1 1/4 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
4 tbsp Cocoa Loco Sweet Spice
1/4 tsp salt
1 1/2 cups bran buds
1 1/4 cup boiling water
1/2 cup brown sugar
3/4 cups milk
4 tbsp unsalted butter, melted
1/4 cup plain thick yogurt
1 cup chocolate chips

Steps:

  • Preheat the oven to 400F and line a muffin tray with papers, or coat with butter
  • In a medium bowl, stir together the flour, baking soda, baking powder, cocoa loco and salt.
  • In a large bowl, stir together the bran buds and boiling water; let sit together until the water had turned the brans to mush, 2-4 minutes.
  • Stir the sugar, milk, yogurt and butter into the bran mixture until well combined.
  • Add in the flour mixture and stir until just incorporated, don't over mix. Then add in the chocolate chips
  • Portion evenly into the muffin tins and bake for 20 minutes, or until the tops spring back when pressed lightly.

One of my favourite muffins, sweeter than most breakfast muffins but still a long way from being cupcakes in disguise which too many muffins are. NOTE: I have adjusted the quantity of flour thantks to my reviewers.

2 cups mashed ripe bananas
2 large eggs
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 2/3 cups whole wheat flour
1/2 cup cocoa, sifted
3/4 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Butter or put paper cups in muffin pan.
  • Mash bananas.
  • Whisk in eggs, buttermilk, vegetable oil and vanilla.
  • Mix the dry ingredients.
  • Be sure to sift the cocoa.
  • Mix wet and dry ingredients until just blended.
  • Spoon the batter into the muffin cups.
  • Bake for 20-25 minutes, until done.
  • If you like, lay a slice of banana over each muffin before baking.

Got this one from Kellogg's about 8 years ago. If you prefer, you can use all mashed banana rather than one mashed and one sliced. I've also tried adding 1/2 cup of chocolate chips to make this a real treat

2 medium ripe bananas
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1 egg
1/4 cup melted margarine

Steps:

  • Preheat oven to 400F and lightly grease muffin tin.
  • Set aside.
  • Peel bananas; mash one and slice the other.
  • Set aside.
  • Stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softened.
  • Add egg, margarine and mashed bananas.
  • Mix well.
  • Mix in sliced banana.
  • Add the flour mixture, stirring just until combined.
  • Portion into muffin tins evenly.
  • Bake for 20-22 minutes, or until tops spring back when lightly touched.

1/3 cup skim milk
1/4 cup sugar
1 egg
1/2 cup unsweetened applesauce
3/4 cup pumpkin puree
2 teaspoons vanilla
1 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup baking cocoa
2 1/4 cups bran flakes
2 tablespoons mini chocolate chips
4 (1 g) packets sugar substitute

Steps:

  • Blend all ingredients together just until mixed.
  • Divide evenly between 24 mini muffin tins.
  • Bake at 350 for 20-25 minutes.

Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten.

1/4 cup Splenda sugar substitute
1/4 cup unsweetened cocoa powder

1/4 cup oil replacement (prune puree)

1 cup sliced, ripe banana (about 1 medium)

Steps:

  • 1. Stir together flour, sugar, baking powder, salt and cocoa powder. Set aside.2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. I LOVE a good bakery bran muffin and have tried countless refrigerator bran muffin recipes, which always come up short. This recipe is from Cook's Illustrated and promises the best bran muffins. What is different about the ingred. is the ratio of white and wheat flours and wheat bran. The molasses, dark brown sugar help make up the great flavor and you will love the bakery crusty top. It is a little more work, but I would never bake any other recipe!

1/4 cup whole wheat flour
1 1/4 teaspoons baking powder

3/4 teaspoon ground allspice
1/2 teaspoon freshly grated nutmeg
7 tablespoons unsalted butter, softened
1/2 cup dark brown sugar, plus
2 tablespoons dark brown sugar
2 large eggs
2 1/2 teaspoons vanilla extract
3 tablespoons unsulphured molasses
1/4 cup sour cream
1 cup buttermilk, plus
3 tablespoons buttermilk
1 1/2 cups wheat bran
1 cup raisins

Steps:

  • Adust oven rack to lower middle position and heat oven to 375.
  • Beat butter in large bowl of electric mixer at medium speed until light and fluffy, 1-2 minute.
  • Add brown sugar, increase speed to medum-high, and beat until combined and fluffy, about 1 minute longer.
  • Add eggs one at a time, beating thoroughly before adding the next.
  • Beat in vanilla, molasses, and sour cream until thoroughly combined and creamy, about 1 minute longer.
  • Reduce speed to low and beat in buttermilk and half the flour mixture until combined, about 1 minute longer.
  • Beat in remaining flour mixture unil incorporated and slightly curdled looking, about 1 minute longer, scraping sides of bowl as necessary.
  • Stir in bran and raisins.
  • Spray a twelve mold muffins tin (each mold measuring 1/2 cup) or a six mold muffin tin (each mold measuring one cup) with cooking spray.
  • Divide batter evenly using ice cream scoop or spoon.
  • Bake until a toothpick inserted into center withdraws cleanly of with a few moist particles adhering to it, about 25 minute Set on wire rack to cool slightly, about 5 minute Remove muffins from tin and serve warm.
  • Makes 12 small muffins or 6 jumbo muffins.
