CHICKEN CLUB SQUARES
Great light luncheon dish. I got this recipe from a friend who made it for a bridal shower that I attended.

Steps:
- Preheat oven to 375 degrees.
- Unroll one package of crescent rolls acoss one end of a 10x15 inch pan with longest sides of dough across width of pan.
- Repeat with remaining package of dough, filling pan.
- Seal perferations and press dough up sides of the pan to form a crust.
- Bake 12-15 minutes or until golden brown.
- remove to cooling rack and cool completely.
- Place cream cheese, mayonaise, garlic, and dill in a bowl and mix until smooth.
- Spread cream cheese mixture evenly over cooled crust.
- Sprinkle chicken evenly over filling.
- Sprinkle cucumber, tomatoes,cheese and bacon over chicken.
- Cut into 12 squares.

Steps:
- Preheat oven to 375
- Unroll one package of crescent rolls across one end of the bar pan with longest sides of dough across the width of the pan. Repeat with other package. Use the baker's roller to seal the perforations and press up the sides to form a crust. Bake 12-15 minutes, till golden, then remove to stackable cooling rack and cool completely.
- Place cream cheese, mayo, garlic and seasoning mix in a bowl, mix until smooth. Spread this mixture over the cooled crust using the large spreader. Sprinkle chicken over filling. Score cucumber lengthwise. Remove seeds with corer. Thinly slice using slice & grate. Cut slices into quarters. Slice tomatoes in half lengthwise and remove seeds. Dice tomatoes. Grate cheese. Sprinkle cucumber, tomatoes, cheese and bacon over filling. Slice with pizza cutter and serve.

- In a large skillet, brown chicken on both sides in oil. Stir in the tomatoes, mushrooms, green pepper, onion, water, Italian seasoning and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until chicken juices run clear., Remove chicken and keep warm. Combine the flour and cold water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve chicken and sauce over rice.

- Preheat oven to 425°F (220°C). Place almond flour, mozzarella, Cheddar and cream cheese in a large microwavable bowl. Microwave on HIGH 1 minute. Remove bowl from microwave; mix well. Microwave on HIGH 30 seconds longer. Stir in egg and 1 tablespoon (15 ml) of the Seasoning, mixing just until dough comes together.
- Transfer dough to lightly floured surface and roll into a rectangle about 1/8-inch (3-mm) thick. Using a pizza cutter or sharp knife, cut the dough into 1-inch (2 1/2-cm) squares. Reroll any dough scraps and cut into squares. Sprinkle remaining 2 teaspoons (10 ml) of the Seasoning evenly over dough squares. Transfer squares to a parchment lined baking sheet.
- Bake 10 minutes or until golden brown, turning halfway through. Allow to cool completely on a wire rack. Store in airtight container.
BLUEBERRY OAT SQUARES | CLUB HOUSE CA

- Filling: In saucepan, bring blueberries and sugar to boil over medium-high heat, stirring often. Reduce heat and simmer, stirring occasionally, until berries are tender, 5 to 7 minutes. In small bowl, whisk cornstarch with lemon juice and vanilla; whisk into blueberries. Boil, stirring, until thickened, about 1 minute. Scrape into bowl and refrigerate for 1 hour.
- Preheat oven to 350°F (180°C). In large bowl, stir together oats, flour, sugar, ginger and salt; use pastry blender to cut in butter until in coarse crumbs. Press half into well-greased 9-inch (2 L) foil or parchment paper-lined metal cake pan; spread evenly with blueberry filling. Sprinkle remaining oat mixture evenly on top, pressing lightly.
- Bake until golden and set, 40 to 45 minutes. Let cool completely in pan on rack. Cut into squares.
- Test Kitchen Tip:o Use old-fashioned or quick-cooking oats in this recipe. Bars can be kept refrigerated for up to 5 days or freeze for up to 1 month.
