1 can (12 oz) of diet lemon-lime soda, Pick your favorite clear diet soda

Steps:

  • Preheat the oven to 350 degrees F and spray a 9x13 baking dish with cooking spray.
  • Spread the frozen peaches out evenly, covering the bottom of the baking dish.
  • Sprinkle the entire bag of dry cake mix over the peaches.
  • Slowly, pour the diet soda over the cake mix until well covered. Do not mix with a spoon.

1 cup flour (I use self-rising)
1 cup granulated sugar
1 cup pie filling, your choice. This fruit or 1 cup berries, must be prepared by cutting proper size sweetening and thickening them if called for. In Pie Filling
2 teaspoons of good quality vanilla
1/2 cup butter

Steps:

  • Heat oven to 375.
  • Place the butter in the baking pan and allow it to melt in the warming oven.
  • The butter should be bubbly before batter is added.
  • Mix well, the milk, flour, sugar, and the vanilla.
  • Pour batter into the buttery pan. Close oven.
  • In about 10 minutes or so, open the oven and pull out pan on the oven rack.
  • Carefully spoon the fruit or berries you've chosen evenly throughout the Cobbler Cake.
  • Most of these spoons will sink a good bit into the batter, and that's good. You may even help the sinking of the more stubborn.
  • Continue baking until top is golden brown.
  • You'll find the heavy sugar and butter gives in a chewiness an texture that makes you think about a cobbler -- anyway.

  • In a large bowl, toss together the berries, lemon juice, and sweetener. Sprinkle (don't dump) a tablespoon gelatin over the mixture and mix to combine, then repeat with the other tablespoon gelatin.
  • Transfer the berries to the bottom of a glass or non-stick 8x8 inch (20x20 cm) baking pan.
  • In another large bowl in the microwave, or a saucepan on the stove, melt the coconut oil. Remove from heat.
  • Stir the vanilla extract into the melted coconut oil. Stir in the almond flour, sweetener, baking powder, and sea salt. The dough should be crumbly, but buttery and a little moist.
  • Crumble the dough over the top of the berries in the pan, leaving some small spaces of berries shining through.

Both my grandmothers made peach cobblers to die for: cake, crusted sugar, and peaches. Peaches in Florida were always perfectly ripened--the loose stone variety--juicy and tender. This is a reconstruction free of allergens. It's quite sweet if you have avoided sugar for a while but it's PERFECT for those just making the change. You can't even tell that this is sugar free. * A word on xylitol and erythritol. Some folks with IBS cannot that tolerate xylitol can usually use erythritol. Unlike maltitol or other sugar alcohols, xylitol is naturally derived from birch trees in a distillation process similar to soy sauce. So, if you don't have an issue with distillation (and those of you who drink any distilled alcohol or partake of soy sauce should not), then xylitol is a pretty cool sweetener. Truvia is pricier but a great choice for those with IBS. It's a blend of the stevia leaf and erythritol, another plant-derived sugar alcohol. Why do you care? Well...other sugar substitutes (Splenda, Equal, maltitol) are completely artificial and have various known and suspected negative health effects. ** For celiacs, I learned that many buckwheat flours are prepared on shared machines with gluten-containing grains.   • In a medium baking dish, add the fresh or frozen cherries. If cherries are frozen they do not have to be thawed. Set aside.
  • In a mixing bowl, add the dry cake mix. Pour in the melted butter and mix together with a fork until crumbly.
