COCONUT COCONUT MILK CAKE
This is a super moist and tasty coconut cake. Growing up in Brazil, this was a favorite amongst our circle of friends. It is especially good with a cup of coffee on the side. I've converted a few of my anti-coconut family and friends into lovers of this cake.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch cake pan.
- Beat sugar, butter, and egg yolks together in a bowl using an electric mixer until smooth and creamy; add shredded coconut.
- Whisk flour, baking powder, and salt together in a bowl. Stir creamed butter mixture, alternating with coconut milk, into flour mixture until batter is just mixed.
- Beat egg whites in a glass or metal bowl until until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Fold egg whites into batter. Pour batter into the prepared cake pan.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 45 minutes.

Steps:
- Mix white cake and bake in 9" x 13" pan according to directions.
- When done, punch holes all over cake with wooden dowel.
- Pour condensed milk and coconut cream over cake while still warm.
- Allow to cool a little and spread with Cool Whip topping.
- Sprinkle with coconut and pecans.
- Ready to serve.
- Refrigerate uneaten portion.

- In a food processor, coarsely grind coconut; set aside. Combine milk, butter, and creamed coconut in a small saucepan over medium-low heat; cook, stirring, 3 to 4 minutes. Whisk one-third of the hot milk mixture into egg yolks. Return mixture to saucepan; cook, stirring constantly, until it is the consistency of pudding, about 5 minutes.
- Remove pan from heat. Stir in the extract and reserved coconut. Let cool completely. Refrigerate in an airtight container up to 3 days; let stand at room temperature until soft enough to spread.
TROPICAL COCONUT CAKE (AKA BETTER THAN SEX VERS.1000)
Absolutely positively scrummy cake. Make sure you make it the night before required so the flavours have time to "set".

- Bake cake according to directions.
- Mix coconut cream & condensed milk together.
- When cake is cooked, punch holes in cake with skewer or chop stick.
- Slowly pour coconut cream mixture over still warm cake and into holes all over cake.
- Pour undrained pineapple over the cake. Refrigerate until cold.
- Mix Dairy Whip and shredded coconut together and spread over cake.
- Refrigerate overnight, keep cold until ready to serve.
- You can substitute any yellow cake mix for the vanilla cake mix.
COCONUT POUND CAKE (USING COCONUT MILK)
I was looking online for a coconut pound cake that used coconut milk and came across one that was similar to the one that I wanted. However, I made quite a few changes and I believe that it has been perfected :-) This pound cake has a wonderfully rich coconut flavor b/c it uses coconut milk. The coconut milk and coconut are both un-sweetened, so you may add a little more sugar if you'd like, but this recipe is great even if you don't have a "sweet tooth". ADDITIONAL NOTES: After readin some of the reviews, I tried this same recipe and added a "Brown suger Toasted Coconut Glaze". It makes it even better. See below

- Preheat over to 325 degrees.
- Greese and flour 1 loaf pan, set aside.
- In a mixing bowl, mix softened butter and sugar together until fluffy.
- In a seperate small bowl, mix together flour, salt, baking powder, and shredded coconut.
- Add eggs, one at a time into butter/sugar mixture. Mix well.
- Add vanilla, then add coconut milk, alternating with flour/coconut mixture (this will prevent lumps).
- Pour batter into loaf pan and bake for 1 - 1 1/4 hours.
- If you wish to use the glaze, heat a sauce pan to medium high heat, add butter and brown sugar. Stirring constantly, once brown sugar has dissolved add the toasted coconut, vanilla and if desired 2 TBSP coconut milk. Remove from heat and allow to slightly cool. Stir just before pouring over cooled cake.

CAMPFIRE COCONUT MACAROON CAKE
Extra large bread cubes dipped into sweetened condensed milk then rolled in coconut and slow roasted over the campfire. The ingredients meld into a toasted bite of bliss and smell incredible! - Using a bread knife, trim all crust off the loaf of bread.
- Cut bread into approximately 2-inch cubes.
- Pour sweetened condensed milk into a pie pan or shallow bowl.
- Place some coconut into pie pan or onto a plate.
- Evenly coat bread cube with sweetened condensed milk, letting any excess drain off over dish.
- Lightly pat cube into coconut makeing sure that coconut adheres to all sides.
- Place cube onto a long toasting skewer or sharpened stick.
- Turn slowly, over the hot coals, until coconut is toasted brown.
- Remove from skewer and enjoy.
- CAUTION: Let cool slightly as the sugars in the milk and coconut can be quite hot right out of the fire.

Steps:
- Prepare your cake pan. Coat with shortening and flour. I use a very old aluminum "tube" pan. The hole is smaller than the newer ones, but use pan of your choice.
- Preheat oven to 350 degrees.
- Beat butter and sugar at high speed until soft and smooth. (I use a heavy-duty Kitchen Aid mixer).
- Add condensed milk and beat until well blended.
- Add eggs, one at a time and beat well after each addition.
- Combine flour, baking powder and salt and add one cup at a time and beat well.
- Add vanilla and beat well.
- Bake 1 hour and 30 minutes. I put aluminum foil around my pan so the crust won't get too dark. Also the last 20-30 minutes I lay foil over top to prevent the crust from being too dark.
- Alow to cool for 30 minutes before removing from pan.
- Enjoy.

I had to make this cake at work on Easter and it was just beautiful so I made it at home and jazzed it up. You will be quite happy with this cake. Color the coconut on top any color you like.

- Preheat oven to 350 degrees F (175 degrees C).
- Butter the sides of two 9-inch cake pans and line the bottoms of the pans with 9-inch parchment paper.
- Beat unsalted butter and sugar in a large mixing bowl with an electric mixer until light and fluffy, about 5 minutes.
- Stir flour, baking powder, and salt in a bowl; set aside.
- Whisk egg whites, milk, and coconut extract in a separate bowl.
- Thoroughly mix about 1/3 of the flour mixture into the creamed butter and sugar; stir in half the egg white-milk mixture. Repeat twice more, ending with final 1/3 of flour mixture; stir to make a smooth batter.

- Place a cake layer onto a serving platter; top with the condensed milk-coconut mixture. Place second cake layer over the coconut filling. Spread warm chocolate mixture evenly over top and sides of cake with a thin spatula.
