I LOVE a good Blue Cheese Salad Dressing. Unfortunately, I have yet to find a good one in the stores. I dug out all my cookbooks, combined this and that and here is the final result.

1 cup mayonnaise (I use Hellmans)
1 cup sour cream
1/2 cup buttermilk
1/2 teaspoon white pepper
2 tablespoons grated onions
4 dashes Tabasco sauce
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 dash cayenne pepper
1 teaspoon minced garlic
2 teaspoons sugar
6 ounces crumbled blue cheese

Steps:

  • Combine mayonnaise, sour cream and buttermilk, mixing well.
  • Add remaining ingredients mixing thoroughly.
  • Must refrigerate for 24 hours before serving for best flavor.

Found this in The Clemson Collection which was a cookbook put out by the University's Woman's Club, 1973. Clemson is in South Carolina. I guess that this is vintage now. This cookbook is one of my yard sale finds!* I have Louis Osteen's "Charlston Cuisine, Recipes from a Lowcountry Chef" and in it he mentioned he went to Clemson and that the university would sell blue cheese at the retail counter at the agricultural department (dairy)which was called "Clemson Blue cheese"-this cheese is widely distributed today. here's the history: http://www.clemson.edu/foodscience/cheesehistory.htm or this http://www.clemson.edu/foodscience/bluecheese.htm

1 cup mayonnaise
1/2 cup sour cream
3 tablespoons green onions, minced
2 tablespoons tarragon vinegar (optional)
1/4 cup parsley, minced
2 tablespoons lemon juice
1 garlic clove, crushed
1/4 teaspoon salt
1 dash pepper
1/2-3/4 cup blue cheese, crumbled

Steps:

  • Combine all ingredients and mix well.
  • Store in covered container in refrigerator.

6 garlic cloves
2/3 cup olive oil
1/4 cup apple cider vinegar
1/2 cup blue cheese (or more if you like)
salt
fresh ground pepper
parmesan cheese (optional)

Steps:

  • Put all your ingredients except parmesan in a blender and blend until smooth. Toss with crisp romaine salad and parmesan. To make a meal add croutons, or shrimp, chicken, or anything else you might like.

Found this old recipe today. I use to make this when I was young and was working at a local country club. Today, I reduce the fat by using fat free or reduced fat products.

1 cup Hellmann's mayonnaise
1 tablespoon lemon juice
2 tablespoons cider vinegar

1/2 teaspoon salt

Steps:

  • Blend all ingredients together except blue cheese.
  • Crumble in blue cheese.
  • Chill.

If you can find it in a speciality store give it a try. You can find them on the Internet. Their salad dressing recipe was published several years ago in the newspaper and is just plain good!

1/4 lb oregon blue cheese
1 dash Worcestershire sauce

3 -5 drops lemon juice or 3 -5 drops sherry wine

Steps:

  • Combine mayonnaise, sour cream, cheese, Worcestershire sauce, garlic and lemon juice together and beat until smooth.
  • Refrigerate overnight.
