These coconut macaroons are my husband's favorite and earned me a first-place ribbon at the county fair. I especially like the fact that this recipe makes a small enough batch for the two of us to nibble on without lots left over. -Penny Ann Habeck, Shawano, Wisconsin

Number Of Ingredients 6

1-1/3 cups sweetened shredded coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 large egg whites, room temperature
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the coconut, sugar, flour and salt. Add egg whites and vanilla; mix well., Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack.

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
6 tablespoons butter or 6 tablespoons margarine
1 3/4 cups packed light brown sugar
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups pecans, coarsely chopped
3/4 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F.
  • Grease 13 x 9-inch baking pan.
  • In small bowl, combine flour, baking powder and salt.
  • In saucepan, melt butter over low heat.
  • Remove from heat.
  • Stir in brown sugar and vanilla; add eggs, stirring until well blended.
  • Stir in flour mixture into sugar mixture just until blended.
  • Stir in coconut and pecans.
  • Spread batter evenly in prepared pan.
  • Bake until toothpick inserted 2 inches from edge of pan comes out clean, about 30 minutes.
  • Do not overbake; blondies will firm as they cool.
  • Cool completely in pan on wire rack.
  • When cool, cut lengthwise into 4 strips and then cut each strip crosswise into 6 pieces.
  • Variations: Pecan Blondies--leave out coconut.
  • Chocolate Chip Blondies--leave out coconut and stir in 1 (6 oz) package semisweet chocolate chips.

14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, at room temperature
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture. Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

A dead-ringer for our favourite chocolate peanut butter cup, these peanut butter cookie-filled brownies are poised to be a big hit. Bonus? Made in a big batch, they freeze like a dream!

3/4 cup butter (do not use margarine)
1 pouch Betty Crocker™ chocolate chip cookie mix
1/4 cup packed brown sugar
1 teaspoon vanilla
2 whole eggs
3/4 cup dark chocolate chips
1/4 cup granulated sugar
1 tablespoon water
1 bag sweetened coconut (about 2 3/4 cups lightly packed)
3/4 cup finely shredded unsweetened coconut
3 oz (85 g) cream cheese, softened (from 8-oz/250 g package)
1 egg white, slightly beaten

Steps:

  • Heat oven to 350°F. Line bottom and sides of 9-inch square pan with foil, leaving foil overhanging 2 opposite sides of pan.
  • In 1-quart saucepan, melt butter over medium heat. Cook 8 to 11 minutes or until butter is light golden brown, stirring constantly. Remove from heat; cool completely, about 30 minutes.
  • In large bowl, stir together cookie mix, brown sugar, vanilla, 2 eggs and cooled browned butter. Spread in pan.
  • Bake 25 to 30 minutes or until toothpick inserted 1 inch from centre of pan comes out almost clean. Immediately sprinkle with chocolate chips; let stand 5 minutes. Spread melted chocolate evenly over bars.
  • In small microwavable bowl, mix granulated sugar and water. Microwave uncovered on High 30 to 60 seconds or until sugar is dissolved.
  • In large bowl, place sweetened coconut and unsweetened coconut. Pour sugar mixture over coconut; beat with electric mixer on low speed until well mixed. Add cream cheese and egg white; beat on low speed until blended. Spoon and gently press macaroon mixture onto partially baked blondie layer.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely before cutting, about 1 hour 30 minutes. Cut into 8 rows by 4 rows. Store at room temperature, loosely covered, up to 1 week.

6 Tbsp. coconut oil, melted
2-1/2 cups BAKER'S ANGEL FLAKE Coconut
2 oz. BAKER'S Bittersweet Chocolate

Steps:

  • Heat oven to 350°F.
  • Line 8-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
  • Combine 1 cup flour, baking powder and salt. Beat whole egg, 3/4 cup sugar and coconut extract in large bowl with mixer until blended. Add white chocolate and oil; mix well. Gradually add dry ingredients, mixing well after each addition. Spoon into prepared pan; press to evenly cover bottom of pan.
  • Combine coconut with remaining flour and sugar in medium bowl. Add egg whites; mix well. Spread over batter in pan.
  • Bake 25 to 28 min. or until toothpick inserted in center comes out clean. Cool completely.
  • Melt bittersweet chocolate as directed on package; drizzle over dessert. Use foil handles to remove dessert from pan before cutting to serve.

2 eggs, whites only
80g caster sugar
150g desiccated coconut
1 tsp vanilla paste
90g dark chocolate

Steps:

  • Whisk together the egg whites and caster sugar in a large bowl for 2-3 mins until light and frothy, and the sugar has dissolved. Add the coconut, a pinch of salt and the vanilla, then stir until combined. Leave to stand for 10 mins.
  • Heat the oven to 170C/150C fan/gas 3½. Line a baking sheet with baking parchment. Scoop teaspoonfuls of the mixture and roll into compact balls, then arrange on the prepared baking sheet. Bake for 10-12 mins until golden.
  • Leave on the baking sheet to cool completely. Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn't touch the water, or in short 20-second bursts in the microwave. Tip the melted chocolate into a small bowl, then dip the bottom of each cooled macaroon into the chocolate and wipe off any excess. Arrange on a sheet of baking parchment, chocolate-side up, then put in the fridge for 20 mins, or until set. You can use any remaining melted chocolate to pipe in zigzags over the top, if you like, then leave to set.
