A nice appetizer or snack. Especially nice around the holidays, and can be made 3 days ahead. From Bon Appetit, November 1994.

Number Of Ingredients 9

2 tablespoons unsalted butter
4 teaspoons orange peel, grated
2 teaspoons ground cinnamon
1 teaspoon ground coriander
1/2 teaspoon ground cloves
1/4 teaspoon cayenne
2 cups pecan halves (10 ounces)
2 tablespoons sugar
1 teaspoon salt

Steps:

  • Preheat oven to 300ºF.
  • Melt butter in heavy medium saucepan over low heat. Add orange peel, cinnamon, coriander, cloves and cayenne and stir until aromatic, about 30 seconds.
  • Add pecans, then sugar and salt and stir to coat evenly. Transfer nut mixture to baking sheet.
  • Bake until nuts are toasted, stirring occasionally, about 20 minutes. Cool. (Can be prepared 3 days ahead. Store airtight at room temperature).

1-1/2 cups sugar
1/4 cup water
3 tablespoons orange juice concentrate
2 cups pecan halves
1/2 teaspoon grated orange zest

Steps:

  • In a large heavy saucepan, combine the sugar, water and orange juice concentrate. Cook over medium-high heat, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat; stir in pecans and orange zest. , Beat until mixture thickens and loses its gloss, about 2 minutes. Drop by teaspoonfuls onto waxed paper to set. Store in an airtight container.

1 c. Roasted Unsalted Cashews
1 c. Walnut Halves
1 c. Pecan Halves
1 c. Whole Roasted Unsalted Almonds
1 tbsp. Fresh Orange Zest
2 tbsp. Minced Fresh Rosemary
1/2 tsp. Cayenne Pepper
1 tsp. Sea Salt
1/4 c. Pure Maple Syrup

Steps:

  • Preheat oven to 325ºF.In a large bowl, stir to combine cashews, walnuts, pecans, almonds, orange zest, rosemary, cayenne, and sea salt. Drizzle over the maple syrup and stir to distribute evenly.Spread out evenly on a sheet pan and roast for 30 minutes, stirring once halfway through. When the nuts come out of the oven, immediately remove them to a bowl, using a metal turner. Enjoy!

A seasonal twist on the classic whiskey cocktail, the Toasted Pecan Old Fashioned is a perfect cocktail for a chilly winter night. Toasted pecans soak in whiskey for days before the infused alcohol is poured atop a sugar and bitter mixture to make an Old Fashioned.

½ cup pecans, toasted
1 ½ cups whiskey (a good drinking one!)
1 sugar cube (or ½ teaspoon granulated sugar)
4 dashes Angostura bitters
2 oz. Toasted Pecan Whiskey, recipe above
Spherical Ice Cube

Steps:

  • Preheat the oven to 400°F.
  • Place the pecans on a baking sheet. Transfer to the preheated oven.
  • Toast the pecans for 10-15 minutes or until browned and fragrant. (Keep an eye on them, as you could potentially burn them if not paying attention!)
  • Remove from the oven, and let cool to room temperature.
  • Transfer the cooled pecans to a mason jar, and pour the whiskey on top of them.
  • Let the whiskey infuse for 3-4 days. (Don't go any longer than 4 days, as the pecans could dry the whiskey out.)
  • In an Old Fashioned or your favorite whiskey glass, measure the sugar cube/loose sugar and dash in the Angostura bitters.
  • Using a muddler, break down the sugar cube and combine it with the bitters, coating the sides of the glass as the sugar and bitters mix.
  • Place whiskey stones or a large ice cube, then pour the Toasted Pecan Whiskey over the cubes, swirling it to mix with the bitters and sugar mixture.
  • Enjoy immediately!

100g pecans , finely chopped
160g golden caster sugar
½ tsp sea salt flakes
Reyka vodka
3 egg whites
120ml fresh clementine juice (about 2-3 clementines)
18 drops chocolate bitters (we used Fee brothers Aztec chocolate bitters)
ice
6 dehydrated orange slices , to serve
good grating of nutmeg , to serve

Steps:

  • Toast the pecans in a dry saucepan for 1-2 mins, then take off the heat. Quickly add the sugar and 80ml water, stir rapidly to dissolve the sugar, add the salt, then leave the mixture to cool completely. Pour through a sieve to remove the pecans.
  • Pour the pecan salted caramel syrup, vodka, egg whites, clementine juice and bitters into a cocktail shaker. Shake hard for 30 secs to add volume to the egg white. Add some ice and shake again for a further 15 secs, then strain into rocks or coupe glasses. Garnish each with a dehydrated orange slice and grate fresh nutmeg over, to taste. Serve immediately.

Steps:

  • Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper.
