FRIED SWEET POTATOES

Steps:
- Heat the vegetable oil in a very large, deep pot or heat an electric fryer to 360 degrees F.
- Fry the sweet potatoes, in batches, until golden brown, about 8 minutes. Drain on paper towels.
- Sprinkle with salt and Essence, to taste, and serve hot.
- Combine all ingredients thoroughly.

COAL FIRED SWEET POTATOES
These potatoes are SO good and the recipe so simple. This is a great way to create a tasty side dish while grilling meat. The potatoes will turn black on the outside but that's OK, that's how they should be. Recipe adapted from Big Bob Gibson's BBQ.

Steps:
- Place the sweet potatoes directly onto a bed of hot coals. Cook for 40 minutes, turning once halfway through cooking.
- Melt the butter and add the maple syrup, pecans, cinnamon, cayenne pepper and salt. Continue heating on low for about a minute or just til a layer of bubbles forms over the surface. Remove from heat but keep warm.
- Remove the potatoes from the coals and brush away excess char. Split the potatoes lengthwise and top with the maple pecan butter.

FRIED SWEET POTATOES
Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

Steps:
- Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
- Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
- Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
- When both sides are lightly browned, sprinkle brown sugar and cinnamon across the top. Wait 1-2 minutes and then toss the potatoes until the brown sugar is caramelized (approx 1 more minute).
- Remove from pan and serve immediately.
PAN FRIED SWEET POTATOES
I like coming up with new ways to serve foods so that I don't get bored with the same dishes all of the time. I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

Steps:
- Dice sweet potatoes no thicker than 1/4 inch thick.
- Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.
- Place oil in pan and add potatoes, garlic, and onions and then coat well(be sure that oil is not left to heat up or it will scorch the onions and garlic).
- Sprinkle salt and pepper just after adding other ingredients to the pan.
- Allow the potatoes to cook for a few minutes and check for browning. Keep temperature from getting too hot.
- Stir occasionally until potatoes are to your desired doneness (approx 10 minutes for me.
- Turn off heat and add brown sugar while still hot. Stir well and serve.
- * variation* try using butter instead of olive oil for a more sweet and traditional flavor.

- Build a large wood fire in a pit or a charcoal fire in a kettle grill. (If using a grill, remove the cooking grate, and set it aside while positioning the sweet potatoes.) If desired, individually wrap each sweet potato in a sheet of aluminum foil.
- When the flames from the fire subside and the coals are covered in a thick layer of gray ash, about 15 minutes, arrange half of the coals in an even bed. Nestle the sweet potatoes into the coals, and use a sturdy metal spatula to scoop the remaining embers over and around the sweet potatoes to completely bury them. Cook, undisturbed, about 20 minutes.
- Use the spatula to scrape away the embers. Insert a cake tester or paring knife into 1 sweet potato to test for doneness. (Likely the bottom part of the sweet potato that was resting on the bed of coals will be more cooked and charred than the top.) Use tongs to flip sweet potatoes over and bury them again in embers. Cook until sweet potatoes are tender throughout and caramel bubbles from cracks in the skin, 20 to 40 minutes. Carefully lift sweet potatoes from coals, and place on a heatproof plate. Let cool 5 minutes; use a clean dish towel or pastry brush to wipe away any ashes or burned skin. Transfer cleaned sweet potatoes to serving plates, or crack them into bite-size pieces with a bit of char on each.
