MOLASSES CLOVE COOKIES

Molasses Clove Cookies image

I love the Molasses Clove Cookies from the Dancing Deer Bakery. I adapted the Molasses Spice Cookie recipe from Cook's Illustrated to create this recipe. Bake the cookies 1 sheet at a time. Remove the cookies from the oven when they still look slightly raw and underbaked.

Categories     Dessert

Time 26m

Yield 22-24 cookies, 12 serving(s)

Number Of Ingredients 14

2 1/4 cups all-purpose flour (use lower-protein unbleached flour such as Gold Medal)
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4-1/2 teaspoon ground allspice
1/4 teaspoon salt
12 tablespoons unsalted butter, softened but still cool
1/3 cup packed light brown sugar (about 2 1/3 oz.)
1/3 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup molasses
1/2 cup sugar, for rolling the dough

Steps:

  • Adjust oven rack to the middle position and heat the oven to 375°. Line a large baking sheet with parchment paper or spray sheet with nonstick cooking spray.
  • Whisk the flour, baking soda, spices, and salt in a medium bowl until thoroughly combined; set aside.
  • Either by had or with an electric mixer, beat the butter with the brown sugar and the 1/3 cup granulated sugar at medium-high speed until light and fluffy, about 3 minutes. Reduce the speed to medium-low and add the yolk and vanilla; increase the speed to medium and beat until incorporated, about 20 seconds.
  • Reduce the speed to medium-low and add the molasses; beat until fully incorporated, about 20 seconds, scraping the bottom and sides of the bowl once with a rubber spatula.
  • Reduce the speed to the lowest setting; add the flour mixture and beat until just incorporated, about 30 seconds, scraping the bowl down once. Give the dough a final stir by hand to ensure that no pockets of flour remain at the bottom. The dough will be soft.
  • Place the 1/2 cup sugar for rolling in a shallow bowl. Fill a medium bowl halfway with cold tap water. Dip your hands into the water and shake off the excess (this will prevent the dough from sticking to your hands and ensure that the sugar sticks to the dough).
  • Using a tablespoon measure, scoop a heaping tablespoon of dough and roll it between your moistened palms into 1 1/4- to 1 1/2- inch ball; drop the ball into the sugar and repeat to form about 4 balls. Toss the balls in sugar to coat and set them on the prepared baking sheet, spacing them about 2 inches apart. Repeat with the remaining dough, moistening your hands as necessary with the water.
  • Bake until the cookies are browned, still puffy, and the edges have begun to set, but the centers are still soft (the cookies will look raw between the cracks and seem underdone), about 11 minutes, rotating the sheet from front to back half-way through the baking time. Do not overbake.
  • Cook the cookies on the baking sheet for 5 minutes, then use a wide metal spatula to transfer to the cookies to a wire rack; cool the cookies to room temperature.

Number Of Ingredients 9

4 cups sifted all-purpose flour (sifted, then measured), plus more for dusting
1/2 teaspoon salt
1 teaspoon baking powder
8 ounces (2 sticks) unsalted butter
2 cups granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1/3 cup confectioners' sugar
1 teaspoon green powdered food coloring

Steps:

  • Sift flour, salt, and baking powder into a large bowl, and set aside. Put butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; cream on high speed until fluffy. Beat in eggs.
  • Reduce speed to low. Add flour mixture in two additions, and mix until well combined. Mix in vanilla. Divide the dough in half, and wrap in plastic wrap; refrigerate 30 minutes.
  • Preheat oven to 350 degrees. Sift together confectioners' sugar and food coloring into a small bowl, and set aside.
  • Roll out 1 piece of dough on a lightly floured work surface 1/8 inch thick. With a 2 1/2-inch cookie cutter, cut out 25 rounds. Arrange rounds on parchment-lined baking sheets 2 inches apart.
  • Working with one round at a time, place clover stencil on top; using a small sieve, sprinkle surface with green sugar. Refrigerate until firm, about 15 minutes, or until ready to bake. Repeat process with remaining dough.
  • Bake, one sheet at a time, until edges just start to brown, 10 to 12 minutes. Let cool completely on sheets on wire racks.

ORANGE & SPICE CUTOUT COOKIES

Orange & Spice Cutout Cookies image

I've been making these cookies since I was a little girl. When my mother retired from baking the holiday cookies and passed the mantle on to me, she also passed along this recipe. In time, I will give it my young niece. Just the smell of them takes me back to when I was a little one, just like she is now. -Lisa Rocco-Price, Bronx, New York

  • In a small saucepan, melt the butter over low heat. Remove from the heat and skim off the foam. Using a ladle, remove the clear melted butter, leaving the white milky solids behind; discard the solids. You should have 3/4 cup plus 2 tablespoons of clarified butter. Refrigerate the clarified butter until solidified, about 30 minutes.
  • Preheat the oven to 350°. In a bowl, beat the chilled clarified butter with a handheld mixer at medium speed until pale and fluffy, about 3 minutes. Sift in 1 3/4 cups of the confectioners' sugar and beat at low speed, scraping down the side of the bowl as necessary. Gradually beat in the flour just until incorporated. Using your hands, gently knead the dough until smooth. Cut the dough into 4 equal pieces.
  • On a lightly floured work surface, roll 2 pieces of the dough into 1-inch-wide logs. Slice the logs crosswise 1 inch thick. Arrange the slices on 2 cookie sheets, about 1 inch apart. Press the tines of a fork into each cookie to make a pattern. Bake in the upper and lower thirds of the oven for about 18 minutes, switching the sheets halfway through baking, until pale golden on the bottoms. Transfer the cookies to a rack to cool and repeat with the remaining dough.
  • Sift the remaining 1/4 cup of confectioners' sugar with the ground cloves generously over the cooled cookies.
