfather would eat. Basically, he'd quit eating and just decided that he would give up on living. He loved sweet potatoes and I fixed them at least three times a week, trying out different ways to serve them. While rummaging through the cabinets, I came across a can of coconut pecan frosting usually used on a German Chocolate Cake. Since I didn't have a cake mix, I decided to try something a bit different. This is what the result was. Deeelish...and elegant enough for the fanciest dinner party or simple enough for Sunday dinner.

1 (16 ounce) can coconut pecan frosting
1 (18 ounce) can yams, drained
2 tablespoons butter, cut into small cubes

Steps:

  • Preheat the oven to 350 degrees.
  • In an oven-safe casserole, place the potatoes in and dot with the cubes of butter.
  • Microwave the frosting for approximately 30-45 seconds on med. power until easily stirred and is "goopy". Drizzle over potatoes and cover with foil.
  • Bake 30-45 minutes or until the potatoes are thoroughly heated.
  • These will be VERY hot; let cool until just warm.
