EASY EASY EASY. If you like maraschino cherries you can use them, if not remember there are maraschino cherries in your fruit cocktail. Also, a little juice from the maraschino cherries will color your fruit salad a festive red.

COCONUT AMBROSIA FRUIT SALAD
I get requests for this southern delicacy every holiday season. There are two key elements to this: drain the fruits EXTREMELY well, and let the salad set overnight for optimal flavor!

AMBROSIA FRUIT SALAD
This fresh and creamy salad is a favorite around my house. I make it with plenty of fruit, yogurt for dressing, then mix in just enough 'goodies' (marshmallows and coconut) so it tastes like the rich version I grew up with.

FRUIT SALAD - AMBROSIA STYLE
My Mother made this salad for every Thanksgiving and Christmas Dinners. I remember looking forward to this the most, as a kid, as I loved the marshmallows and the fruit. My Mom made a big bowl of this and added shredded coconut to half of it and left the other without for those of us non-coconut lovers. This is so quick and easy yet so tasty and refreshing, especially with a big heavy holiday meal. I also found out that this is a common Hawaiian Luau side dish. Time does not include chilling time.

- One hour before serving, slice bananas and add to rest of the fruit, stir to combine.
- If it seems to dry add a little more sour cream.
- Enjoy!
FILIPINO AMBROSIA FRUIT SALAD WITH MACAPUNO
This is a fruit salad my mom used to make. Macapuno is a young coconut. The Macapuno Strings and Sweet Coconut Gel can be found in Asian markets and are usually in a glass jar. It's great for potlucks and can be easily frozen. Variations include adding cheddar cheese, nuts such as macadamia or cashews, chopped fresh apples or other fruits such as mandarin oranges, bananas, etc.

- OPEN and DRAIN the cans of fruit. No need to rinse, but you do need to drain. If you have time, drain the fruit in a strainer for 30 minutes.
- REMOVE the maraschino cherry stems if they are still attached. CUT the cherries in half. Reserve a few whole cherries to place on top of the salad.
- WHIP the heavy cream. Pour the heavy cream into a cold bowl and whip using a hand mixer with a wire whip attachment for 4 to 5 minutes, or until the cream is whipped to soft to medium peaks.
