3 (20 oz) cans crushed pineapple (drained)
4 (15 oz) cans mandarin oranges (drained)
1 (8 oz) container of Cool Whip
1 (8 oz) container of sour cream
1 (10.5 oz) package miniature marshmallows
3/4 cup shredded coconut (or to taste)

Steps:

  • Mix pineapple, mandarin oranges, Cool Whip, sour cream, marshmallows, and shredded coconut together in a bowl.
  • Cover bowl with plastic wrap and refrigerate until flavors blend. Refrigerate for at least 2 hours. Tastes even better when chilled overnight.

3 ½ cups frozen whipped topping, thawed
2 cups shredded coconut
2 cups miniature marshmallows
½ cup milk

Steps:

  • In a large bowl, combine the oranges, pineapple, whipped topping, coconut, marshmallows and milk.
  • Mix together well and chill 1 hour before serving. Garnish with cherries.

3 (30 ounce) cans fruit cocktail
3 (11 ounce) cans mandarin oranges
1 (16 ounce) can pineapple tidbits
1 (10 ounce) bag miniature marshmallows
1 (10 ounce) bag coconut
1 1/2 cups pecans
1 (16 ounce) container sour cream

Steps:

  • Open all the cans of fruit and dump into a large colander over a sink. mix lightly to combine the fruits. Allow to drain at least half an hour, stirring around periodically to allow maximum drainage.
  • Meanwhile, chop pecans. Combine chopped nuts in a large bowl with the coconut and marshmallows. Add the sour cream and mix lightly.
  • Fold in the drained fruit until all is incorporated. Cover tightly with lid or plastic wrap and refrigerate overnight.

1 (14 ounce) can sweetened condensed milk (can use reduced fat or fat free)
1 cup sour cream (can use reduced fat or fat free)
1/2 cup lime juice
1 (20 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin orange segments, drained
1 1/2 cups grapes, halved
1 medium banana, sliced (optional)
1 cup sweetened flaked coconut
1 cup miniature marshmallow
1/2 cup maraschino cherry, halved, well-drained & patted dry
1/2 cup nuts, chopped, for garnish (optional)

Steps:

  • In a large bowl, combine sweetened condensed milk, sour cream & lime juice; mix well. Stir in the remaining ingredients (except cherries & nuts); cover & chill at least 3 hours or overnight. To prevent cherries from "bleeding", fold them gently into the salad just before serving, and top with chopped nuts if desired.
  • Salad may also be frozen and served like ice cream.

My Mother made this salad for every Thanksgiving and Christmas Dinners. I remember looking forward to this the most, as a kid, as I loved the marshmallows and the fruit. My Mom made a big bowl of this and added shredded coconut to half of it and left the other without for those of us non-coconut lovers. This is so quick and easy yet so tasty and refreshing, especially with a big heavy holiday meal. I also found out that this is a common Hawaiian Luau side dish. Time does not include chilling time.

2 (8 ounce) cans mandarin oranges, drained
1 (16 ounce) can pineapple tidbits, drained
3 bananas, sliced
1 (12 ounce) bag miniature marshmallows
16 ounces sour cream, container
1 (6 ounce) can maraschino cherries, sliced and drained (optional)
shredded coconut (optional)

Steps:

  • Drain all cans of fruit.
  • In a large bowl add drained fruit, marshmallows, sour cream and coconut if using. Mix well to combine.
  • Refrigerate for at least 6 hours, overnight if possible. This allows the juices to blend with the marshmallows and sour cream.
  • One hour before serving, slice bananas and add to rest of the fruit, stir to combine.
  • If it seems to dry add a little more sour cream.
  • Enjoy!

This is a fruit salad my mom used to make. Macapuno is a young coconut. The Macapuno Strings and Sweet Coconut Gel can be found in Asian markets and are usually in a glass jar. It's great for potlucks and can be easily frozen. Variations include adding cheddar cheese, nuts such as macadamia or cashews, chopped fresh apples or other fruits such as mandarin oranges, bananas, etc.

2 (29 ounce) cans fruit cocktail, drained well
1 cup macapuno strings, drained well
1 cup coconut gel, drained well
1 (7 5/8 ounce) can Nestle cream
7 ounces Nestle sweetened condensed milk
4 ounces cream cheese, softened at room temp

Steps:

  • Drain the fruit cocktail, macapuno and coconut gel well, set aside.
  • With the back of a spoon blend the cream cheese with 1/2 can of condensed milk and mix until smooth.
  • You can use more condensed milk and/or cream cheese if desired.
  • In a large bowl, combine all ingredients together.
  • Chill for 30min-1hr or freeze.
  • Enjoy!
