DARK CHOCOLATE COCONUT HAYSTACKS

It's easy to make coconut haystacks. And if you use dark chocolate and unsweetened coconut, you can feel good about eating them!

1 (3.5 -oz) bar extra dark chocolate ((90% cacao))
2 tablespoons granulated sweetener (or the equivalent in stevia (optional))
1 tablespoon coconut oil
3/4 cup shredded unsweetened coconut ((2.5 oz))

Steps:

  • Line a tray or a baking sheet with wax paper.
  • Place the chocolate in a medium microwave-safe bowl. Microwave in 30-second session, stirring after each session, until the chocolate is melted.
  • If using, stir the sweetener into the melted chocolate until fully dissolved. Then mix in the coconut oil.
  • Stir the coconut into the chocolate, mixing until the coconut is completely coated.
  • Using a 1.5-tablespoon cookie scoop, drop six mounds of the mixture into the wax-paper-lined tray. Gently flatten them with a small rubber spatula.
  • Refrigerate the candies for 30 minutes, until the chocolate is set. If you refrigerate for longer than 30 minutes, remove them from the fridge at least 10 minutes before serving.

1 cup semisweet chocolate chips
1 cup milk chocolate chips
3 cups chow mein noodles
1/2 cup roughly chopped almonds
1/2 cup shelled pistachios
2 tablespoons assorted holiday sprinkles

Steps:

  • Heat 2 inches of water in a pot to a simmer. Add the semisweet and milk chocolate to a bowl and place over the pot of simmering water. Allow to melt, stirring occasionally, 4 to 5 minutes.
  • Meanwhile, add the noodles, almonds and pistachios to a large bowl and set aside.
  • When the chocolate has melted completely, pour over the noodle and nut mixture. Mix until everything is well coated in the melted chocolate.
  • Using 2 spoons, drop tablespoon mounds onto 2 parchment-lined baking sheets. Sprinkle the holiday sprinkles over the top. Allow to dry completely before storing, about 1 hour.

2 1/4 cups flaked sweetened coconut
8 ounces bittersweet chocolate, finely chopped

Steps:

  • Preheat oven to 350 degrees F. Place the coconut in a single layer on a baking tray. Toast until golden brown, about 10 minutes. The edges will toast faster than the middle so stir coconut every couple minutes for even coloring.
  • Melt the chocolate over a double boiler over hot water, making sure the bottom of the bowl does not touch the water. Remove the chocolate from the heat and whisk until smooth. Stir in the coconut. Using approximately 1 tablespoon per haystack, form the mixture into 1 1/2-inch tall stacks. Place them on a baking sheet. Refrigerate until set, about 30 minutes.

Steps:

  • In a medium bowl stir together the oats and coconut.
  • Add the butter, milk, cocoa and sugar to a medium saucepan over medium heat
  • Whisk gently as everything melts together, then bring the mixture to a boil for 5 minutes while gently whisking.
  • Pour the chocolate mixture into the bowl with the oats and coconut and stir together.
  • Drop tablespoon sized spoonfuls onto a baking sheet lined with wax paper and place in the fridge for 30 minutes to harden.

1 3/4 c sugar
1/2 c milk
1/2 c butter
1/2 c cocoa powder
1 dash(es) salt
1/2 tsp vanilla extract
3 c old fashioned oats, pulsed
1 c flaked, sweetened coconut
1 tsp karo syrup

Steps:

  • 1. Measure out 3 c. old fashioned oats. Place in food processor and pulse until you have smaller bits of oat flakes. But be careful you don't want oat powder! Combine oat bits and coconut. Set aside.
  • 2. In a medium sauce pan, over medium low heat, add butter, sugar, milk, cocoa powder, salt, and Karo syrup.
  • 3. Heat to boiling, stirring almost constantly.
  • 4. When mixture starts to come to a rolling boil, cook for 5 min. and stir constantly, scraping down sides.
  • 5. After 5 min. of cooking time remove from heat. Add vanilla extract and your oat / coconut mixture. Stir well, work quickly.
  • 6. Drop by teaspoonfuls (or use a small cookie dough scoop) on Silpat mats - about 3 mats will give you enough space. Let cool. Enjoy.

1 cup butterscotch chips
¼ cup creamy peanut butter
1 ½ teaspoons coconut oil
1 teaspoon vanilla extract
1 ½ cups dried chow mein noodles
½ cup peanuts, roasted, salted
⅓ cup thin pretzel sticks, roughly chopped
1 cup dark chocolate chip
1 tablespoon coconut oil

Steps:

  • Line a large baking dish with parchment or wax paper.
  • Add the butterscotch chips, peanut butter, and coconut oil to a large microwave-safe bowl. Microwave on 50% power for 60 seconds, or until the chips are melted, stirring halfway through. Whisk until completely smooth.
  • Add the chow mein noodles, peanuts, and pretzel sticks. Stir until evenly coated.
  • Use 2 spoons to drop rounded tablespoons of the mixture on the prepared baking sheet. Place in the refrigerator and allow to harden for at least 1 hour.
  • Make the chocolate coating, if using: Add the dark chocolate chips and coconut oil to a medium bowl. Microwave on 50% power for 30-45 seconds, or until the chips are melted, stirring halfway through. Whisk until completely smooth.
  • Dip the bottom of each haystack in the melted chocolate, letting any excess drip off. Return to the baking sheet, then refrigerate for at least 30 minutes more, until the chocolate hardens.
  • Enjoy!

So good and easy to make! My siblings and I made huge batches of these cookies Sunday afternoons, and they were usually gone by Tuesday! The time for boiling the mixture is listed at 5 minutes, but if you cook it a little less, the cookies are chewier.

2 cups sugar
1/2 cup milk
1/2 cup butter or 1/2 cup margarine
1/2 cup cocoa
1 dash salt
1/2 teaspoon vanilla
3 cups rolled oats
1 cup flaked coconut

Steps:

  • In a medium saucepan, combine sugar, milk, butter, cocoa (I tend to go a little heavy on the cocoa) and salt.
  • Heat to boiling, stirring frequently.
  • When it has reached a rolling boil, cook for 5 minutes, stirring constantly.
  • Remove pan from heat and mix in vanilla, oats and coconut.
  • Drop by spoonfuls onto wax paper.
  • Work quickly!
  • Let cool.
  • Alternate/optional additions, add any one with coconut: 1/2-3/4 cup mini marshmallows or 1/2 cup walnuts.
