On a hot day in Texas, nothing is more refreshing than this sweet, fruity, non-alcoholic summer iced tea.

Steps:
- In a large pitcher, combine sugar, salt and hot water. Stir until completely dissolved. Sir in the tea, orange juice and lemon juice. Serve in tall glasses with ice and slices of citrus fruit.

CLASSIC TEXAS TEA
Steps:
- For the sour mix: Stir together the lemon juice and Simple Syrup in a glass.
- For the Texas tea: Fill a Collins glass with ice. Pour in the vodka, gin, rum, tequila, whiskey, triple sec and 1 ounce of the sour mix. Top off with a splash of cola. Stir once with a bar spoon and serve. No garnish needed.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator.
TEXAS TEA III
The Texas part of the tea comes from the tequila as opposed to a Long Island iced tea, which uses gin instead of tequila. This is the standard Bartender's recipe for a Texas Tea.

- King Ranch Casserole. This lord-of-the-potluck casserole has nothing to do with ranch dressing, but it is damn delicious. It's sort of like a mix between Mexican chilaquiles and turkey tetrazzini - filled with creamy sauces and spicy flavors.
- Puffy Taco. The puffy taco was made famous in San Antonio where it stands as something of an unofficial mascot. Back in the '50s, Ray's Drive Inn threw some uncooked masa into the deep fryer until all of the moisture had evaporated.
- Queso. Mix up cheese and spicy peppers, serve it up with some chips, and you have the Tex-Mex appetizer favorite. It's one of those things that ex-pat Texans miss about their home state.
- Brisket & Beef Ribs. Okay, okay, I know that's two items. But there's a reason that Texas is known for barbecue, specifically the beef. Don't be surprised if you head to any good barbecue joints and see people start lining up an hour before they open.
