Number Of Ingredients 6

1 can (16 ounces) refried beans
1 cup salsa
1 cup cooked long grain rice
2 cups shredded cheddar cheese, divided
12 flour tortillas (6 inches)
Shredded lettuce, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.

You can't go wrong with a homemade bean and cheese burrito, and this Classic Bean and Cheese Burritos recipe is an extra yummy one. Jazzed-up beans create a tasty filling for an easy-to-wrap handheld meal that's ready in under half an hour.

1 can (16 oz) Old El Paso™ refried beans
1 cup shredded cheddar cheese (4 oz)
1 package (1 oz) Old El Paso™ taco seasoning mix
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 inch)
Make it FRESH toppings, as desired (see below)

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper or foil; set aside.
  • In medium bowl, mix beans, cheese and taco seasoning mix.
  • Scoop about 1/4 cup bean mixture onto each tortilla just below center. Fold bottom edge of each tortilla up and over filling. Fold sides in, overlapping to enclose filling. Roll up from bottom of tortilla. Place seam-side down on cookie sheet.
  • Bake 12 to 15 minutes or until heated through. Serve with Make it FRESH toppings.

7 (10 inch) flour tortillas
32 ounces vegetarian refried beans (I highly recommend using Diana Neal's recipe for refried beans refer to Recipezar Refried Beans)
4 ounces canned green chilies, chopped
1/2 teaspoon cumin
1/2 teaspoon garlic powder
8 ounces cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F (205°C).
  • Prepare filling by mixing refried beans, chilies, cumin and garlic together in a bowl.
  • Spoon approximately 4 ounces bean filling into the center of each tortilla and top with about one tablespoon of cheese.
  • Fold in ends and then sides.
  • Place burritos seam side down on baking sheets that have been sprayed with vegetable oil spray.
  • Bake for 20-25 minutes until golden brown.

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

These Mexican-American "roll-ups" differ from tacos primarily because flour rather than corn tortillas are used.

8 flour tortillas
4 cups refried beans
1/2 cup grated cheddar cheese
1/2 cup minced onion
minced jalapenos or other fresh chili pepper
sour cream (optional)
minced scallions (optional) or snipped fresh chives (optional)

Steps:

  • Preheat oven to 350*F.
  • Divide tortillas into 2 batches and wrap in aluminum foil. Warm in oven for 15 to 20 minutes. Remove from the oven and lay the tortillas flat on a work surface. Spoon beans, cheddar, onions and peppers down the middle of each, dividing evenly and leaving a margin of about 1 1/2 inches from the bottom edge.
  • Fold the bottom of the tortilla up, then roll it from one side into a cylinder. Place the burritos on a baking sheet and bake until the cheese is melted, about 5 minutes. Serve at once. If desired, garnish with sour cream and scallions (or chives).
